12 medium shrimp, peeled, deveined and chopped
4 ounces chicken, diced
1 tablespoon Creole seasoning, recipe follows
2 tablespoons olive oil
1/4 cup chopped onion
1/4 cup chopped green bell pepper
1/4 cup chopped celery
2 tablespoons chopped garlic
1/2 cup chopped tomatoes
3 bay leaves
1 teaspoon Worcestershire sauce
1 teaspoon hot sauce
3/4 cup rice
3 cups chicken stock
5 ounces Andouille sausage, sliced
Salt and pepper

Steps:

  • In a bowl combine shrimp, chicken and Creole seasoning, and work in seasoning well. In a large saucepan heat oil over high heat with onion, pepper and celery, 3 minutes. Add garlic, tomatoes, bay leaves, Worcestershire and hot sauces. Stir in rice and slowly add broth. Reduce heat to medium and cook until rice absorbs liquid and becomes tender, stirring occasionally, about 15 minutes. When rice is just tender add shrimp and chicken mixture and sausage. Cook until meat is done, about 10 minutes more. Season to taste with salt, pepper and Creole seasoning.

I love the Cheesecake factory, and this is one of my favorite recipes there. There is another recipe here for this, but it is not like the original and different than mine. I use Tony Chachere's Seasoning (green can) when making this dish. The amounts in the parenthesis are what I use in this recipe.

4 ounces butter (1 stick)
2 teaspoons cajun seasoning
1 lb boneless skinless chicken breast, cut into small pieces
1 lb fresh linguine
1/2 cup clam juice
2 ounces green bell peppers, cut into thin strips (1/2 pepper)
2 ounces red bell peppers, cut into thin strips (1/2 pepper)
2 ounces yellow bell peppers, cut into thin strips (1/2 pepper)
4 ounces red onions, cut into thin strips (1 med. onion)
1/2 lb fresh medium shrimp, peeled, deveined, tails removed
1/2 cup tomatoes, diced

Steps:

  • Place the butter into a saute pan. Allow the butter to melt slightly.
  • Add the seasoning into the pan, and stir together with the melted butter.
  • Add the chicken into the pan, and continue to cook until the chicken is about half done.
  • While the chicken is cooking, carefully place the pasta into boiling water, and cook until al dente.
  • Pour the clam juice into the pan. Add the peppers and onions. Cook for another minute, making sure the vegetables are heated through and the chicken is almost done.
  • Add the shrimp into the pan. Toss the ingredients together, and continue to cook until the shrimp are almost done.
  • Add the tomatoes into then pan. Continue to cook mixture until both the shrimp and chicken are thoroughly cooked through.
  • Place some pasta into each bowl. Spoon equal portions of the jambalaya mixture into each bowl over the pasta.

This recipe took me a year to perfect. The secret to making a Cajun jambalaya is to get the right amount of fond, those delicious browned bits left behind from browning your meats, to build the flavor and color of your jambalaya. We're also going to add a little tomato paste for color and flavor.

3 tablespoons kosher salt
2 tablespoons black pepper
1 tablespoon cayenne pepper
1 tablespoon garlic powder or granulated garlic
1 tablespoon onion powder or granulated onion
1 tablespoon sweet paprika
1 tablespoon white pepper
1 1/2 teaspoons ground cumin
1/4 cup canola oil
6 boneless, skinless chicken thighs, chopped into 1-inch pieces
24 ounces smoked beef sausage, cut into 1/4-inch-thick slices
3 stalks celery, chopped
1 medium Spanish or white onion, chopped
1 bell pepper, chopped
6 cloves garlic, finely chopped
1 bay leaf
1 teaspoon cayenne pepper
1 teaspoon dried thyme
2 cups parboiled long-grain brown rice
2 tablespoons tomato paste
2 tablespoons Worcestershire sauce
4 cups low-sodium chicken stock
2 bunches green onions (6 to 8 bulbs), sliced (about 1 1/2 cups)

Steps:

  • For the Creole seasoning: Combine the salt, black pepper, cayenne, garlic powder, onion powder, paprika, white pepper and cumin in a medium bowl.
  • For the jambalaya: Heat 2 tablespoons oil in a 5-quart heavy-bottomed pot or large Dutch oven over medium heat. Rub the chicken with the remaining 2 tablespoons oil and 2 tablespoons of the Creole seasoning in a medium bowl until evenly coated. Add the chicken to the pot and cook until golden brown, about 5 minutes. Transfer the chicken to a large bowl. Add the sausage to the pot and cook until browned, 4 to 5 minutes. Transfer to the large bowl with the chicken. The bottom of the pot should be covered with browned bits.
  • Add the celery, onions and peppers and cook, stirring and scraping the bottom of the pot occasionally, until the onions are translucent, about 3 minutes. Stir in the garlic, bay leaf, cayenne, thyme and 2 teaspoons Creole seasoning. Add the rice and stir once or twice to coat. Stir in the tomato paste, Worcestershire sauce, cooked chicken and sausage and remaining Creole seasoning. Stir in the chicken stock. Bring to a boil, cover and reduce the heat to a simmer. Cook until the liquid is reduced, and you see little holes on the top, about 30 minutes.
  • Use a fork to stir in half of the green onions and fluff the rice. Cover and cook for 10 minutes. Taste and adjust the seasoning. Garnish with the remaining green onions and serve immediately.

Once upon a time, my brother worked and lived in Lafayette, La. I would visit him when my business took me that way. His next door neighbor was a real, honest-to-God Cajun. Could barely understand her when she spoke! One day while I was visiting, she brought over some of the following dish for us to sample. I convinced her to give me the recipe, but I had to watch her as she was making it. Her measurements were "A pinch" or "A dash" or "A handful". The measurements included in the recipe are my interpretations of how much she used! However, it worked!

2 tablespoons olive oil
2 teaspoons garlic, minced
1 teaspoon soy sauce
1/2 teaspoon salt
1/2 lb boneless skinless chicken breast
1 tablespoon butter
1/2 lb sausage, cut in 1/2 inch slices (preferably Andouille)
1 medium onion, diced
1 medium bell pepper, diced
2 cups chicken stock
1 cup canned crushed tomatoes in puree
2 tablespoons soy sauce
3 ounces tomato paste
1/2 teaspoon salt
1/2 teaspoon cayenne pepper
1/4 teaspoon cumin
1/4 teaspoon pepper
1 bay leaf
1/4 cup Pickapeppa Sauce (or your favorite barbeque sauce)
1 tablespoon soy sauce
1 tablespoon olive oil
1 medium bell pepper, cut into 1 inch squares
1 medium red onion, sliced into rings
1 lb pasta (linguini or your choice)
1 tablespoon parsley, chopped

Steps:

  • Preheat broiler.
  • In a small bowl, combine olive oil, garlic, soy sauce, and salt. Marinate chicken breasts in mixture at room temperature for 10 to 20 minutes. Broil chicken until cooked through (10 minutes). Cut into ½ inch cubes. Set aside or refrigerate.
  • In a large saucepan, melt butter over medium heat. Add the sliced Andouille sausage, stirring occasionally, for 12 minutes. Add the onion and bell pepper. Cook, stirring frequently, until vegetables are tender (10 minutes). Add the tomatoes, tomato paste, soy sauce, salt, cayenne pepper, cumin, pepper, and bay leaf. Stir to blend and bring to a boil. Reduce heat and simmer for 30 minutes.
  • In a medium mixing bowl, stir together the Pickapeppa Sauce, soy sauce, and olive oil until thoroughly blended. Add pepper and onions to mixture. Grill or broil coated vegetables until evenly browned (4 to 5 minutes).
  • Bring a large pot of salted water to a rapid boil. Add the pasta and cook until al dente, 5 to 6 minutes for dry pasta or about 3 minutes for fresh pasta. Meanwhile, in a covered medium sized saucepan over medium low heat, combine the peppers and onion, grilled chicken cubes, and the Jambalaya sauce (remove the bay leaf). Cook, stirring occasionally, until heated through, 8 to 10 minutes.
  • Transfer to a large mixing and serving bowl. Drain the pasta thoroughly, add it to the sauce, and toss well. Serve family style or in individual serving bowls, garnished with chopped parsley.

1 lb chicken breast, cut into 1 in pieces
1/2 lb shrimp, deveined
1/2 lb andouille sausage, sliced into 1/2 in thick pieces
1 teaspoon cajun seasoning (Tony Chachere's)
1/2 red bell pepper, diced
1/2 orange bell pepper, sliced
1/2 yellow bell pepper, diced
1/2 red onion, thinly diced
3 garlic cloves, minced
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper
3 tablespoons canola oil
1 medium tomatoes, diced
1 cup chicken broth
1 lb fettuccine pasta, cooked but not rinsed (or lingini)
parsley and leftover minced bell pepper (to garnish)
1 -2 ounce of grated parmesan cheese or 1 -2 ounce grated romano cheese

Steps:

  • In a large bowl add the chicken, shrimp, sausage, cajun spices, red bell pepper, green bell pepper, red onion, garlic, Kosher salt and black pepper in a bowl and toss.
  • In a large skillet or a cast iron skillet add the canola oil on high heat.
  • In two batches sear off the ingredients until they're cooked through, about 4-5 minutes.
  • Add the tomatoes and chicken stock to the pan with all the cooked ingredients.
  • Cook for a minute or two then add in the cooked pasta and using tongs coat the pasta with the sauce.
  • Garnish with parsley and leftover minced bell peppers if desired.

1 lb andouille sausage, halved lengthwise,then thinly sliced crosswise (or other fully cooked smoked spicy sausages, such as Louisiana hot links)
1 medium onion, chopped
1 large green bell pepper, chopped
5 green onions, thinly sliced
1 stalk celery, chopped
5 cloves garlic, chopped
2 bay leaves
2 teaspoons dried oregano
3/4 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1/4 teaspoon ground allspice
1 (28 ounce) can crushed tomatoes (with added puree)
1 (14 1/2 ounce) can diced tomatoes with juice
1 teaspoon Worcestershire sauce
1/2 teaspoon hot pepper sauce
1 lb farfalle pasta
1 1/2 lbs uncooked large shrimp, peeled,deveined
freshly grated parmesan cheese

Steps:

  • Heat 2 tablespoons oil in heavy large pot over medium heat.
  • Add sausages; saute until light brown, 5 minutes.
  • Using slotted spoon, transfer sausages to paper towels.
  • Pour drippings from pot; discard.
  • Add remaining 2 tablespoons oil to pot and heat over medium heat.
  • Stir in onion and next 9 ingredients.
  • Cover and cook until vegetables are almost tender, stirring often, about 8 minutes.
  • Stir in crushed tomatoes and diced tomatoes with juices and bring to boil.
  • Reduce heat, cover and simmer 15 minutes to blend flavors.
  • Stir in sausages, Worcestershire sauce and hot pepper sauce; simmer uncovered until sauce thickens slightly, about 5 minutes longer.

  • Meanwhile, cook pasta in large pot of boiling salted water until just tender but still firm to bite.

8 ounces kielbasa, diced
1 onion, diced

1/2-pound smoked sausage, cut into 1/4-inch slices
1 1/4 cup yellow onion, coarsely chopped
1/2 cup red bell pepper, coarsely chopped
1/2 cup yellow bell pepper, coarsely chopped
2 teaspoons fresh garlic, finely chopped or minced
2 (14.5-ounce) cans Hunt's diced tomatoes
1 1/2 teaspoons Tony Chachere's Original creole seasoning
1/8 teaspoon garlic salt
1 tablespoon dried parsley flakes
Kosher salt to taste
1/4 teaspoon freshly cracked black pepper, plus more to taste
1 (14.5-ounce) can reduced-sodium chicken broth
1/4 cup heavy cream
2 cups uncooked ziti pasta or other medium pasta, such as penne

Steps:

  • Prep all the vegetables and sausage; set aside. Drain the tomatoes in a colander set over a large mixing bowl; reserve the juice. Set aside. Heat olive oil in a large skillet or pot that has a cover over medium-high heat; then add the chicken and cook 1 to 2 minutes on each side, just until no longer pink (it will finish cooking later). Remove chicken from skillet. Reheat skillet, then add the sliced sausage and cook until lightly browned. Remove and drain well on paper towels. Reheat the skillet, then add the onion and bell peppers (add a little more oil if needed) and sprinkle lightly with salt and pepper; reduce the heat to medium and saute just until veggies are crisp tender, stirring frequently. (They will finish cooking later). Add the garlic and cook and stir for 1 more minute. Remove skillet from heat but do not turn the burner off. Cut the chicken into bite-sized pieces and return to the skillet along with the browned sausage, canned tomatoes (reserve the juice), and all the seasonings; set back on burner and heat the mixture through over medium high heat, stirring frequently. Add the reserved tomato juice (I had about 1 cup), chicken broth, and heavy cream, stirring to mix. Stir in the uncooked pasta and bring to a boil; then cover the skillet, reduce heat to medium/medium-low and cook for 15 minutes, or until the pasta is tender and most of the liquid has cooked out. (It should have a little liquid left, the pasta will absorb it). Garnish with a little parsley or chopped green onion and serve hot with corn and buttered, toasted French bread.
