2 Tablespoons brown sugar
2 tablespoons olive oil
1 Tablespoon whole grain mustard
1 teaspoon cajun seasoning
2 garlic cloves (minced)
2 tablespoons butter
1 pound shrimp (peeled and deveined)
salt and pepper
sliced green onions (for garnish)

Steps:

  • To start, whisk together your sauce. Add the soy sauce, brown sugar, olive oil, mustard, cajun seasoning, and garlic.
  • In a medium-sized skillet over medium high heat add the butter. Add the sauce and whisk and let reduce until the butter is melted about 2 minutes.
  • Salt and pepper the shrimp and add to the sauce. Toss and cook in the sauce 4-5 minutes until the shrimp is opaque.
  • Garnish with chopped green onions

2 skinless, boneless chicken breast halves
2 teaspoons Cajun seasoning

1 red bell pepper, sliced

¼ teaspoon dried basil

Steps:

Everyone knows I love entertaining, but the last thing I want to do on Thanksgiving is wake up early and watch a bird cook all day! I want to be part of the party! That's why my go-to on T-day is a spatchcocked turkey. It cuts down the cooking time by half and takes the fuss and shows it the door!

One 10- to 12-pound turkey
2 tablespoons smoked paprika
2 tablespoons garlic powder
2 tablespoons onion powder
1 tablespoon chili powder
1 teaspoon cayenne pepper
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
2 sticks (1 cup) salted butter, at room temperature
1/2 lemon, for garnish
5 fresh thyme sprigs, for garnish
5 fresh oregano sprigs, for garnish
5 fresh parsley sprigs, for garnish

Steps:

  • Preheat the oven to 425 degrees F. Fit an 18-by-13-inch rimmed baking sheet with a wire rack.
  • To spatchcock the turkey, use a large chef's knife or kitchen shears to cut along both sides of the backbone. Remove the backbone and reserve for stock if desired. Place the turkey breast-side up on a cutting board and use your hands to press the center to break the breastbone and flatten the bird. Use your fingers to gently loosen the skin from the breast and the legs, then place the turkey on the prepared baking sheet.
  • To make the Cajun butter, mix together the smoked paprika, garlic powder, onion powder, chili powder, cayenne pepper, dried oregano, dried thyme, salt and black pepper in a medium bowl. Place the butter in another medium bowl and mix in the spice mixture until well combined. Transfer a quarter of the Cajun butter to a small microwave-safe bowl and set aside.
  • Rub the turkey with the remaining room temperature Cajun butter under the skin and on top of the skin.
  • Roast the turkey until the skin begins to brown, about 35 minutes.
  • Microwave the reserved Cajun butter until melted, about 10 seconds. Lower the oven temperature to 350 degrees F, brush the melted Cajun butter over the crispy skin and roast until golden, about 20 minutes. Baste the turkey with the pan drippings and roast, basting once more, until the internal temperature registers 160 degrees F on an instant-read thermometer, about 1 hour.
  • Remove the turkey from the oven and let it rest at least 15 minutes. Pour the juices from the baking sheet into a small serving bowl and reserve for drizzling over the bird. Slice the turkey breasts and transfer to a serving platter. Remove the wings, thighs and legs and transfer to the platter. Slice the 1/2 lemon into rounds. Garnish the turkey with the lemon rounds and herb sprigs if desired.

It is absolutely fabulous on any steamed vegetable. I often omit the red pepper to cut down on the heat. It still has just enough pepper for flavor. I also use a chicken base flavoring to make my broth.

2 10oz steak of choice (ideally New York Strip)
1 red purple onion (cut into wedges)
2 tsp cayenne pepper
2 tsp chili powder
2 tsp garlic powder
2 tsp ground black pepper
2 tsp ground white pepper
2 tsp onion powder
2 tsp smoked paprika
1 tsp ground cumin
2 cups neutral oil (such as canola, plus extra if needed)
1 medium onion (finely chopped)
1/4 cup vinegar (I used apple cider vinegar)
1 tbsp brown sugar
1 tsp salt
1 tbsp cajun spice mix (from above)
2 tbsp cognac
2 tbsp unsalted butter
2 tbsp heavy cream
1 tbsp cajun spice mix (from above)
1 tbsp freshly cracked black pepper

Steps:

  • Make and toast the cajun mix by combining all the spices together and toasting over a low flame until fragrant, 2-3 minutes.
  • Rub each steak generously with about 1.5 tablespoons of the cajun mix per steak, then chill in the refrigerator uncovered for one hour.
  • While the steaks are chilling, combine the ingredients for the marinade in a container just large enough to fit your steaks. Add the steaks when ready, then cover with extra oil if needed. Marinate for between 6 hours and up to two days - longer is better.
  • Heat up a large cast iron skillet with 1 tablespoon of high heat oil (not olive) until it's just about smoking. Add the onion wedges and cook for 2 minutes per side, or until charred. Turn them with a flipper or tongs and cook the other side, then remove and set aside.
  • Optionally season your steaks with salt. Add the steaks and cook roughly 3 minutes per side for rare or 4 minutes per side for medium rare. Rest the steaks while you make the cajun butter peppercorn sauce. If you are doing these in batches, turn your oven to warming/proofing mode (or just with the light on - no higher than 80ºF) to keep the steaks warm. Let the skillet come back to temp in between steaks.
  • If you are making the cajun butter peppercorn sauce, reduce the heat to low and add cognac to the pan. Let reduce while stirring with a wooden spoon or silicone spatula to deglaze, then add butter, cream, cracked peppercorns, and cajun spice mix. The resulting sauce will be a little grainy and not creamy like French peppercorn sauces, but delicious and spicy.
  • Slice steaks and enjoy immediately.

24 pieces chicken wings, (tips removed and discarded)
1/2 cup butter, (room temperature)
1/4 teaspoon dried thyme
1/4 teaspoon dried onion flakes
1/4 teaspoon dried garlic flakes

1/4 teaspoon cayenne pepper
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon paprika
2 tablespoons parsley, (chopped, for garnish)
vegetable oil for frying

Steps:

  • Preheat oven to 350 degrees. Prepare a baking sheet by lining it with parchment paper. Set aside.
  • Place the following ingredients into a pestle and mortar: thyme, onion flakes, garlic flakes, celery seed, and salt. Grind the ingredients together until well broken down. Toss in the cayenne pepper, black pepper, and paprika. Grind those three ingredients into the previously ground ingredients until well incorporated.
  • Stir the ground ingredients into the butter until well combined. Set aside.
  • Heat enough vegetable oil in a skillet to cover the wings. I used a 12" cast iron skillet filled half way up with vegetable oil. Be sure to heat the oil to optimum chicken-frying temperature. Using a cooking thermometer, try to keep the oil between 350-375 degrees.
  • Once the oil is ready, fry each wing for 3-4 minutes per side; just until they are golden brown and crispy. You will need to fry the wings in batches. Do not overcrowd the frying pan.
  • Remove the fried wings from the oil and place on the parchment lined baking sheet.
  • Once all wings have been fried, toss the still hot wings with the butter mixture.
  • Using tongs, place each wing on the parchment lined baking sheet. Bake the wings for 20 minutes. Remove from oven, toss the wings once again in the butter mixture, and bake once again for an additional 10 minutes.
  • Garnish serve immediately!

500 g (1lb) pasta
500 g (1lb) shrimp / prawns (peeled and deveined )
1 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
1 tsp chilli flakes
2 tsp oregano
2 tbsp Cajun seasoning
2 tbsp butter
2 tsp crushed fresh garlic
1 cup white wine (I used Sauvignon Blanc)
1 cup heavy cream
1-2 tsp fresh lemon juice
salt and pepper (to taste)

Steps:

  • Place a large pot of salted water over medium heat. Bring to the boil then season generously with salt.
  • Once boiling, add the pasta and cook according to package instructions until al dente. Reserve 1 cup of water then drain and set aside.
  • Place the peeled and deveined shrimp in a large bowl then add the olive oil, crushed garlic, half of the seasonings and a generous pinch of salt.
  • Stir to coat the shrimp in the spices.
  • Heat a large skillet or pan over medium-high heat. Sear the shrimp for a minute per side until they are golden brown and just cooked.
  • Remove and set aside.
  • In the same pan, melt the butter and add the garlic. Cook for 30 seconds then add the remaining spices.
  • Cook for another 30 seconds then pour in the white wine. Allow the pan to deglaze and the wine to reduce by half.
  • Pour in the cream and season with salt and pepper. Allow the cream to simmer for 5 minutes or until the sauce coats the back of a spoon.
  • Taste and adjust seasoning if necessary.
  • Add the shrimp back to the pan with a squeeze of fresh lemon. Allow the shrimp to heat through.
  • Toss the creamy sauce and shrimp with cooked pasta of your choice and a splash of the reserved pasta water and serve scattered with fresh parsley and oregano (optional).

Steps:

  • Preheat the oven to 425 degrees F.
  • Combine the butter, wine, celery, bell pepper, onion, Cajun seasoning, brown sugar, hot sauce and salt in a food processor or blender. Process until very smooth. Transfer the mixture to a saucepan and keep warm over low heat.
  • Remove the giblets and neck from the turkey and save for stock or discard. Place the turkey breast-side down on a cutting board. Cut along one side of the backbone from the tail to the neck with a chef's knife or kitchen shears. Repeat with the other side and remove the backbone. (Save for stock!)
  • Turn the turkey over, and press down on the breastbone with the heel of your hand until it cracks. Tuck the wing tips up and over the back of the turkey. (This prevents them from burning.) Place the turkey on a wire rack in a roasting pan.
  • Fill a flavor injector with the butter mixture and inject as much of the butter into the turkey at different angles. Pour any remaining butter over the top of the turkey, then sprinkle with additional Cajun seasoning, if desired. Place the roasting pan on the middle rack in the oven and bake for 30 minutes, undisturbed.
  • Baste the turkey with the pan juices and reduce the oven temperature to 350 degrees F. Continue to bake, basting occasionally, until a meat thermometer reaches 165 degrees F when inserted in the thickest portion of the breast and thigh (avoiding bone), 45 minutes to 1 hour. (Add the chicken stock to the roasting pan if it starts to dry out.) Let rest before slicing. Serve with the pan drippings.

1 large yellow onion ((or white onion, chopped))
8 cloves garlic ((diced, sliced, or smashed))
2 Tbsp old bay seasoning
2 Tbsp Cajun seasoning
4 whole bay leaves
1 large lemon ((juiced))
1 tsp each, salt & pepper ((to taste))
16 cups water
1 1/2 lbs Yukon Gold potatoes ((yellow or white potato - whole, halved, or quartered))
4 ears sweet corn ((quartered))
14 oz smoked sausage ((one package, sliced))
24 oz crawfish ((whole))
24 oz gulf shrimp ((whole))
1/2 cup butter ((1 stick unsalted butter))
1/2 large yellow onion ((diced))
1 Tbsp garlic ((minced))
1/2 large lemon ((juice and zest))
1 Tbsp Cajun seasoning ((to taste))

Steps:

  • In a large stockpot, warm the butter over medium heat until melted. Add chopped onion and saute for 2-3 minutes, or until just beginning to turn translucent.
  • Add in the garlic, old bay seasoning, Cajun seasoning, bay leaves, lemon juice, salt and pepper, and water. Stir to mix and bring to boil over medium-high heat.
  • Once your water is boiling, add the potatoes (leave whole if small, halve or quarter to have evenly sized potatoes) and cook covered for about 10 minutes or until starting to get tender. *Reduce heat if necessary to prevent boiling over.
  • Add the corn and smoked sausage, cover, and cook for an additional 5 minutes. Then add the crawfish and shrimp, return the cover and turn off the heat. Let the pot sit undisturbed for 5 minutes while you make the garlic butter sauce.
  • Bring a skillet to medium heat, add the butter and melt. Add diced onion and saute for 2-3 minutes, then add the garlic and continue sauteing for an additional minute.
  • Add the Cajun seasoning along with lemon juice and zest, then stir to incorporate. Serve on the side, or toss the drained seafood boil in the lemony garlic butter sauce.

3 Salmon Fillets
1 tbsp Olive Oil (divided)
2 tsp Cajun (or creole seasoning)
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Smoked Paprika (or regular paprika)
1 tsp Dried Parsley Flakes
1/2 tsp Salt (more or less to taste)
1/4 tsp Black Pepper
4 tbsp Butter (softened or room temperature)
3 tbsp Honey
Fresh Parsley (or cilantro for garnish, as desired)

Steps:

  • Preheat oven to 400°F (200°C). Then in a small bowl, combine all the dry seasonings - dried parsley flakes, garlic powder, onion powder, smoked paprika or paprika, cajun seasoning, black pepper, and salt and set aside.
  • In another bowl, combine butter and honey, mix until well combined, set aside.
  • Pat dry salmon, then add a drizzle with olive oil on each fillet. Season both sides of salmon generously with dry seasoning, a add a squeeze of fresh lemon juice.
  • Add a drizzle of olive oil to skillet or oven safe dish and place salmon fillets in the pan with a dollop of honey butter on each - do not overcrowd your pan. Set aside remainder of honey butter.
  • Depending on the thickness of your salmon, bake for 10 -15 minutes or until flaky and internal temp reads 145°F. When salmon near done, around the 7-8 minute mark, add remainder of honey butter to the skillet.
  • Remove from oven when done, spoon the sauce overtop of salmon, garnish with fresh parsley or cilantro and serve.
