CHICKEN IN MUSTARD

Number Of Ingredients 20

1 1/2 to 2 pounds chicken thighs, skin removed
Kosher salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil, divided
1 onion, chopped
1/4 pound white button mushrooms, quartered
3 cloves garlic, minced
1 tomato, chopped
1 tablespoon flour
1 teaspoon dried tarragon
1/2 cup white wine
1 cup chicken stock, plus more if needed
1/4 cup Dijon mustard
2 tablespoons sour cream
Super Buttered Noodles, recipe follows
2 chicken bouillon cubes
1 pound egg noodles
3 tablespoons butter, softened
1 tablespoon sour cream
Chopped fresh parsley, for garnish
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Rinse and dry the chicken thighs and season with salt and pepper.
  • Heat 1 tablespoon olive oil in a Dutch oven over medium-high heat. Brown the thighs on both sides, working in batches if needed. Remove the chicken and set aside.
  • Add the remaining 1 tablespoon olive oil to the Dutch oven and cook the onions until soft, about 5 minutes. Add the mushrooms and continue to cook until the mushrooms have softened, 3 to 5 minutes. Stir in the garlic and cook until fragrant, about 2 minutes. Add the tomatoes and flour and cook, stirring, to remove the raw flour flavor, about 3 minutes. Stir in the tarragon. Turn up the heat and deglaze the pan with the white wine, allowing to bubble for a minute or two. Return the chicken to the Dutch oven. Add enough chicken stock to reach halfway up the sides of the chicken. Cover, place in the oven, and braise for 45 minutes, removing the lid halfway through.
  • When finished, remove the chicken from the Dutch oven and set aside. Add the mustard and sour cream and whisk to blend well. Return the chicken to the pan and allow the flavors to meld before serving, about 5 minutes. Serve over Super Buttered Noodles.
  • In a large pot filled with boiling water, dissolve the bouillon cubes and cook the noodles according to package directions. Drain the noodles in a colander and then nestle the colander into the pot so some of the pasta water goes into the pot as the pasta continues to drain. Remove the colander and stir the butter and sour cream into the pot until the butter melts. Add the parsley and the noodles. Season with salt and pepper. Toss to combine well. Pour into a serving bowl and serve.

4 skinless boneless chicken breast fillets
1 tbsp paprika
1 tsp dried onion flakes
¼ tsp cayenne pepper
2 tsp dried thyme
1 tbsp sunflower oil
200g tub guacamole , to serve

Steps:

  • Dry chicken with kitchen paper, then cut diagonal slashes over the smooth side. Mix spices with seasoning, then tip onto a plate.
  • Brush the chicken on both sides with the oil, then coat all over with the spice mix. Heat a barbecue, griddle pan or grill, then cook the chicken for 5-6 mins on each side until cooked through. Serve each portion with a dollop of guacamole.

1 1/2 cups all-purpose flour
1 cup finely chopped pecans
1 tablespoon dried oregano
2 teaspoons ground cumin
1 teaspoon dried thyme
1/2 teaspoon cayenne pepper
1 teaspoon salt
12 tablespoons light olive oil
2 lbs chicken breasts (boneless, skinless)
1 cup seedless raspberry jam
2 tablespoons Dijon mustard
hot pepper sauce (optional)

Steps:

  • In a shallow dish, combine first 7 ingredients. Place 6 Tbsp oil in a small shallow dish. Dip each chicken piece in the oil, then coat evenly in flour mixture.
  • In a large skillet, heat 3 tablespoons oil over medium heat. Add half the chicken and saute on all sides until browned and no longer pink. Remove from pan and keep warm. Repeat wit remaining oil and chicken.
  • For dipping sauce, combine jam, mustard and hot sauce to taste if desired. Serve chicken bites with sauce.

2 teaspoons ground cayenne pepper
2 teaspoons fresh ground black pepper
1 teaspoon white pepper
2 teaspoons dried thyme, finely crumbled
1 tablespoon garlic powder
1 teaspoon salt
1 1/2 cups apricot preserves
6 tablespoons dijon-style mustard
5 boneless skinless chicken breast halves, cut into bite size pieces
2 tablespoons unsalted butter
2 tablespoons vegetable oil

Steps:

  • Combine all dry ingredients in a small bowl or plastic bag and stir or shake to mix well. Sprinkle chicken pieces with spice rub and let stand for about 30 minutes.
  • To make apricot mustard sauce, combine preserves and mustard in a small saucepan over low heat; stir to mix and heat gently until the preserves melt and are thoroughly blended with the mustard. Set aside to cool.
  • Heat butter and oil in sauté pan or skillet over medium high heat, add chicken pieces and sauté until just done, about 5 minutes. Remove with slotted spoon and drain briefly on paper towel.
  • Serve hot with apricot mustard dipping sauce.

1 lb boneless skinless chicken breast
2 tablespoons cajun seasoning
3 tablespoons honey
3 tablespoons Dijon mustard
1 tablespoon vegetable oil

Steps:

  • Cut chicken into bite-sized cubes.
  • Sprinkle with seasoning mix and toss well.
  • Let stand for 15 minutes.
  • An a small bowl combine honey and mustard.
  • In a large non-stick skillet, heat oil over med-high heat until hot.
  • Add chicken cubes and cook, tossing to keep pieces separate.
  • Brown on all sides, about 4 minutes.
  • If browning too quickly, reduce heat.
  • Cook until done, 2-4 minutes.
  • Pieces should feel firm without any pink in the center.
  • Transfer to serving plate.
  • Provide cocktail forks or toothpicks and serve warm with dipping sauce.

1 teaspoon paprika

Steps:

  • In a bowl, combine dry mustard and flour.
  • Gradually whisk in 1/4 cup cold water.
