CAERPHILLY AND TOMATO SALAD
Caerphilly wasoriginally a Welsh cheese, but is now made mostly in the West Country. It is a mild soft cheese. Here it is paired with vine-ripened tomatoes and fresh herbs. Pretty and tasty. From "The Great British Kitchen" published by The British Food Trust.

Steps:
- Slice cheese (do not worry if it crumbles a bit) and tomatoes; arrange on individual plates.
- Whisk together oil, yogurt, mustard, herbs; season with salt and pepper.
- Spoon yogurt dressing over cheese and tomatoes; garnish with additional fresh herbs.

- Chop enough cilantro to measure 1 Tbsp.; reserve for later use. Blend dressing, garlic and remaining cilantro in blender until smooth.
- Combine cherry tomatoes, tomatillos and onions in medium bowl. Add 1/2 cup dressing mixture; mix lightly.
- Arrange tomato slices on large platter; drizzle with remaining dressing mixture. Top with basil, cherry tomato mixture, cheese and reserved chopped cilantro.

CHERRY TOMATO CAESAR SALAD
Whether the tomatoes deserve it or not, I make some version of a tomato Caesar salad every summer. Here, I inverted the usual proportions of lettuce to tomatoes, favoring the tomatoes. It was the juiciest of Caesars, and pretty, too, dotted with anchovies and curls of Parmesan.

Steps:
- In a small bowl, whisk together garlic, salt, lemon juice and Worcestershire. Whisk in olive oil.
- Spread lettuce on a platter and drizzle with dressing. Scatter tomatoes and anchovies over lettuce and drizzle with more dressing. Using a vegetable peeler or coarse grater, grate or shave cheese over the salad. Drizzle dressing over the plate and finish with pepper.
