MOM'S CAJUN HUSH PUPPIES

- Mix flour, cornmeal, sugar, Parmesan cheese, baking powder, salt, black pepper, eggs, bell peppers, onions, cream-style corn, whole kernel corn, and pimento peppers in a large bowl.
- Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
- Drop 6 to 8 tablespoon-sized balls of batter into the hot oil; fry until each hush puppy is golden brown, about 5 minutes. Remove hush puppies with a slotted spoon and place on a paper towel-lined plate to drain. Repeat with any remaining batter.

- In a small mixing bowl stir the egg, buttermilk, green onions and water together.
- In a medium bowl combine the cornmeal, flour, sugar, baking powder, baking soda, salt and pepper.
- Add the egg mixture to dry ingredients, stirring until just moistened.
- In a heavy saucepan or deep fryer, heat abut 2 inches of oil or shortening to 375 degrees.
- Drop batter by tablespoons into hot fat.
- Fry a few at a time, for 2 minutes, turning once.
- Drain on paper towels, keep warm in a 325 degree oven until they are all fried.
HOT AND SPICY HUSH PUPPIES

- Preheat deep fryer to 375 degrees F.
- Mix all the ingredients together into a large mixing bowl to form a thick batter.
- Dip 2 tablespoon spoons into water. Using the spoons scoop up some of the batter and drop into the hot oil. Work in batches. Fry for 3 to 4 minutes or until golden and brown. Remove and drain on a paper towel lined sheet tray. Serve with dipping sauce.

CAJUN HUSH PUPPIES

- First, start by heating up enough oil in a pot to submerge the hush puppies. The oil temperature should reach 365 degrees F before you can start frying.
- In a bowl, combine the flour, corn meal, salt, granulated garlic, cajun seasoning, baking powder, baking soda and sugar. Whisk together to mix.
- Add the egg to the corn meal mixture and pour in the buttermilk and oil. Whisk together to combine.
- Finely grate or mince the onion.
- Fold the onion into the batter with a spatula so you don't over mix.
- Scoop 2 tbsp of the batter using a cookie scoop and drop it into the hot oil. Do not over crowd the pan, otherwise the temperature of the oil will drop. I usually fry about 5 at a time but this could vary depending on the size of your pot.
- Fry the cajun hush puppies for 3-4 minutes or until you achieve a golden brown color on all sides. Flip them throughout the process so that all sides cook evenly.
- Transfer them to a paper towel lined plate to soak up the excess oil.
- Finally, garnish with fresh parsley if desired and serve.

The story of the hush puppy comes from back in the antebellum days in the south. When the planters had a fish fry, the food was cooked outdoors. The dogs would gather around and hope for a scrap of food (some things never change!). The hush puppy was originally just a piece of fried dough that was thrown to the dogs to keep them happy. The secret of a good hush puppy is the temperature of the oil. It has to be hot enough to cook, but not so hot that the outside is hard and inside is mush. If your oil is smoking, it is way too hot! Peanut oil works great, but isn't required. These are fabulous with fried fish or shrimp. **Cooking is time is for 2 batches

- Mix together the cornmeal, flour, baking soda, baking powder and salt. Add the grated onion and sliced green onions.
- Take the egg yolk and buttermilk and blend into the batter. Whip the egg whites into stiff peaks. Fold the egg whites into the batter until it reaches a good consistency. (The amount of egg white depends on the size of your eggs).
- Drop by teaspoonful into hot oil (in a deep fryer or in a dutch oven -- the oil needs to be deep enough to cover the hush puppies). Cook until golden brown.

CREOLE HUSH PUPPIES
The last time we fried catfish, I decided to try out this hush puppy recipe for a bit of a change. I used a can of mild Rotel tomatoes since I have small children, but you could use the hotter Rotel if you wish. This makes a lot of hush puppies, so you might want to halve the recipe.
