VEGAN MEATLOAF
This vegan meatloaf is the best ever. It's hearty, satisfying, loaded with flavor and glazed with a sweet and spicy tomato sauce.

Steps:
- Add the chopped onion and crushed garlic to a frying pan with the olive oil and sauté until the onions are softened.
- Preheat the oven to 375°F (190°C). Spray a loaf pan with non-stick spray and line it with parchment paper so that the meatloaf can be easily lifted out. Set aside.
- Drain the chickpeas and add to a mixing bowl. Mash with a fork or potato masher until roughly mashed.
- Make your breadcrumbs by breaking up the 4 slices of bread and placing into a blender and pulse blending until it makes breadcrumbs (see notes*).
- Add the breadcrumbs, soy sauce, sweet chili sauce, dijon mustard, flaxseed meal, nutritional yeast, garlic powder, tomato paste and cayenne pepper to the mixing bowl. Add in the cooked onions and garlic. Mix very well into a thick batter. Make sure everything is evenly mixed (it's a very thick mix). Transfer this into the parchment lined loaf pan and smooth down with the back of a spoon.
- Cover with foil and bake for 30 minutes.
- While the meatloaf is baking, mix the tomato paste, brown sugar, maple syrup, garlic powder, salt and paprika in a bowl and stir together.
- When the meatloaf has baked for 30 minutes, remove it from the oven and remove the foil. Spread on the tomato glaze evenly and return it to the oven, (no foil, uncovered) to bake for a further 15 minutes.
- Remove from the oven and allow to cool for at least 10 minutes before removing from the loaf pan by lifting the meatloaf out with the parchment paper. Let it cool for another 10 minutes.
- Slice and serve with fresh basil.

- combine the seasoning mix ingredients in a small bowl and set aside.
- melt the butter in 1 quart saucepan over medium heat.
- add the onions, celery, bell pepper, green onions, garlic, tabasco, worcestershire and seasoning mix.
- saute until mixture starts sticking excessively, about 6 mins, stirring occasionally and scraping the pan bottom well.
- stir in the milk and 1/2 cup catsup.
- continue cooking for about 2 mins, stirring occasionally.
- remove from the heat and allow mixture to cool to room temperature.
- place the ground beef and pork in an ungreased 13 x 9 inch baking pan.
- add the eggs, the cooked vegetable mixture removing the bay leaves, the bread crumbs.
- mix by hand until thoroughly combined in the center of the pan -- shape the mixture into a loaf that is about 1 1/2 inches high x 6 inches wide and 12 inches long.
- bake uncovered at 350 for 25 minutes, then raise heat to 400 and continue cooking until done, about 35 minutes longer.
- serve immediately,.

CAJUN STYLE MEATLOAF
This is meatloaf with some kick! The seasonings really bring out the flavor of the meat.

Steps:
- In a small bowl, combine the bay leaves, salt, cayenne pepper, ground black pepper, ground white pepper, cumin, and nutmeg; set aside.
- Melt the butter or margarine in a saucepan over medium heat. Add the onion, bell pepper, green onions, garlic, hot pepper sauce, Worcestershire sauce, and reserved seasoning mix. Saute until mixture starts sticking to the bottom of the pan, about 6 minutes. Stir in the milk and ketchup; continue cooking for 2 more minutes, stirring occasionally.
- Remove vegetable mixture from heat, and allow to cool to room temperature. Place the beef and sausage in an ungreased 9x13 inch baking dish. Add the eggs, the vegetable mixture, and the bread crumbs. Remove the bay leaves. Mix well by hand, and form into a loaf about 1 1/2 inches high.
- Bake uncovered at 350 degrees F (175 degrees C) for 25 minutes. Then raise heat to 400 degrees F (200 degrees C) and bake for another 35 minutes. Let stand for 5 minutes before serving.

MEATLOAF: HEY VIRGINIA! MINE IS BETTER!!!
Ha-ha, I do love the "Meatloaf: yes Virginia, there IS a great meatloaf" recipe, however I believe mine is just a hint better. You be the judge. I made this for my husband's birthday- party of 15, and everyone raved over it- so, hey everyone- give it a shot, I would love some feedback. I use dried onion as opposed to fresh because I didn't like the BITE of fresh onion, it's much more subtle yet still flavorful to use dried... you be the judge though- use 1 small fresh yellow onion chopped if you like. By the way- some of you may be wondering- this is NOT a 'sweet meat'... it may be confusing with all the brown sugar and sweetened condensed milk- but I assure you- this is not sweet- if you want to- just omit the savory sauce and make it on the side to use as a dipping sauce the first time around... I'm highly confident in this recipe.

COUNTRY PIE
This is my old roommates recipe - we used to fix this all the time. It's a tasty, one dish dinner. The "crust" is a "meatloaf" mixture.

- Crust: Combine ground beef, 1/2 a can of tomato sauce, bread crumbs, onion, green pepper & spices.
- Pat mixture down & up sides of a 9 inch pie plate (I use a deep dish).
- Set aside.
- Filling: Combine rice, all the remaining tomato sauce (1 1/2 cans), 1 cup water & 1/2 cup of cheese.
- Pour on top of crust.
- Cover with foil and bake at 350 for 25 minutes.
- Sprinkle with rest of cheese & bake 10 -15 more minutes or.
- until cheese is melted.

- Preheat oven to 450 degrees.
- Combine first 11 ingredients as if you were making meatloaf.
- Flatten meat out on a waxed paper lined cookie sheet into a thin layer: 1/2-inch thick, 12 inches long by 6 to 8 inches wide.
- Cover meat with spinach and cheese then roll the meat, using the waxed paper to help roll up into a large log, working across the 6 to 8-inch side, resulting in a 12-inch long log.
- Drizzle the log with extra-virgin olive oil to coat lightly.

CAJUN "MEATLOAF" W/ SWEET BOURBON GLAZE (VEGAN)
I made this tasty "meatloaf" for dinner tonight. It is from the Vegandad.blogspot.com site. DH said, "this is pretty good for being vegan." Next time, I will make more sauce, maybe even double it. I found that I did not have any "excess" sauce to spoon over my loaves. Also, I had a little less than 1/2 cup of brown sugar on hand, which was fine for our tastes, as I don't like things too sweet. I may even cut back to 1/4 cup next time. The recipe did not say to use prepared mustard so I used dried. The cayenne is to taste, but that part keeps disappearing. I grated the onion in my mini food processor as I was tired of using the box grater after the tempeh. I served with mashed potatoes and roasted broccoli.

- Preheat oven to 350 degrees. Oil a 9 x 13 baking pan.
- Mix grated tempeh, onion, garlic, flour, and spices in a large bowl.
- Add in sauces and oil, and enough water (you may not need any at all) so you are able to mash everything up with your fingers. Knead/mush/mash for a few mins to mix everything well.
- Divide dough into 10 pieces and shape into small loaves. Place into oiled pan, and spray lightly with oil. Bake for 15 minutes.
- While loaves are baking, bring glaze ingredients to bubbling in a small saucepan. Let thicken a bit. Spoon over baking loaves. Bake loaves for 15 mins more, then scoop excess glaze back over the loaves. Bake for an additional 20-25 mins, or until glaze is thickened and darkened.
