6 Chicken thighs
4 tbsp Cajun spice
2 tbsp Olive oil
1 tbsp Lemon juice
1 tbsp Brown sugar
1/2 tsp Salt (optional)
1/4 tsp Pepper (optional)

Steps:

  • Preheat the oven at 200 C/ 390 F.
  • Clean and pat dry the chicken pieces.
  • Place the chicken pieces in a 9 x 13-inch baking dish.
  • Season the chicken pieces with salt and pepper.
  • In a separate bowl, combine Cajun spice and brown sugar
  • Brush the chicken liberally with the lemon juice and olive oil
  • Then sprinkle liberally with the cajun spice mix on both sides.
  • Bake in the preheated oven for 25 to 35 minutes or until done.
  • Tip - Chicken is done when the internal temperature of the chicken reaches 165 F.

1 teaspoon paprika

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Place chicken in a gallon-sized resealable plastic bag. Drizzle vegetable oil over the chicken. Seal the bag and massage the oil into the chicken.
  • Combine paprika, salt, pepper, onion powder, garlic powder, oregano, basil, thyme, and cayenne pepper in a small bowl. Mix until evenly combined. Pour spice mixture into the bag with the chicken. Seal the bag and toss to coat.
  • Transfer drumsticks to the prepared baking sheet, discarding the plastic bag.
  • Bake until chicken is no longer pink at the bone and the juices run clear, about 25 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
  • For extra crispy skin, set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Broil chicken for 5 minutes.

2 teaspoons paprika
2 teaspoons onion powder
1 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 teaspoon cayenne pepper (adjust to taste or add some crushed red pepper for extra heat)
2 teaspoons kosher salt
1/4 teaspoon freshly ground pepper
1 tablespoon honey
1 tablespoon whole grain mustard
2 tablespoons lemon juice (from about 1 lemon)
1/4 cup olive oil
sliced green onions for garnish (optional)

Steps:

  • In a large bowl, combine the paprika, onion powder, thyme, oregano, cayenne, salt, pepper, honey, mustard, and lemon juice. Reserve the juiced lemon. Whisk in the olive oil.

8 chicken thighs, (boneless, skinless)
1/4 cup Cajun seasoning mix
2 tbsp olive oil, (extra virgin)
1 cup quinoa
1 lime
fresh oregano, (for garnish)

Steps:

  • Combine Cajun seasoning mix (my homemade mix is the best!) with olive oil and brush on both sides of the chicken thighs. You can let it marinate for an hour or more, or grill it immediately.
  • Grill over medium-high heat until almost cooked through, then turn and continue cooking on the other side until done. The chicken pieces should reach an internal temperature of at least 165°F. when measured with a meat thermometer. It's sometimes hard to overcook chicken thighs, unlike chicken breasts which can become dry and stringy.
  • Prefer to bake? Just follow the directions in #1 above, then arrange in a baking dish instead of grilling. Roast in the oven at 400° for about 20 minutes or until the thighs have reached an internal temperature of 165°F. when measured with an instant-read thermometer. If they are not ready, continue baking and checking the temperature every 5 minutes.
  • Meanwhile, cook the quinoa. Once cooked, transfer to a serving dish and top with Cajun Chicken Thighs. Garnish with fresh oregano, if desired.
  • Measure 1 cup quinoa into a strainer. Rinse it under cool running water to remove the natural coating, called saponin, that can make quinoa taste soapy. Add the quinoa, zest of 1 lime, 1.5 cups of water and a pinch of salt to the pressure cooker bowl.Close and lock the lid. When it beeps, use the 10-Minute Natural Release method to allow the quinoa to continue cooking in the residual steam and heat. 4 tsp smoked paprika
2 tsp dried thyme
2 tsp dried oregano
1 tsp red chilli flakes
1 tsp garlic salt
1 tbsp olive oil
1 lemon, finely grated lemon zest and juice
4 skinless chicken breasts
4 sweet potatoes, scrubbed and cut into thick wedges
1 tbsp light olive oil
1-2 tbsp sweet smoked paprika
sea salt and freshly ground black pepper

Steps:

  • For the Cajun spice mix, combine all the ingredients for the spice mix plus a pinch of salt and a generous grinding of black pepper. Pour the mixture into a sealable storage box big enough to hold the chicken pieces.
  • For the chicken, put the chicken breasts on a board and cover with baking paper. Bash them with a rolling pin until just under 2cm/¾in thick all over. Put the chicken breasts into the spice mix and thoroughly coat the chicken with the mixture. Refrigerate the chicken breasts for 3-4 hours, or overnight if possible.
  • Preheat the oven to 200C/180C Fan/Gas 6 and remove the chicken from the marinade, shaking off any excess.
  • Toss the sweet potato wedges in a bowl with the oil and sweet smoked paprika, and season well with sea salt and freshly ground black pepper. Spread out on a non-stick baking tray and bake for 20-25 minutes, or until golden-brown and tender, turning halfway through.
  • Meanwhile, heat a non-stick, ridged griddle pan until hot. Arrange the chicken breasts on the pan and cook for 15 minutes, turning once or twice until cooked through (or when the juices run clear when a skewer is inserted into the thickest part). Serve the chicken with the potato wedges.

Cook for 7-8 minutes, or until the skin is well browned, moving the thighs from time to time to make sure they are browning evenly. Do not turn them over though, keep them skin down to get that nice crisp.
  • Transfer the skillet to the oven and continue cooking, skin-side down, for another 10 minutes. Turn them over and continue cooking for 7 minutes longer.
  • To test for doneness, insert a food thermometer into the thickest part of a thigh. The temperature should be 165F.
