1 cup packed light brown sugar
4 tablespoons heavy cream
3 tablespoons unsalted butter
2 cups milk
3 tablespoons cornstarch
3 large eggs, separated
1/2 teaspoon vanilla extract
Pinch of salt
1/4 cup granulated sugar
One 9-inch pie crust, homemade or purchased, prebaked as directed

Steps:

  • Preheat the oven to 350 degrees F.
  • In a medium saucepan, stir together the brown sugar, heavy cream and butter. Cook over medium heat until the sugar dissolves and the mixture comes to a full boil, becoming thick and brown, about 5 minutes. Remove from the heat. Reserve 1 tablespoon of the milk. Slowly add the remaining milk to the sugar mixture.
  • Whisk together the cornstarch, egg yolks, vanilla and reserved 1 tablespoon of milk in a medium bowl. Add the cornstarch mixture to the sugar mixture over medium-low heat and cook, stirring constantly, until thick, about 3 minutes. Pour the filling into the prebaked pie crust.
  • Make a meringue by beating the egg whites and a pinch of salt with an electric mixer until they begin to set stiff. Add the granulated sugar and continue beating until the whites are stiff and hold peaks. Spread the meringue on top of the pie, taking care to spread it to the edges of the crust. Bake until light brown, about 10 minutes.

I first combined pecans and butterscotch in these blondies because they were my mom-mom's favorite flavors. When she loved them, they became a family favorite and I baked them for her every chance I got. They are fantastic when sliced warm and topped with ice cream. They also make the perfect addition to a friendly care package.

Nonstick cooking spray
14 tablespoons unsalted butter
1 1/2 cups packed light brown sugar
1 teaspoon fine salt
1/2 teaspoon baking powder
1 tablespoon pure vanilla extract
1 large egg, plus 1 large egg yolk
1 2/3 cups all-purpose flour
1/2 cup butterscotch chips
1 cup chopped toasted pecans

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9-inch square baking pan with nonstick cooking spray, line it with parchment paper, then spray the parchment. Set aside.
  • Place the butter in a medium saucepan and cook over medium-high heat, stirring occasionally, until deep golden, 3 to 5 minutes. Immediately pour into a medium heatproof bowl. Add the brown sugar, salt and baking powder. Whisk to combine. Whisk in the vanilla, whole egg and yolk until smooth.
  • Add the flour to the wet ingredients and stir with a rubber spatula until nearly combined. Reserve about 2 tablespoons each of the butterscotch chips and pecans, then stir the rest into the batter until evenly combined.
  • Spread the batter into the prepared pan. Sprinkle the reserved pecans and butterscotch chips evenly over the top then press into the top of the batter.
  • Bake until golden and a toothpick inserted near the center comes out with a few moist crumbs, 32 to 34 minutes. Let cool in the pan then cut into 16 squares.

  • 1. In large bowl beat milk and pudding mix with wire whisk for 1 minute. Whisk in half of whipped topping. 2. Reserve 1/3 cup of Keebler® Pecan Sandies™ cookies. Stir remaining cookies into pudding mixture. Spread in crust. 3. Top with remaining whipped topping. Sprinkle with remaining Keebler® Pecan Sandies™ cookies. Refrigerate at least 3 hours or until set. Store in refrigerator.

3/4 cup chopped pecans, divided
1 package (8 ounces) cream cheese, softened
1 cup confectioners' sugar

3-1/2 cups cold 2% milk
2 packages (3.4 or 3.5 ounces each) instant butterscotch or vanilla pudding mix

Steps:

  • Preheat oven to 350°. In a small bowl, cut the butter into the flour until crumbly; stir in 1/2 cup pecans. Press into an ungreased 13x9-in. baking dish. Bake until lightly browned, 20 minutes. Cool., In a small bowl, beat cream cheese and sugar until fluffy. Fold in 1 cup whipped topping; spread over crust. , In a large bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set; pour over cream cheese layer. Refrigerate until set, 15-20 minutes. Top with remaining whipped topping and pecans. Refrigerate for 1-2 hours.

¾ cup pecans
1 cup butter
¾ cup white sugar
1 large egg yolk
1 teaspoon vanilla extract
¼ teaspoon salt
1 ¾ cups all-purpose flour

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Spread pecans out on a baking sheet.
  • Bake pecans in the preheated oven until fragrant and lightly toasted, 5 to 10 minutes. Cool completely and chop in a food processor.
  • Beat butter in a large bowl with an electric mixer until creamy. Add sugar and beat until light and fluffy; beat in egg yolk, vanilla extract, and salt. Slowly mix pecans into butter mixture. Stir flour into pecan mixture until dough begins to come together.
  • Roll the dough into a ball and divide it in half. Roll each dough half into a 1 1/2-inch thick log. Wrap each log in wax paper and refrigerate, 4 hours to overnight.

1 single crust deep dish pie shell, partially prebaked (9 1/2 inch deep-dish)
1 cup light corn syrup
1/2 cup firmly packed dark brown sugar
1/4 cup unsalted butter, cut into pieces
3/4 cup butterscotch chips
1 pinch salt (a generous pinch)
3 large eggs
1 large egg yolk
1 1/2 teaspoons vanilla extract
2 cups coarsely chopped pecans

Steps:

  • Preheat oven to 350°.
  • Gently warm the corn syrup, brown sugar, and butter together in a saucepan until the butter melts.
  • Turn off the heat and add the butterscotch chips.
  • Scatter them around rather than dumping them in one spot; set the pan aside for 5 minutes, shaking it once or twice to move hot liquid over the chips.
  • After 5 minutes, add the salt and whisk to smooth.
  • Pour the mixture into a large bowl and let cool for 5 minutes.
  • In a bowl, whisk the eggs and egg yolk together just until frothy.
  • Whisk in the vanilla; whisk a little less than half of the hot liquid into the eggs until smooth.
  • Add the rest of the hot liquid and whisk until smooth.
  • Add in the pecans and stir well; turn the filling into the cooled pie shell.

  • Serve slightly warm or at room temperature; or let cool thoroughly; cover with loosely tented foil; refrigerate for several hours before serving.
