20 chicken wings, wingtips included
2 1/2 pounds ground pork
2 cloves garlic, minced
1 cup onion, chopped
1 cup (2 ounces) mung bean thread noodles, soaked for one hour and cut into 1/2-inch lengths
8 wood ear mushrooms, coarsely chopped
1 teaspoon ground black pepper
1 tablespoon sugar
1/2 teaspoon salt
3 tablespoons soy sauce, divided
1/2 tablespoon sweet soy sauce or oyster sauce
1 1/2 tablespoons fish sauce

Steps:

  • Preheat broiler to low. Debone the chicken wings. Using a small sharp paring knife, start at the top of the drumette. Gently scrape the meat away from the bone leaving the skin intact. Pull skin and meat down as you go. At the first joint, use tip of knife to slide into joint to remove skin away from the bone. Continue easing the flesh away from the bone. Push the skin and flesh down to expose the bones and carefully twist each bone out. Important: don't break the bone till you get to the second joint! Combine the rest of the ingredients in a medium bowl and mix well. Your hand is your best tool. Gently squeeze meat mixture into each wing, filling to the wing tip joint. Don't worry about holes in the skin. Place wings in a baking pan, top down. Broil until golden brown on one side, about 20 minutes. Flip and broil for 20 minutes on the other side.

1 whole chicken
Olive oil
2 onions quartered and not peeled
5 cloves garlic
4 stalks celery
1 pound boudin, or an Italian sausage stuffing
1/2 cup chopped onion
Butter
Cajun seasoning, to taste
Cayenne pepper, to taste
White wine or chicken stock
Cornstarch
Smothered okra and tomatoes, for service, optional
Butterbeans, for service, optional

Steps:

  • Preheat oven to 375 degrees F.
  • Starting from backbone remove all bones except for maybe the tips of the wings. Reserve bones.
  • For the chicken stock:
  • To a medium saucepan over medium-high heat, add about 2 to 3 tablespoons olive oil. Once heated, add the vegetables and saute until onions are translucent. Next add the chicken bones and cover with water by about 1 to 2 inches. Bring the mixture to a boil. Once at a boil, reduce the heat and continue to simmer for about 3 to 4 hours, skimming the top as necessary. Next, remove the saucepan from the heat and strain. Either allow the stock to cool down and refrigerate or keep warm until needed.
  • For the stuffed chicken:
  • Stuff boudin mixture into the chicken and sew back together to reform chicken shape. Place chopped onion in bottom drip pan of a 2 piece roasting pan. Place the chicken, breast-side up, in the roasting pan. Place a small piece of butter under the skin on each chicken breast. Season chicken well with Cajun seasoning and cayenne pepper. Place in oven covered at 375 degrees F for about 45 minutes, then uncover and cook an additional 15 to 30 minutes. Deglaze drip pan with white wine or chicken stock and reduce. Pour into strained chicken stock. In a small bowl combine 1 tablespoon cornstarch with 3 tablespoons cold water and whisk until combined. Whisk the cornstarch slurry into the stock mixture and bring to a boil, allowing the sauce to thicken. If the sauce is too thin, add more cornstarch slurry. If it's too thick, add more water. After chicken has rested, top with the gravy and serve with a side of smothered okra, tomatoes and butterbeans, if desired.

1/4 cup chopped green onions
1/4 cup celery heart finely chopped
1/8 cup sugar
1/4 cup plus 1 tablespoon finely chopped raw shrimp
2 cups finely chopped white onions
1/4 cup finely chopped fresh cilantro
2 ounces wooden black mushrooms, chopped
1 pound ground pork
Salt
Freshly ground black pepper
Fish sauce, to taste
12-18 large chicken wings
Creole seasoning, recipe follows
1 1/2 cups all-purpose flour
Lettuce
2 cups Hoisin Sauce, recipe follows
2 tablespoons finely chopped parsley
1/4 cup chopped roasted peanuts
1 tablespoon dried thyme
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
2 1/2 tablespoons paprika
1 tablespoon cayenne pepper
1 tablespoon dried oregano

Steps:

  • Preheat the oven to 325 degrees F. In a mixing bowl, combine the green onions, celery, sugar, shrimp, white onions, cilantro, mushrooms and pork together. Mix thoroughly. Season with salt, pepper, and fish sauce. Slice the wing along the bone in order to leave the skin and meat attached. Sever the first joint of the chicken wing and remove the bones. Holding tight to keep the joint intact, slide the knife along the underside of the skin and separate all the way to the joint. Season each chicken wing inside and out with Creole seasoning. Roll back the skin, remove the bones and cup the edges of the skin to begin stuffing the forcemeat into the cavity. Stuff the entire section of the skin and lop the leftover meat and skin over the top to "close" the wing. Place the wings on a baking sheet and bake for 20 minutes. Remove the wings from the oven and cool completely. Season the flour with Creole seasoning. Dredge the wings in seasoned flour. Preheat the fryer. Carefully lay the wings in the hot oil and fry 3 to 4 minutes or until golden brown and crispy. Fry the wings in batches. Remove and drain on a paper towels. Season with Creole seasoning. Arrange the wings on top of the lettuce. Drizzle the sauce over the wings and lettuce. Garnish with parsley and chopped peanuts. Serve warm.
  • Combine all ingredients thoroughly and store in an airtight jar or container.

Khmer Krom baked chicken wings with sweet and spicy sauce is another delicious variation on some of the Cambodian recipes I received from students....NEW note-- as for being authentic or "really" Cambodian, all I can tell you is that I've had similar chicken at three different students' homes and this was from one student's grandmother. It's pretty good regardless!

2 tablespoons light brown sugar
1 tablespoon honey
5 teaspoons oyster sauce
1 teaspoon hot chili-garlic sauce (more is better)
1 1/2 lbs approx 10 chicken wings
1 tablespoon soy sauce
1 tablespoon fish sauce
1/4 teaspoon salt
1 tablespoon fresh lemon juice
1 teaspoon grated fresh gingerroot
2 garlic cloves, minced
1 stalk green onion, finely minced
1/4 teaspoon black pepper

Steps:

  • In a small bowl, mix brown sugar with honey, oyster sauce , paprika and hot sauce together, set aside.
  • Cut wings at joints. Discard tips and place wings in a baking dish.
  • In a small bowl, mix soy sauce with fish sauce, salt, lemon juice, ginger, garlic, green onion and black pepper together.
  • Pour sauce over chicken wings, mix well, and refrigerate over night or at least 4 hours.
  • Preheat oven at 350.
  • Bake wings without cover for 30 minutes or till golden brown.
  • Brushed prepared honey sauce evenly on cooked wings.
  • Return wings to oven, continue to bake for 5 more minutes before serving.
  • Serve hot or warm.

8 chicken wings
120 g vermicelli rice noodles
30 g dried wood ear mushrooms
120 g ground pork
1 small onion, minced
1 small carrot, diced
1 egg, beaten
1 tablespoon fish sauce
salt and pepper
1 teaspoon cornflour

Steps:

  • Preheat the oven to 200c.
  • De-bone the chicken wings by cutting around the bone with a sharp knife. Holding the wingtip, gently ease the bone away to leave the skin and a thin layer of chicken.
  • Soak the vermicelli in warm water for 10 minutes then drain thoroughly and cut into short strands.
  • Soak the wood ear fungus in boiling water for 10 minutes then squeeze dry and chop into thin slices.
  • Mix all other stuffing ingredients together. The mixture should be firm.
  • Mold the stuffing into a ball and insert it into the bag of flesh and skin of the chicken wing.
  • Steam the stuffed wings for 10-15 minutes.
  • After steaming, place in a lightly oiled roasting pan and roast in the oven for 30 minutes.
  • Serve on a bed of lettuce as a starter,with this dipping sauce:.
  • Dipping Sausce Mix 3 tbsp thai sweet chilli sauce with grated garlic,grated ginger,lime zest and juice,brown sugar and a dash of fish sauce.
