Provided by Jeff Mauro, host of Sandwich King

Categories     main-dish

Time 55m

Yield 4 servings

Number Of Ingredients 24

2 tablespoons smoked paprika
2 teaspoons granulated garlic
1 teaspoon onion powder
1 teaspoon granulated sugar
3/4 teaspoon kosher salt
1/2 teaspoon ground coriander
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper
4 tablespoons salted butter
1 pound shrimp (21-25 count), peeled, deveined and tails removed
1 pound thick-cut bacon
1 cup mayonnaise
1 tablespoon capers, drained and chopped
1 tablespoon hot sauce
1 tablespoon fresh lemon juice
1 tablespoon honey mustard
1 tablespoon chopped fresh parsley
1 tablespoon sweet relish
1 clove garlic, grated
Salt and freshly ground black pepper
2 avocados, medium dice
2 Roma tomatoes, medium dice
2 tablespoons fresh orange juice
4 large 12-inch flour tortillas, very lightly grilled til' just charred and beginning to bubble

Steps:

  • For the shrimp: Heat a grill to medium-high heat. Combine the paprika, garlic, onion powder, sugar, salt, coriander, black pepper and cayenne in a bowl. Melt the butter in small saucepan over medium-low heat. Add the spice mixture and cook until fragrant, stirring frequently, about 3 minutes. Let cool, then toss the shrimp with the butter and spices and let sit for 15 minutes.
  • Lay the bacon across grates of a grill and grill until crisp, 2 to 3 minutes per side. Set aside on paper-towel-lined plate.
  • Grill the shrimp until charred, 1 to 2 minutes per side. Let rest, then chop each shrimp into 3 smaller chunks.
  • For the remoulade: Mix together the mayonnaise, capers, hot sauce, lemon juice, mustard, parsley, relish and garlic in a bowl and season with salt and black pepper.
  • Mix together the avocados, tomatoes and orange juice. Season with salt and black pepper. Schmear a tablespoon of remoulade on each tortilla and top with avocado and tomatoes, 2 slices of bacon and some grilled shrimp. Tightly wrap and serve with extra remoulade for dipping.

CAJUN SHRIMP AND RICE

Cajun Shrimp and Rice image

This Cajun Shrimp and Rice will have everyone clamoring for seconds and thirds! Each and every bite is filled with succulent shrimp, juicy sausage and al dente rice laced with just the right kick of zippy, smoky, Cajun heat. To make this deceptively easy Cajun Shrimp recipe, you'll sear the sausage followed by the shrimp, sauté the onions, bell peppers and rice, then add the broth and diced tomatoes and simmer to al dente perfection. Of course, this recipe is incredibly versatile, add whatever veggies you like or omit them altogether, you can even swap the shrimp for chicken! Your family will especially love this Cajun Shrimp and Rice alongside sweet cornbread and roasted broccoli. Let's eat!

Provided by Jen

Number Of Ingredients 17

1 pound raw large shrimp, shelled, deveined, patted dry
12 ounces Cajun/andouille sausage sliced ½-inch thick ((pork or chicken))
3 tablespoons olive oil, divided
1 1/2 cups long grain basmati rice, thoroughly rinsed and drained
1/2 onion, chopped
1 red bell pepper, chopped
2 stalks celery, chopped
3 cloves garlic, minced
2 3/4 cups low sodium chicken broth
1 15 oz. can fire roasted diced tomatoes, not drained
1 tablespoon tomato paste
1 tablespoon lemon juice
Green onions or parsley for garnish ((optional))
1 1/2 tsp EACH smoked paprika, garlic powder, onion powder
1/2 tsp EACH dried oregano, dried thyme, pepper
1/4 teaspoon salt
¼-1/2 teaspoon cayenne pepper

Steps:

  • Mix Cajun seasonings together. Add 1 ½ tablespoons to the raw shrimp in a bowl and stir to coat; set aside.
  • Heat 1 tablespoon oil in a 3.5 qt (or larger) braiser or Dutch oven over medium-high heat. Add sausage and brown on each side, about 5 minutes. Remove sausage to a plate using a slotted spoon; set aside.
  • Add 1 tablespoon oil to the drippings in the skillet and heat over medium-high heat. Add the shrimp in an even layer and cook just until opaque, about 2-3 minutes per side. Remove shrimp to a plate using tongs. You can chop the tails off of the shrimp once cool enough to handle if desired.
  • Heat 1 tablespoon oil in the now empty skillet over medium-high heat. Add rice, onions and all remaining Cajun seasoning and sauté for 3 minutes. Add the bell pepper and celery and sauté 3 additional minutes (onions should be softened). Add garlic and sauté 30 seconds.
  • Stir in the chicken broth, diced tomatoes, tomato paste and the cooked sausage.
  • Bring the pot to a simmer, uncovered - the bubbles should reach to the center of the skillet (this can take up to 5 minutes, so be patient). Give everything a stir, cover, and reduce heat to LOW. Simmer for 5-10 minutes, checking and stirring at 5 minutes and replacing the lid. The rice is done when most of the liquid is evaporated and the rice is tender but slightly al dente. Add additional water or broth if the liquid has evaporated and the rice is not cooked yet.
  • Once the rice is al dente, stir in the shrimp, cover, and remove from heat. Let the pot rest undisturbed for 10 minutes.
  • Drizzle in lemon juice and fluff with a fork. Taste and season with additional salt or cayenne pepper to taste (I like more of both).

  • Cajun Shrimp Casserole. This savory casserole is loaded with cheese, shrimp, and rice, and it’s flavored with Cajun kicks like bell peppers, cayenne pepper, and okra.
  • Cajun Shrimp Boil. Look no further than slow cooker shrimp boil for a quick summer supper. What a spread! Gather your family and delve into this sloppy, delicious boil.
  • Cajun Shrimp and Grits. Possibly the most delicate shrimp and grits recipe I’ve ever cooked! It’s simple and only has a few ingredients! The creamy grits are topped with cajun-seasoned shrimp and spicy, strong seasonings.
  • Cajun Crab Dip. This seafood dip is fully prepared in minutes with Monterey Jack cheese, lump Alaska crab meat, cream cheese, and a spicy cajun blend.
  • Crawfish Cajun Etouffee. During crawfish season in Louisiana, nothing is better than this dish. A spicy and rich tomato roux with bell peppers, fresh garlic, shrimp, and crawfish.
  • Seafood Cajun Gumbo. As the temperature decreases in the winter, seafood gumbo is a great way to stay toasty and warm. After just one bowl of this cajun gumbo, you’ll understand why it’s so unique.
  • Andouille Sausage and Chicken Gumbo. Any great gumbo will begin with a well-made roux. It’s essential to have a deep color. The lighter the roux, the greater the thickening power, still the less flavor.
  • Cajun Fried Chicken. You may feel that it’s deep-fried because it’s crunchy. Add a dash of cajun flavor to this classic Southern dish. You can make this dish without or with skin, and it will still be great!
  • Cajun Chicken Cassoulet. I have modified this classic French recipe for a Louisiana table by adding spice, okra, and smoked cajun sausage. This simple cassoulet recipe is packed with chicken, sausage, beans, and vegetables.
  • Spicy Cajun Chicken. Such a great combination of brown sugar, cajun seasoning, and chicken. There won’t be any food leftover. This spicy cajun chicken is the thing I make at least once a month.
