SPICY CAJUN PICKLED GREEN BEANS AND CARROTS
You'll find these pickled green beans everywhere in New Orleans, especially in bloody marys! These are super easy, they pack a punch, and are great for snacking, for sandwiches, and of course, bloody marys.

Steps:
- Fit as many green beans and carrots as you can into a jar, vertically.
- Add the garlic and bay leaf to the jar, using a chopstick or something similar to slide them down the sides of the jar.
- Add oregano, thyme, cayenne pepper, celery seed, and peppercorns directly to the jar.
- Bring vinegar, water, sugar, and salt to a boil in a small saucepan to make a brine, stirring to make sure sugar and salt are dissolved.
- Pour brine over vegetables in jar, making sure to cover all the vegetables and fill to the top.
- Allow jar to cool, and keep in refrigerator for 6 months. These will taste best if you allow them to sit in the fridge at least overnight, and the flavor will intensify as time goes on.

- In a medium sauce pot, bring water to a boil and add 1 teaspoon salt. Add green beans and blanch for 2 to 3 minutes. Remove from water and immediately place in an ice water bath.
- In a medium bowl, mix all dry ingredients, including the 2 teaspoons sea salt, thoroughly. Toss green beans in mixture. In a large saute pan, add oil and heat to almost smoking. Add green beans and cook until spices begin to blacken, approximately 2 minutes. When done, add butter, toss, place on plate, and garnish with Parmesan.

- Wash and trim fresh string beans.
- Add string beans to a pot of boiling water.
- Cook until soft and drain water.
- In large frying pan, heat butter and olive oil over medium heat and add minced garlic.
- Let garlic sautee in butter and oil until a light golden brown and add string beans.
- Stir, coating all the string beans with butter and oil.
- Sprinkle string beans with bread crumbs and stir, coating all of the string beans.
- (If it's a little dry add some more oil) Sprinkle with parmesan cheese, oregano, salt and pepper.
- Serve immediately.

Found at a cooking-by-country (or region) website, just reading this recipe took me back decades to a time growing up when we would pick beans from the garden & cook them until soft w/a combo of onion w/ham or bacon. I never cared when the main-course was as long as I could have a HUGE plate of those green beans. If it was my choice to make, I would definitely dbl this recipe! Enjoy!

- Heat oil in a frying pan. Add the bacon, onion, garlic plus parsley & sauté until onion is soft & golden brown.
- Add the beans, salt to taste preference & Creole seasoning. Reduce heat to low & cook gently for about 30 min or until beans are soft (Add a sml amt of water if needed to keep the beans from sticking to the bottom of the pan.
