This is a recipe from my grandmother. There isn't much difference in pico de gallo recipes but this one adds a great flavor when you add the cactus. The cactus can be located in the mexican food isle. My friends really enjoy the recipe. I hope you enjoy.

Number Of Ingredients 5

4 ripe tomatoes, finely chopped
1/2 small white onion, finely chopped
1/2 cup cilantro leaf, chopped (or more to taste!)
2 jalapeno peppers, seeded and finely chopped (to taste)
3 -4 stalks cactus pieces

Steps:

  • Mix all together.
  • add salt and garlic salt to taste.

a salsa made with cooked cactus and other fresh ingredients and mexican cheese. This can be used as a dip or over foods as a salsa. My mother fixed this when we we were growing up, I guess because we had cactus growing in our yard and she had to find ways to use the cactus. Cactus is very delicious and can be used in several dishes

1 (24 ounce) jar cactus pieces
2 large tomatoes
1 medium yellow onion
2 jalapenos (depends on your taste)
2 tablespoons fresh cilantro
1/4 lb queso fresco (mexican cheese)
1/4 cup lemon juice
1/4 teaspoon salt
1 teaspoon fresh garlic

Steps:

  • Rinse cactus well under cold water. Cut the already sliced cactus into small pieces. The cactus also has a serrano in the jar, mince that also.
  • Dice tomatoes, onion, jalapenos (I leave the seeds in, but you can take seeds out) and cilantro. In a large bowl mix all ingredients together, add minced garlic and salt to taste. Crumble Queso Fresco into the mix and add lemon juice. You may want to add a little lemon juice at a time and mix and taste until it is to your liking.

This is an uncooked tomato salsa (salsa fresca) that's great to make while fresh tomatoes are in season. Stir pico de gallo into chopped/mashed avocadoes to make guacamole (see my recipe #112059), or serve as is with warm tortilla chips and Tex-Mex food (tacos, enchiladas, quesadillas, burritos, chiles rellenos). 1/2 lb fresh tomato, diced
1 green bell pepper, diced
1/3 cup fresh cilantro, chopped
1/4 cup white onion, finely chopped
2 jalapeno chiles, finely chopped
2 tablespoons fresh lime juice
1/4 teaspoon salt
1/4 teaspoon fresh minced Mexican oregano (optional) or 1/4 teaspoon marjoram (optional)

Steps:

  • Combine in a bowl. Refrigerate until chilled. Makes 2 1/4 cups.
  • Note: Time does not include chill time.

4 tomatoes , chopped
1 red onion , finely chopped
1 tbsp jalapeño peppers from a jar, drained and finely chopped
2 garlic cloves , crushed
small bunch coriander , roughly chopped
juice 1 lime

Steps:

  • Stir all the ingredients together in a medium bowl with some seasoning then put it into the fridge to chill. You could do this the day before. About 20 mins before you are ready to eat, take the salad out and bring it back to room temperature.
