These fun cake pops are easy to make and great for parties. Kids and adults will love these colourful chocolate-covered bites

Number Of Ingredients 11

100g butter
100g caster sugar
½ tsp vanilla extract
2 eggs
100g self-raising flour
75g butter
150g icing sugar
½ tsp vanilla extract
1 tbsp milk
200g white chocolate, melted, to dip
sprinkles, to dip

Steps:

  • First make the cake. Heat oven to 190C/170C fan/gas 5. Grease and line the base of a 20cm sandwich tin. Place the butter, sugar and vanilla extract into a bowl and beat well to a creamy consistency. Slowly beat in the eggs, one by one, then fold in the flour and mix well. Tip into the cake tin and bake for about 20 mins until risen and golden brown. Set aside to cool completely.
  • While the cakes are cooling, make the buttercream. In a large bowl or the bowl of stand mixer, beat the butter and icing sugar together until smooth, add the vanilla extract and milk and beat again. Once the cake is cooled, crumble into large crumbs. Add the butter cream and stir together. Take chunks of the cake mixture and roll into balls, transferring each ball to a lined tray or plate, push a lollypop stick into each, then put into the fridge for an hour to set.
  • Melt the white chocolate in the microwave, blasting it and stirring at 10 seconds intervals until smooth. Tip the sprinkles into another bowl. Take each of the chilled cake pops and dip into the white chocolate, allowing it to drip off a little over the bowl. Dip into the sprinkles, then stand upright in a mug to dry at room temperature for an hour, or in the fridge for 30 mins.

1/2 cake, cooked and cooled (or any amount you wish)
2 tablespoons frosting (or more as needed)
1 cup chocolate chips (or candy melts, may need more, depending on the size of your cake)
2 tablespoons candy sprinkles (optional)
12 lollipop sticks (may need more)

Steps:

  • Place cake in food processor until it has been reduced to fine crumbs (this can also be done by hand).
  • Add enough frosting to form a "dough". Be careful not to add too much!
  • Roll the dough into 1 - 1.5 inch balls and place on a cookie sheet lined with wax paper or parchment paper.
  • Melt the candy melts according to the instructions.
  • Dip a lollipop stick in melted candy melt, then stick about half way into a cake ball. Repeat with the rest of the cake balls and sticks.
  • Chill cake balls for 30 - 60 minutes. This helps the candy melts to harden, lessening the chances of the cake pop falling off the stick.
  • Melt the candy melts again. Dunk one of the cake pops in the melted candy melts and swirl until coated. Dip in sprinkles if desired. Place upright in a piece of styrofoam.
  • Repeat with remaining cake pops.
  • Wait 30-60 minutes until candy melts have hardened (you can speed up this process by using a fridge).

After sampling one of these little gems at Starbucks, I just had to make some of my own! They are so delicious, can be customized with numerous different flavor combinations, and can be decorated for any occasion. They're a bit of work, but so worth it.

Number Of Ingredients 6

1 (18 ounce) cake mix, desired flavor, prepared according to package
2 -3 eggs (or whatever your package calls for)
1/3 cup oil (or whatever your package calls for)
0.5 (16 ounce) can frosting, any flavor, store bought
7 ounces white chocolate candy melts (or any flavor you like)
candy sprinkles (optional)

Steps:

  • Bake cake according to package and let cool.
  • Crumble entire cake in food processor, in batches if necessary, and empty into mixing bowl.
  • Mix in 1/2 can of store bought frosting or equal amount of homemade frosting until a dough forms (tends to be easiest by hand).
  • Scoop and form into one inch balls, easiest if using a small cookie scooper.
  • Melt Wilton Candy Melts according to package.
  • For each cake pop, first dip the very end of a lollipop stick into the melted candy coating and insert about half way into cake ball).
  • Chill uncoated cake pops for at least 1 hour.
  • Re-melt Wilton Candy Melts, and coat the cake pops one by one, dipping one side and turning to coat completely.
  • After coated, stand the cake pop up in the styrofoam block or shirt box and decorate with sprinkles before coating is set.
  • For a cute presentation, insert into lollipop treat bags and secure with a twistie tie or ribbon.
  • You can also decorate with drizzled chocolate or candy melts, in whatever color you choose.

Nonstick cooking spray, for greasing
2 cups all-purpose flour
1/2 cup cocoa powder
2 teaspoons baking powder
Pinch kosher salt
1 1/2 cups granulated sugar
1 1/2 sticks (12 tablespoons) unsalted butter, at room temperature
3 large eggs
3/4 cup sour cream
1/2 cup milk
1 1/2 teaspoons vanilla extract
One 8-ounce package cream cheese, at room temperature
1 cup powdered sugar
1 stick (8 tablespoons) unsalted butter, at room temperature
1 teaspoon vanilla extract
1/2 lemon, juiced
1 pound dark chocolate chips
1 pound white chocolate chips
1/4 cup small candy eyes
1 small bottle red food coloring
1/2 cup small black nonpareils
1/2 cup small orange nonpareils

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Line a quarter sheet tray with parchment paper and spray with nonstick cooking spray.
  • Combine the flour, cocoa powder, baking powder and salt in a large bowl. Reserve.
  • Combine the granulated sugar and butter in the bowl of a stand mixer fitted with the paddle attachment. Beat until light and fluffy. Turn the mixer off and scrape down the sides of the bowl.
  • Beat in the eggs one at a time. Slowly add the sour cream, milk and vanilla. Scrape down the sides of the bowl as needed. With the mixer on medium speed, gradually mix in the flour mixture.
  • Spread the batter onto the sheet tray and bake, rotating the pan halfway through, until a toothpick inserted into the middle of the cake comes out clean, about 20 minutes. Let cool completely on a wire rack.
  • For the cream cheese frosting: Beat together the cream cheese, powdered sugar, butter, vanilla and lemon juice in a stand mixer or with a hand mixer until light and fluffy. Set aside.
  • Place the cake into a food processor and pulse to crumble. Transfer to a bowl, then add 2 cups of the frosting and stir to combine. Take some of the cake and frosting mixture and roll into a ball, roughly the size of a golf ball. Insert a candy stick into the center. Place onto a parchment-lined sheet tray. Repeat with remaining cake and frosting mixture, to make about 12 pops. Place into the freezer to chill for 15 to 20 minutes.
  • For the decorating: Set up 2 double boilers with a glass bowl fit over the top of each. Add the dark chocolate to one bowl, and the white chocolate to the other. Gently melt the dark and white chocolate over the double boilers, stirring frequently to ensure the chocolate is not burning on the bottom of the bowls.
  • For the white chocolate eyeball cake pops: Dip half of the chilled cake pops into the white chocolate, rotating to make sure they are fully coated. Allow any excess chocolate to drip off. Place right-side up into a piece of Styrofoam and stick one candy eye into the center of the cake pop. Repeat with remaining cake pops, transfer to the fridge to chill for 10 minutes.
  • Scoop 1/2 cup frosting into a small bowl and add 2 drops red food coloring. Mix to combine, then transfer into a pastry bag. Cut a very small amount off the tip, then pipe squiggly lines coming out from the candy eyes to resemble red veins.
  • For the chocolate-dipped cake pops: Take the other half of the cake pops and dip into the dark chocolate, making sure to fully coat the cake and allowing any excess to drip off. Roll immediately in the black and orange nonpareils. Place right-side up into a piece of Styrofoam, then into the fridge to chill.

One 15.25-ounce box yellow cake mix, plus required ingredients
1 cup vanilla frosting, plus more as needed
20 ounces white candy melting wafers
Sprinkles or cookie crumbles, for decorating, optional

Steps:

  • Prepare and bake the cake according to the package directions for a 9-by-13-inch pan. Let cool completely.
  • Break the cake into pieces and place it in a food processor. Add the frosting and process until the mixture forms a ball and pulls away from the sides of the bowl, about 30 seconds. If the mixture doesn't come together, add more frosting 1 tablespoon at a time until it holds its shape.
  • Using a 3/4-ounce scoop, form the mixture into 46 balls and put them on a baking sheet. Refrigerate until firm, about 30 minutes.
  • Meanwhile, place the candy wafers in a microwave-safe bowl and melt according to package directions. Dip a half inch of the tip of a lollipop stick into the candy and then stick the tip halfway into a cake ball. Repeat with the remaining balls and sticks. Refrigerate the cake pops until completely chilled, about 1 hour.
  • Microwave the candy again until melted and pour it into a tall narrow glass. Dip each cake pop into the candy and let any excess run off. If decorating, turn the cake pop upright and sprinkle with sprinkles while the coating is still wet. Stick the finished pops in two 9.8-by-11.8-inch Styrofoam blocks block and let set completely.

3 pkg. (4 oz. each) BAKER'S Semi-Sweet Chocolate
2 pkg. (4 oz. each) BAKER'S White Chocolate
1 Tbsp. shortening, divided
2 Tbsp. red sprinkles

Steps:

  • Prepare cake batter as directed on package; stir in food coloring. Bake as directed on package for 13x9-inch cake. Cool completely.
  • Crumble cake into large bowl. Mix cream cheese and sugar until blended. Add to cake crumbs; mix well. Shape into 56 (1-inch) balls. Freeze 10 min.
  • Melt semi-sweet chocolate, then white chocolate as directed on packages; pour each into separate medium bowl. Immediately add 1-1/2 tsp. shortening to chocolate in each bowl; stir until shortening is completely melted and mixture is well blended.
  • Cover rimmed baking sheet with waxed paper. Remove cake balls from freezer in small batches. Insert lollipop stick into center of each ball. Dip, 1 at a time, into one of the melted chocolate mixtures, turning to evenly coat each ball with chocolate, then place, stick side up, on prepared baking sheet and top with sprinkles.

Everyone loves cake pops! They are simple to make, and you can create anything for any occasion. They are also nice small bites of dessert instead of large slices of cake or pie. Can be made up in partial batches and the remaining ingredients stored for a few weeks.

1 (15.25 ounce) package yellow cake mix (such as Betty Crocker®)
1 cup water
3 eggs
½ cup vegetable oil
1 (16 ounce) package prepared chocolate frosting
18 lollipop sticks
1 (14 ounce) bag chocolate candy melts
1 (.75 ounce) tube decorating icing

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Beat cake mix, water, eggs, and oil in a bowl using an electric mixer on low speed for 30 seconds. Increase speed to medium and beat for 2 minutes more. Pour batter into the prepared baking dish.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 28 to 33 minutes. Cool completely, at least 1 hour.

Steps:

  • Crumble the cake with your hands. Do this by breaking the cake in half and rubbing them against each other. You can also use a food processor to do this.
  • Melt the chocolate in the microwave for 30 second intervals.
  • Combine the melted chocolate and cake crumbs together.
  • Next, start rolling the cake crumbs into cake balls. Do this by using a tablespoon.
  • Let them chill in the freezer for 15 minutes. You dont want them to be frozen. You just want to firm them up.
  • Take the cake balls out of the freezer. Start to melt your chocolate for the coating.
  • Dip your lollipop stick half an inch in the melted chocolate. Then push it in the cake ball, halfway up.
  • Place in the fridge for 5 minutes. Take them back out again and dip them in the melted chocolate until the cake pop is completely covered. Before dipping them into the melted chocolate, mix in 1tsp of canola or vegetable oil. This will make the melted chocolate more smoother and easier to coat the cake pop.
  • Decorate with sprinkles, etc. Place onto a styrofoam block and allow to chill.
