SAUTéED CABBAGE
Sautéed cabbage is an easy, DELICIOUS vegetable side that's healthy and goes with so many dishes! Vinegar is the secret ingredient to making it taste great.

Steps:
- Cut the cabbage in half from its top down through its core. Place the cut-side down on your cutting board, then slice it as thinly as possible around the core so that you have fine ribbons. Discard the core.
- Heat a large saute pan or similar heavy-bottomed pot over medium-high heat. Add olive oil and butter. Once the butter is melted, add the cabbage, salt, and pepper. Saute for 10 to 15 minutes, stirring occasionally, until the cabbage is tender and begins to brown. Don't feel like you need to constantly stir it. Leaving cabbage undisturbed for a minute or two as you go is what will allow it to develop brown caramelized bits (aka FLAVOR).
- Remove from the heat and stir in the apple cider vinegar. Taste and add a bit of additional salt and pepper if you like, or a splash more vinegar if you'd like to add more zippy and acidic flavors. Sprinkle with thyme. Serve warm.

I love cabbage and you will too when you try this! Chopped cabbage cooked until tender in butter with a sprinkling of hazelnuts. Yummy! This goes with just about anything. - **In order to roast and peel the hazelnuts, preheat the oven to 400°F and place the nuts on a baking sheet. Roast until skins are dark brown, and cracked, and nuts are fragrant and golden brown, about 10 minutes. Remove from oven, and place hazelnuts in a kitchen towel, cover, and rub the skins off the nuts. It is fine if the skins don't come off completely. Roughly chop the nuts, and reserve.
- In a large skillet, over medium-high heat, heat olive oil. When hot, toss in the cabbage, coating well in the oil. Season with salt and pepper. Sauté until cabbage is beginning to wilt and color, about 5 minutes. Add water; turn heat to medium, and cover, steaming until pan is almost dry.
- Meanwhile, brown the butter: add butter to a small stainless steel saucepan, over medium heat. Let cook, swirling occasionally, until butter begins to turn golden brown, about 3 minutes. When butter begins to turn, immediately remove from heat.
- Pour browned butter, and hazelnuts over the cabbage, tossing well to combine. Taste for seasoning, and serve.

- Heat 3 tablespoons butter in a large pot over medium-low heat until mostly melted. Add cabbage. Place remaining 1 tablespoon butter on top of the cabbage. Cover and cook until cabbage is tender, about 10 minutes. Uncover and stir cabbage to coat evenly with butter. Remove from heat and let stand, covered, about 3 minutes. Season with black pepper.

- Heat the oven to 200C/180C fan/gas 6 or heat a barbecue until the flames die down and the coals turn glowing white. Remove any bruised leaves from the cabbage and cut into four to six wedges, keeping the core intact so the leaves stay together. Drizzle 1 tbsp of the oil over the wedges and massage into the leaves. Sprinkle over a pinch of sea salt.
- If you're not using the barbecue, heat a heavy frying pan until hot, but not smoking. Sear the wedges, cut-side down, for 6-8 mins until blackened and charred, then turn over and cook on the other side for another 6-8 mins until they get a really good dark brown crust. Transfer to a baking tray, cut-side up, and roast for 10-15 mins until the stalks are tender when pierced with a knife, or transfer to a cooler place on the barbecue and cook until the stalks are tender.
- Meanwhile, heat the remaining oil in the pan, or in a small frying pan. Fry the chilli and hazelnuts for 2-3 mins until the hazelnuts smell nutty and the chilli softens. Add the butter, and stir for a few mins to coat. Stir in the parsley with some seasoning, then pour over the cabbage wedges on a serving plate.
