AUTHENTIC LOUISIANA RED BEANS AND RICE



Authentic Louisiana Red Beans and Rice image

Authentic Cajun flavor! I grew up in Louisiana and love red beans and rice; these are just like I remember. Serve with Tabasco sauce for a little kick. My family loved to splash a little cider vinegar in each bowl.

1 pound dry kidney beans
¼ cup olive oil
1 large onion, chopped
1 green bell pepper, chopped
2 tablespoons minced garlic
2 stalks celery, chopped
6 cups water
2 bay leaves
½ teaspoon cayenne pepper
1 teaspoon dried thyme
¼ teaspoon dried sage
1 tablespoon dried parsley
1 teaspoon Cajun seasoning
1 pound andouille sausage, sliced
4 cups water
2 cups long grain white rice

Steps:

  • Rinse beans, and then soak in a large pot of water overnight.
  • In a skillet, heat oil over medium heat. Cook onion, bell pepper, garlic, and celery in olive oil for 3 to 4 minutes.
  • Rinse beans, and transfer to a large pot with 6 cups water. Stir cooked vegetables into beans. Season with bay leaves, cayenne pepper, thyme, sage, parsley, and Cajun seasoning. Bring to a boil, and then reduce heat to medium-low. Simmer for 2 1/2 hours.
  • Stir sausage into beans, and continue to simmer for 30 minutes.
  • Meanwhile, prepare the rice. In a saucepan, bring water and rice to a boil. Reduce heat, cover, and simmer for 20 minutes. Serve beans over steamed white rice.

Authentic Cajun Red Beans are the Monday supper tradition in Louisiana. These Red beans keep extremely well and taste just as good a couple of days later.

Number Of Ingredients 17

16 ounces dried red beans (or kidney beans soaked and sorted)
15 cups water (Read instructions for the water break down)
6 large ham hocks (or chicken stock)
2½ cups celery (diced)
1 large yellow onion (diced)
2 cups green bell pepper (diced)
5 bay leaves (whole)
2 teaspoons white pepper
2 teaspoons thyme leaves
1½ teaspoons garlic powder
1 teaspoon oregano (dried)
1 teaspoon cayenne pepper (or to taste)
kosher salt (to taste)
½ teaspoon black pepper
1 tablespoon Louisiana hot sauce (or to taste)
1 pound Andouille smoked sausage (thinly sliced)
5 cups cooked white rice

Steps:

  • Sort and rinse the red beans. Cover the beans with cold water about 2 inches above the red beans. Let the beans soak overnight. Drain and rinse the beans under cold water before cooking them. (This does not include water listed in the recipe)
  • Place the ham hocks, 9 cups of water, celery, yellow onions, green bell peppers, bay leaves, and seasonings in a 6-quart sizeable Dutch oven; stir the mixture well. Cover the Dutch Oven with a tight-fitting lid and bring to a full boil over high heat. Remove the cover, reduce the heat, and simmer for 1 hour, stirring occasionally.
  • Remove the ham hocks from the Dutch Oven and set them to the side. (Shred the ham hocks while waiting) Do not discard the water in the Dutch Oven
  • Add the drained and rinsed beans and about 4 more cups of the water to the Dutch Oven; bring to a boil, reduce heat, and simmer 30 minutes, stirring occasionally.
  • Next, add two more cups of water and simmer for 30 minutes, stirring often. Add the sliced andouille sausage and continue simmering for about 25-35 minutes, Stirring the bottom of the Dutch oven to ensure the beans do not stick.
  • Add the shredded ham hocks to the Dutch Oven and cook and stir for 10 minutes more.
  • Serve over long-grain rice and add hot sauce and green scallions for a little more kick.

2 (15-ounce) cans dark red kidney beans, rinsed and drained well
1 red bell pepper, seeded and chopped
3 scallions, chopped, whites and greens
1 rib celery, chopped
1/4 cup (a couple of handfuls) chopped flat-leaf parsley
1 cup sweet red pepper relish
2 tablespoons (2 turns around the bowl in a thin stream) light olive oil or vegetable oil
1 tablespoon (2 splashes) white distilled vinegar
Coarse salt and pepper

  • Combine all ingredients in a medium bowl and toss well; adjust seasonings.

17 1/2 ounces whole kernel corn, well drained (use the microwave) or 3 cups fresh corn, off the cob (use the microwave)
1 green bell pepper, diced
1 red bell pepper, diced
1 cup hot pickled okra or 6 green onions
1/2 cup parsley, minced, preferable flat leaf
1 cup cherry tomatoes, halved
1 teaspoon sugar
1/4 cup herb flavored white wine vinegar
1 teaspoon creole mustard or 1 teaspoon other stone ground mustard
1 tablespoon dried basil leaves or 3 tablespoons minced fresh basil
2 tablespoons mayonnaise
1/2 teaspoon fresh ground pepper
1/2 teaspoon Tabasco sauce or 1/2 teaspoon another hot sauce
salt
1/2 cup olive oil

Steps:

  • Toss all the salad ingredients together in serving bowl; set aside.
  • Prepare dressing.
  • In a 2 qt bowl whisk all the ingredients except the olive oil until combined.
  • Add the oil in a slow steady stream whisking slightly until thickened.
  • Pour the dressing over salad and use a fork to coat.
  • Refrigerate and let set overnight or up to 3 days.

CAJUN GRILLED HALLOUMI WITH LIME BLACK-EYED BEAN SALAD & GUACAMOLE

1 tsp rapeseed oil
½ tsp dried oregano
½ tsp dried thyme
1 tsp smoked or regular paprika
¼ tsp cayenne pepper
1 garlic clove , finely chopped
125g block of halloumi cheese (125g more if using for Open rye sandwich - see 'goes well with')
200g black-eyed bean from a can, drained (or butter or cannellini beans)
2 tomatoes , deseeded and diced
85g sweetcorn from a can, drained
2 spring onions , trimmed and finely chopped
25g semi-dried tomato in oil from a jar, roughly chopped
zest and juice 1 lime
small handful coriander , finely chopped
1 avocado , stoned and peeled
¼ red chilli , deseeded and finely chopped
½ tbsp olive oil
juice 1 lime
small handful coriander , finely chopped

Steps:

  • Mix together the oil, herbs, spices and garlic in a large sealable bag. Divide a 250g block of halloumi into 8 slices. It can be very salty, so soak the slices in cold water for at least 10 mins, if you have time. Pat dry, then rub a spoonful of the Cajun mix into each slice, and reserve 4 slices for Open rye sandwich (see 'goes well with').
  • In a large bowl, mix all the ingredients for the bean salad. Stir well and set aside.
  • For the guacamole, scoop the flesh from the avocado and put it in a medium bowl, chopping it roughly with the side of the spoon. Add the rest of the ingredients and mix well. If you prefer your guacamole to be smoother, mash the avocado well with the olive oil and lime juice until it's at your preferred consistency before stirring in the other ingredients.
  • Heat the grill. Line a grill pan with foil, place the halloumi slices on it and grill for 3-4 mins, checking occasionally until golden.
  • Set aside 2 tbsp guacamole for tomorrow's lunch and chill. Place 2 slices of halloumi on each plate, with some bean salad and a dollop of guacamole on the side.

1 pound dried pinto beans
3 tablespoons bacon grease
¼ cup chopped salt pork
1 ½ cups chopped yellow onion
¾ cup chopped celery
¾ cup chopped green bell pepper
½ teaspoon freshly ground black pepper
1 pinch chipotle chile powder
½ pound smoked sausage, split in half and cut into 1-inch pieces
3 bay leaves
2 tablespoons chopped fresh parsley
2 teaspoons chopped fresh thyme
3 tablespoons chopped garlic
water as needed

Steps:

  • Place the pinto beans into a large container and cover with several inches of cool water. Soak beans 15 minutes; drain and rinse.
  • Heat bacon grease in a large pot over medium-high heat. Cook and stir salt pork in hot grease for 1 minute. Add onion, celery, bell pepper, black pepper, and chipotle powder to salt pork; cook and stir until the vegetables are soft, about 4 minutes.
  • Stir smoked sausage, bay leaves, parsley, and thyme into salt pork mixture; cook and stir until sausage is browned, about 4 minutes. Add garlic and cook until fragrant, about 1 minute more.
  • Stir beans into sausage mixture and add enough water to cover the beans. Bring to a boil, remove from heat, and transfer beans mixture to a slow cooker.
  • Cook on High for 1 hour. Reduce to Low and cook until beans are tender, adding water as necessary, about 6 hours more.
  • Mash about 1/4 the beans against the side of the slow cooker crock with the back of a heavy spoon. Continue cooking on Low until beans are tender and creamy, 15 to 20 minutes more. Remove bay leaves.
