- Preheat the oven to 425 degrees F. Fit an 18-by-13-inch rimmed baking sheet with a wire rack.
- To spatchcock the turkey, use a large chef's knife or kitchen shears to cut along both sides of the backbone. Remove the backbone and reserve for stock if desired. Place the turkey breast-side up on a cutting board and use your hands to press the center to break the breastbone and flatten the bird. Use your fingers to gently loosen the skin from the breast and the legs, then place the turkey on the prepared baking sheet.
- To make the Cajun butter, mix together the smoked paprika, garlic powder, onion powder, chili powder, cayenne pepper, dried oregano, dried thyme, salt and black pepper in a medium bowl. Place the butter in another medium bowl and mix in the spice mixture until well combined. Transfer a quarter of the Cajun butter to a small microwave-safe bowl and set aside.
- Rub the turkey with the remaining room temperature Cajun butter under the skin and on top of the skin.
- Roast the turkey until the skin begins to brown, about 35 minutes.
- Microwave the reserved Cajun butter until melted, about 10 seconds. Lower the oven temperature to 350 degrees F, brush the melted Cajun butter over the crispy skin and roast until golden, about 20 minutes. Baste the turkey with the pan drippings and roast, basting once more, until the internal temperature registers 160 degrees F on an instant-read thermometer, about 1 hour.
- Remove the turkey from the oven and let it rest at least 15 minutes. Pour the juices from the baking sheet into a small serving bowl and reserve for drizzling over the bird. Slice the turkey breasts and transfer to a serving platter. Remove the wings, thighs and legs and transfer to the platter. Slice the 1/2 lemon into rounds. Garnish the turkey with the lemon rounds and herb sprigs if desired.

I found this recipe in a magazine several years ago. My kids call it dirty butter sauce because of it's light brown color from the chili powder. They ask for it everytime I serve corn on the cobb. It is absolutely fabulous on any steamed vegetable. I often omit the red pepper to cut down on the heat. It still has just enough pepper for flavor. THE BEST CAJUN BUTTER STEAK RECIPE WITH CAJUN BUTTER PEPPERCORN SAUCE
Steps:
- Make and toast the cajun mix by combining all the spices together and toasting over a low flame until fragrant, 2-3 minutes.
- Rub each steak generously with about 1.5 tablespoons of the cajun mix per steak, then chill in the refrigerator uncovered for one hour.
- While the steaks are chilling, combine the ingredients for the marinade in a container just large enough to fit your steaks. Add the steaks when ready, then cover with extra oil if needed. Marinate for between 6 hours and up to two days - longer is better.
- Heat up a large cast iron skillet with 1 tablespoon of high heat oil (not olive) until it's just about smoking. Add the onion wedges and cook for 2 minutes per side, or until charred. Turn them with a flipper or tongs and cook the other side, then remove and set aside.
- Optionally season your steaks with salt. Add the steaks and cook roughly 3 minutes per side for rare or 4 minutes per side for medium rare. If you are doing these in batches, turn your oven to warming/proofing mode (or just with the light on - no higher than 80ºF) to keep the steaks warm. Let the skillet come back to temp in between steaks.
- If you are making the cajun butter peppercorn sauce, reduce the heat to low and add cognac to the pan. Let reduce while stirring with a wooden spoon or silicone spatula to deglaze, then add butter, cream, cracked peppercorns, and cajun spice mix. The resulting sauce will be a little grainy and not creamy like French peppercorn sauces, but delicious and spicy.

- Preheat oven to 350 degrees. Prepare a baking sheet by lining it with parchment paper. Set aside.
- Place the following ingredients into a pestle and mortar: thyme, onion flakes, garlic flakes, celery seed, and salt. Grind the ingredients together until well broken down. Toss in the cayenne pepper, black pepper, and paprika. Grind those three ingredients into the previously ground ingredients until well incorporated.
- Stir the ground ingredients into the butter until well combined. Set aside.

- Remove the fried wings from the oil and place on the parchment lined baking sheet.
- Once all wings have been fried, toss the still hot wings with the butter mixture.
- Using tongs, place each wing on the parchment lined baking sheet. Bake the wings for 20 minutes. Remove from oven, toss the wings once again in the butter mixture, and bake once again for an additional 10 minutes.

- Preheat the oven to 425 degrees F.
- Combine the butter, wine, celery, bell pepper, onion, Cajun seasoning, brown sugar, hot sauce and salt in a food processor or blender. Process until very smooth. Transfer the mixture to a saucepan and keep warm over low heat.

Continue to bake, basting occasionally, until a meat thermometer reaches 165 degrees F when inserted in the thickest portion of the breast and thigh (avoiding bone), 45 minutes to 1 hour. (Add the chicken stock to the roasting pan if it starts to dry out.) Let rest before slicing. Serve with the pan drippings.
