1/2 cup butter
1/2 cup Crisco
1 teaspoon vanilla

Steps:

  • Heat milk in a pan and thicken with the flour.
  • Beat in the cup of powdered sugar.
  • Beat the last 3 ingredients until consistency of whipped cream.
  • Add milk and beat again til right consistency.
  • Refrigerate frosting until cool.
  • Cake should be refrigerated!

Nonstick baking spray
2 1/2 cups cake flour
1 teaspoon salt
1 cup buttermilk
1 teaspoon vanilla extract
1 teaspoon baking soda
2 whole eggs
1 1/2 teaspoons vinegar
1 1/2 teaspoons cocoa powder
1 1/2 fluid ounces red food coloring
1 cup shortening
1 3/4 cup granulated sugar
1 cup whole milk
5 tablespoons all-purpose flour
1 teaspoon vanilla extract
2 sticks unsalted butter
1 cup granulated sugar
2 cups raspberries

Steps:

  • Preheat the oven to 350 degrees F. Thoroughly spray a large (18-by-12-inch) sheet cake pan (or you can use a slightly smaller jelly roll pan) with nonstick baking spray. Be sure to get in all the corners of the pan.
  • Sift together the cake flour and salt. Set aside. In a separate bowl, stir together the buttermilk, vanilla, baking soda and eggs. Add the vinegar and stir. Set aside.
  • In a separate small bowl, mix together the cocoa and red food coloring. Set aside. Cream together the shortening and sugar until fluffy. Alternate adding the flour mixture and the buttermilk/egg mixture until all combined. Pour in the red mixture and beat until combined.
  • Pour the batter into the prepared sheet cake pan. Use a large offset spatula or knife to even out the surface. Bake for 20 minutes.
  • Remove the pan from the oven and allow the cake to cool in the pan for 20 minutes.
  • Place a large cutting board on top of the cake pan, then invert the cake, allowing it to turn out onto the cutting board. Allow the cake to cool completely before icing.
  • Combine the milk and flour in a saucepan over medium heat and whisk constantly until thick. Remove from the heat and let cool to room temperature. Add the vanilla once cooled.
  • In the bowl of a stand mixer with the paddle attachment, cream the butter and sugar until light and fluffy. Add the cooled milk mixture and beat very well. It may look separated, which means you have to keep beating until fully combined. It should be fluffy and light, similar to whipped cream.
  • Ice the cake and top with raspberries.

Don't be afraid of the deep red color-there is more than a hint of chocolate flavor in this fun and very tasty cake to serve anytime, but especially at Valentine's Day and Christmas. I have also made it into cupcakes for the kiddies to take to school and share. The frosting is buttery and not-too sweet. This is a traditional cake from Chicago to the deep south. Back East you will even find cake mixes for an easy version of "Red Velvet Cake". I tried several versions of this cake and favored this adaptation of Gale Gand's from her "Just a Bite" cookbook

1 cup butter
1 1/2 cups sugar
2 eggs
1/4 cup red food coloring
2 tablespoons cocoa
2 1/2 cups cake flour
1 teaspoon salt
1 teaspoon baking soda
1 cup buttermilk
1 teaspoon vanilla extract
1 tablespoon white wine vinegar
1 cup milk
2 tablespoons flour
1 cup unsalted butter
1 cup confectioners' sugar
1 teaspoon vanilla

Steps:

  • Preheat oven to 350 degrees.
  • Grease and flour three 8-inch round cake pans.
  • Cream together butter and sugar with electric mixer until fluffy.
  • Add the eggs, one at a time and beat well after each.
  • Make a paste with the food coloring and cocoa.
  • (It takes a few minutes to get the chocolate to absorb liquid--be patient and keep stirring).
  • Add this paste to the butter/sugar mixture.
  • Sift together the flour, salt and baking soda.
  • Add it to the sugar/butter mixture alternately with the buttermilk, mixing well between additions.
  • (Begin and end with dry ingredients).
  • After last addition of flour mixture, stir in vanilla and vinegar.
  • Beat for another minute and then divide into 3 prepared pans.
  • Bake for about 35 minutes, or until done.
  • Cool for 10 minutes and then remove from pan to wire rack to cool completely.
  • To make icing: Mix flour and milk in small pan and cook over low heat until it is thick (stirring often--constantly near end).
  • This will take about 10 minute.
  • Remove from heat and allow to cool completely.
  • Meanwhile, cream together the butter, sugar and vanilla.
  • Beat until it is very light and fluffy, about 10 minutes.
  • When the flour mixture is cooled, add it to the butter mixture and beat until just mixed.
  • Assemble the cake with a thin layer of icing between the layers and cover the top and sides of cake.

1 ½ teaspoons vanilla extract

7 drops red food coloring

Steps:

  • Beat butter in a large bowl until fluffy. Gradually add 3 cups of the sifted confectioners' sugar, beating well. Slowly beat in the vanilla, salt, and 1/3 cup of the milk. Gradually beat in the 3 remaining cups of confectioner's sugar. Beat in additional milk (1 to 2 tablespoons) if needed, to make frosting of spreading consistency. If desired tint the frosting pink with 6 to 8 drops of red food coloring.
