CAJUN-STYLE RICE PILAF

Bring the spirit of Bourbon Street to your gathering with this modern take on a rice pilaf with Italian sausage and shrimp!

8 ounces Italian sausage links
2 ¼ cups water, divided
1 pound shell-on medium shrimp
3 ½ tablespoons vegetable oil, divided
1 cup chopped onions
⅓ cup chopped red bell pepper
2 teaspoons Cajun seasoning
1 cup long-grain white rice
¼ cup Chateau Ste. Michelle Syrah Rosé
⅓ cup frozen peas
Salt and pepper
¼ cup chopped green onions

Steps:

  • Boil sausage in 1/4 cup water for 5 minutes. While the sausage is boiling, remove the shells from the shrimp. Put shells and tails in 2 cups of water. Bring shrimp water to a boil and simmer for 20 minutes.
  • Grill the sausage links for about 5 minutes or until they are completely cooked through. Brush the shrimp with 1/2 tablespoon oil and grill about 2 minutes per side. Pull off and set aside.
  • Heat a medium pot on medium high heat and add vegetable oil, onions, and red pepper. Saute for 3 to 4 minutes or until the onions are translucent. Add Cajun seasoning and rice; cook and stir for 1 minute. Add the Syrah Rose, stir for a few seconds, and strain the shrimp stock into the pot. Once it comes to a boil, turn the heat down to a simmer, cover, and cook for 20 minutes.
  • Meanwhile, chop the shrimp and sausage into bite-sized pieces.
  • Once rice is done, add peas, shrimp, and sausage and cook for another 2 minutes to heat through. Add salt and pepper to your taste. Garnish with chopped green onions.

1 (14 1/2 ounce) can chicken broth
1 beef bouillon cube (or 1 t beef bouillon powder or crystals)
1 tablespoon olive oil
2 teaspoons bottled minced garlic
1 teaspoon cajun seasoning
1 teaspoon Worcestershire sauce
1/4 teaspoon black pepper
1/4 cup bacon bits (or 4 oz finely diced ham, kielbasa or andouille sausage)
1/2 small onion (for 1/2 c diced)
1 small celery rib (for 1/2 c diced)
1 cup long grain rice

Steps:

  • Pour chicken broth into rice cooker.
  • Crumble bouillon cube to a powder and add to broth.
  • Add olive oil, garlic, Cajun seasoning, Worcestershire, and pepper.
  • Add bacon bits, diced onion, diced celery, and rice. Stir well.
  • Turn rice cooker on ad cook until machine shuts off (or shifts to WARM mode) and rice is tender, about 20-25 minutes.
  • Stir and fluff rice with fork (or paddle utensil provided with rice cooker) and serve.
  • STOVETOP INSTRUCTIONS: Add all ingredients, except rice, to medium saucepan and bring to boil over high heat. Reduce heat to low, add rice, cover, and cook until rice is tender, appx 17 minutes. Stir and fluff rice with fork and serve.
  • NOTES: You may add up to 1/3 c additional veggies, such as diced bell peppers or cooked red beans.

My husband loves this rice pilaf. Everytime I make rice he requests it. Hopefull you'll like it too! It takes a little extra preparation than a rice mix, but I think it's well worth it. You can also use wild rice, instead of white rice, but you'll need to add more liquid and it will take longer to cook.

1 1/2 cups white rice (I use jasmine, but any white rice will work)
2 cups chicken broth
1/4 cup slivered almonds
1 cup sliced mushrooms
1/2 small onion, diced
2 teaspoons margarine or 2 teaspoons butter
2 teaspoons minced garlic cloves

Steps:

  • In a small frying pan over medium heat, sautee the onion and garlic until onion is translucent. The garlic will cause the onion to scorch a bit, don't worry, it gives it flavor.
  • Add the rice, sauted onion and garlic, almonds, mushrooms, and chicken broth to a 4 cup capacity or larger rice cooker.
  • Stir briefly to distribute ingredients.
  • Set to cook. When done, let sit for 10 minutes.
  • Stir and enjoy!
  • Depending on your rice cooker, the bottom may get brown. I like it, it gives it some extra zip!

3 teaspoons chicken bouillon granules
3 ½ cups water
3 cups uncooked white rice
4 small heads baby bok choy, trimmed and chopped
3 green onions, chopped
1 carrot, chopped
4 mushrooms, chopped
1 teaspoon chicken bouillon granules
¼ cup water, or more if needed
ground black pepper to taste

Steps:

  • Dissolve 3 teaspoons chicken bouillon in 3 1/2 cups water in a rice cooker.
  • Stir rice, baby bok choy, green onions, carrot, and mushrooms into the bouillon and water mixture.
  • Start rice cooker and cook until liquid is absorbed and rice is tender, about 50 minutes.
  • Dissolve 1 teaspoon chicken bouillon and 1/4 cup water in a small bowl; transfer mixture to a blender.
  • Scoop about 1 cup of the rice mixture into the blender with the bouillon mixture; process until mixture becomes a thin paste, adding more water as needed.
  • Mix the rice paste with the remaining cooked vegetables and rice until thoroughly combined.
  • Season with black pepper.

1/2 cup finely chopped carrots
1/2 cup chopped onion
1/2 cup sliced fresh mushrooms

1/2 cup uncooked wild rice
3 cups chicken broth
1/4 teaspoon dried thyme
1/4 teaspoon dried rosemary, crushed
1/2 cup uncooked long grain rice
1/3 cup chopped dried apricots
2 tablespoons minced green onions
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 cup chopped pecans, toasted

Steps:

  • In a large saucepan, saute brown rice, carrots, onion and mushrooms in oil for 10 minutes or until rice is golden. , Add wild rice, broth, thyme, and rosemary; bring to a boil. Reduce heat; cover and simmer for 25 minutes. , Stir in long grain rice; cover and simmer for 25 minutes or until liquid is absorbed and wild rice is tender. , Remove from the heat; stir in apricots, green onions, salt and pepper.
