Steps:

  • Preheat oven to 425 degrees F.
  • Combine all ingredients in 1-1/2-quart baking dish. Cover and bake 30 minutes. Remove cover and bake an additional 15 minutes or until squash is tender.

Nonstick cooking spray, for the baking dish
1/4 cup all-purpose flour
2 tablespoons light brown sugar
Pinch kosher salt
1/4 cup (4 tablespoons) unsalted butter, cut into cubes and kept cold
1/4 cup rolled oats
1 pound butternut squash, cut into 3/4-inch chunks
2 apples, cut into 1-inch chunks
1/4 cup dried cranberries
1/2 cup granulated sugar
3 teaspoons cornstarch
2 teaspoons pumpkin pie spice
Pinch kosher salt

Steps:

  • For the crisp: Preheat the oven to 400 degrees F. Spray an 8-inch square baking dish with nonstick cooking spray.
  • Mix the flour, brown sugar and salt in a bowl. Use a pastry blender, two knives, or a food processor to cut in the butter until the size of peas. Add the oats and combine, taking care to not break up the oats too much. Set aside.
  • For the filling: In a bowl, combine the squash, apples and cranberries and toss with the granulated sugar, cornstarch, pumpkin pie spice and salt. Transfer to the prepared baking dish. Top with the crisp mixture. Bake until the top is golden brown and crispy, 50 to 55 minutes.

4 cups water
1 can (21 ounces) apple pie filling
3/4 cup whole-berry cranberry sauce
2 tablespoons orange marmalade
2 tablespoons apricot preserves

Steps:

  • In a large saucepan, combine squash and water; bring to a boil. Reduce heat; cove and simmer until squash is tender, about 25 minutes. drain. Spread the pie filling in a greased 8-in. square baking dish. Top with squash. Combine cranberry sauce, marmalade and preserves; spoon over squash. Bake, uncovered, at 350° for 25 minutes or until heated through.

5 lbs butternut squash
4 apples
1 1/2 cups pineapple tidbits (canned)
2 tablespoons apple cider
2 tablespoons orange marmalade
1/2 cup butter, melted (may use margarine)
1/2 cup brown sugar, packed
2 tablespoons flour
1 teaspoon salt
1 1/2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 cup dried cranberries (optional)

Steps:

  • Cut squash in half and remove seeds, soft pulp, and fibers. Then peel the squash and place it cut side down on a cutting board. Cut in half length-wise and then cut into into 1/2-inch slices.
  • Peel and core the apples; cut in 1/2-inch slices.
  • Combine the cider, marmalade, melted butter, sugar, flour, salt and spice.
  • Layer half of the butternut squash in the bottom of the crockpot; top with one half of the apple slices, one half of the pineapple and half of the sugar and spice mixture. Repeat layers.
  • Cover and cook on HIGH for 1 hour, then switch to LOW and cook 4 hours longer, or until butternut squash is tender. Add in the cranberries, give it a stir, and turn off the crockpot to let it cool for about 45 minutes.
  • Serve with a dollop of whipped cream and some chopped walnuts if you like.

1 lb butternut squash, cubed
1 medium baking apple, peeled, cored and cubed
3 tablespoons butter, melted
3 tablespoons honey
1/4 cup pecans, finely chopped
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 400 degrees. Place cubed squash and apple in an 8'x8' baking dish. Add 2 tablespoons water and roast uncovered, stirring occasionally for 20 minutes, or until almost cooked through.
  • Meanwhile, in a small bowl, combine butter, honey, pecans, nutmeg, and cinnamon.
  • Remove squash from oven, and pour honey mixture over squash. Stir lightly to coat.

3/4 cup dried currants
Freshly grated nutmeg
3/4 cup pure maple syrup
1/4 cup (1/2 stick) butter, cut into pieces
1 1/2 tablespoons fresh lemon juice

Steps:

  • Preheat oven to 350°F. Cook squash in large pot of boiling salted water until almost tender, about 3 minutes. Drain well. Combine squash, apples and currants in 13x9x2-inch glass baking dish. Season generously with nutmeg, salt and pepper. Combine maple syrup, butter and lemon juice in heavy small saucepan. Whisk over low heat until butter melts. Pour syrup over squash mixture and toss to coat evenly.
  • Bake until squash and apples are very tender, stirring occasionally, about 1 hour. Cool 5 minutes. (Can be made 1 day ahead. Cover with foil; chill. Rewarm covered in 350°F. oven about 30 minutes.)

Butternut or acorn squash are great for this recipe. I searched Zaar for a similar recipe but could not find one so decided to post this one. This is a tasty and attractive way to serve squash. Especially lovely on your holiday table. If you wish peel the squash and cut it into bite size pieces, place all the ingredients into a casserole dish, mix well, cover casserole & bake at 375 for apprx 1 hour

2 acorn squash, cut in half and seeded
4 tablespoons butter or 4 tablespoons margarine
1 1/4 cups of fresh apples, peeled, cored, cut into 3/4-inch pieces
1/2 cup dried cranberries
2 tablespoons brown sugar or 2 tablespoons brown sugar substitute
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg

Steps:

  • Cut a small slice from the bottom of each cleaned Squash half (this allows the squash to sit level) and place, cavity side up, in an oven proof baking dish.
  • Mix together the butter, cinnamon & nutmeg and sugar.
  • Place 1 tbsp of the mixture in the cavity of each squash half.
  • Distibute the cranberries between the 4 halves on top of the butter.
  • Add the apples on top of the cranberries.
  • Preheat oven to 375°F.
  • Cover the squash with foil and bake for apprx 1 hour, remove foil and check that they are tender
  • Bake uncovered for 15 minutes.
  • Remove from oven and gently mix the cranberries & apples so you see both the apple & the cranberries - serve.
