1/2 cup sugar
1/2 cup honey
1/2 cup crunchy peanut butter
1/2 teaspoon pure vanilla extract
10 cups popped popcorn
Salt, optional
6 ounces semisweet chocolate, melted
6 ounces white chocolate, melted
1 cup salted pretzels, crushed

Steps:

  • Mix the sugar and honey in a small saucepan and bring to a boil. Let simmer for 2 minutes. Remove from the heat and mix in the crunchy peanut butter. Continue to stir until the peanut butter is smooth, and then add the vanilla.
  • In a large mixing bowl, add the popped popcorn. If desired, lightly salt the popcorn. Pour the warm peanut butter mixture over the popcorn and stir with a long-handled wooden spoon until completely coated.
  • On a baking sheet lined with wax paper, pour the coated popcorn and distribute evenly. Drizzle with the melted semisweet chocolate, and then drizzle with the white chocolate. Sprinkle the crushed pretzels over the warm popcorn. Allow the chocolate to set about 20 minutes (or speed up the process by placing the baking sheet in the refrigerator). Once the popcorn is set, serve in a large serving bowl. Store tightly covered.

1 tablespoon unsalted butter, plus more for the baking sheet
1 1/2 cups sugar
3/4 cup dark corn syrup
3 cups roasted salted cashews, 1 cup chopped
2 teaspoons baking soda
2 teaspoons Chinese five-spice powder
One 11-ounce bag white chocolate chips
1 tablespoon torn dried arbol chiles (from about 5 chiles)
1 tablespoon Sichuan peppercorns

Steps:

  • Butter a baking sheet and set aside. Bring the sugar, dark corn syrup and 1 cup water to a boil in a medium saucepan over medium heat, stirring occasionally. Cook until a candy thermometer registers 260 degrees F. Stir in the butter and all the cashews and continue to cook until the cashews are well coated and not clumpy, about 3 minutes. Stir in the baking soda and five-spice powder. Pour onto the prepared baking sheet and spread into a thin, even layer. Let cool for 15 minutes, then top with the white chocolate and let sit until the chips are soft and spreadable. Spread into a smooth layer.
  • Put the chiles and peppercorns into a small skillet over medium heat and toast until fragrant, about 2 minutes. Sprinkle evenly over the white chocolate and let set completely, about 3 hours, then break into pieces.

PANCETTA AND PARM POPCORN

1 pound thickly sliced pancetta (1/4 inch), diced
3/4 cup popcorn kernels
Kosher salt
1 tablespoon packed light brown sugar
2 tablespoons unsalted butter, melted
1 cup shredded parmesan cheese

Steps:

  • Place the pancetta in a cold, large, heavy-bottomed soup pot. Bring to medium heat and slowly cook the pancetta, stirring occasionally and making sure it does not burn, until very crispy. Remove the pancetta with a slotted spoon and set aside to drain on paper towels, reserving the fat in the pot.
  • Add 3 test kernels to the pot and cover. Once they pop, add the rest of the kernels and partially cover to let out steam. Once the kernels start popping aggressively, shake the pot to keep things moving. Once the popping frequency slows down, take the pot off the heat.
  • Blend 1 tablespoon salt and the brown sugar in a mini food processor to create a popcorn dust. Add the melted butter to the popcorn and stir, then add the pancetta, cheese and a couple pinches of the popcorn dust to taste. Shake vigorously to mix.

2 (3.5 ounce) packages plain microwave popcorn
17 ounces white chocolate chips
1 tablespoon butter

Steps:

  • Pop 1 popcorn package at a time in the microwave on high until popping begins to slow down, about 2 1/2 minutes. Open bags carefully and transfer popcorn to a large plastic bag, discarding any burnt pieces or unpopped kernels.
  • Melt white chocolate chips with butter in top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula, until mixture is creamy, about 5 minutes.
  • Drizzle melted chocolate over popcorn. Close bag and shake until thoroughly coated, 3 to 4 minutes. Place in the refrigerator to cool, about 1 hour.

Steps:

  • Line 2 12-muffin muffin pans by placing a sheet of plastic wrap over the pan and pushing down into the cups slightly.
  • Over barely simmering water melt the chopped chocolate, stirring occasionally. Remove from the heat and carefully stir in the popcorn carefully to coat it evenly with melted chocolate. Working quickly, take off large spoonfuls of coated popcorn and form into a loose ball the size of a golf ball. Place it in the cup of the lined muffin pans to rest and sprinkle with the colored sprinkles. Insert a lollipop stick in the bottom and let it set up. To hasten the set-up, place them in the refrigerator. These can be wrapped in colored cellophane with twisted ends. Store at room temperature.

2 cups white chocolate chips
1 tablespoon coconut oil
4 cups popped popcorn
Smoked sea salt, for sprinkling
4 cups heavy cream
1 tablespoon instant espresso powder
1 tablespoon vanilla bean paste
6 large egg yolks
1 cup sugar
8 cups hot water
1 cup heavy cream
1 tablespoon freshly cracked toasted pink peppercorns

Steps:

  • Preheat the oven to 325 degrees F.
  • For the white chocolate popcorn: Set up a double boiler. Add the white chocolate and stir to melt. Whisk in the coconut oil, then set aside to cool.
  • Place the popped popcorn onto a sheet pan lined with a silicone mat. Pour the white chocolate evenly over the popcorn and sprinkle with smoked sea salt. Place into the freezer to chill for at least 10 minutes, or until the chocolate is set. Remove from the freezer and break into pieces.
  • For the butterscotch crème brûlée: In a medium saucepan, add in the heavy cream, instant espresso powder and vanilla bean paste. Bring to a light simmer for 15 minutes. Take off the heat and cool for 15 minutes.
  • In a non-reactive bowl, whisk together the egg yolks and 1/2 cup of the sugar until combined and lighter in color. Slowly add in the heated cream mixture, whisking constantly. Pour the mixture into twelve 8-ounce ramekins. Place the ramekins into a large roasting pan and fill the roasting pan with the hot water, making sure not to get the crème wet. Bake until the crème is set and just a teensy bit jiggly, 40 minutes. Place into the fridge for at least 2 hours to cool. If storing longer (up to 2 days) tightly wrap each ramekin to ensure freshness.
  • Take the crème out of the fridge for at least 30 minutes before serving. Evenly top the ramekins with the remaining 1/2 cup sugar. Using a brûlée torch, melt the sugar until it bubbles and turns dark golden brown. This will form a crispy top that will only get crispier for the next 5 minutes, so be sure to wait a couple more.
  • For the pink peppercorn whipped cream: Whip the cream with a hand mixer until soft peaks form. Stir in the pink peppercorns.
  • Serve immediately topped with the pink peppercorn whipped cream and white chocolate sea salt popcorn.
