Roasted Butternut Squash Soup With Crispy Croutons image

A devourable soup. I really love this made with smoked chicken stock as it adds a beautiful flavour.

1 butternut squash
1 large sweet onion, diced
1 tablespoon butter
1 tablespoon vegetable oil
4 garlic cloves, minced
4 cups chicken stock or 4 cups vegetable stock
2 teaspoons cajun seasoning
2 -4 teaspoons fresh thyme or 2 teaspoons dried thyme
2 teaspoons fresh parsley
salt and pepper, to taste
1/2 cup sour cream (optional)
4 -5 slices bread, cut into cubes
5 tablespoons garlic oil
1 tablespoon dried herbs (e.g. italian seasoning)
1 dash salt and pepper

Steps:

  • Preheat oven to 400 degrees. Cut butternut squash in half from top to bottom and remove seeds from both halves.
  • Place cut side down on baking sheet.
  • Bake for 30-40 minutes or until flesh of squash is fully softened.
  • On a low heat, saute onion in butter and oil until soft and browning.
  • Add garlic and saute until fragrant and soft.
  • Remove roasted squash from skin and put into soup pot.
  • Add stock and bring soup to a boil.
  • Reduce heat to a simmer and add seasoning and herbs.
  • Simmer for 15-20 minutes and then add sour cream (if using) and blend until smooth using a hand blender or blender.
  • While soup is simmering, toss bread cubes with oil and seasoning and toast in oven until golden brown.
  • Serve with chopped green onion and/or croutons.

An easy, fast, fresh-to-table soup that's hearty and nourishing enough to be a full meal for the family! You can sprinkle toasted nuts or seeds on top before serving, or serve with a dollop of sour cream. Leftovers are also delicious cold!

2 medium butternut squash - peeled, seeded, and cut into 1-inch cubes
1 medium onion, cut into wedges
2 stalks celery, sliced, or more to taste
2 sprigs fresh rosemary, or to taste
4 tablespoons olive oil, or more to taste
kosher salt to taste
2 cups vegetable broth, or more as needed
½ cup Cream, fluid, heavy whipping
ground black pepper to taste

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Pile butternut squash, onion, and celery on a baking sheet and spread out, separating onion wedges into "leaves". Add rosemary sprigs and drizzle olive oil over all the ingredients. Generously season with kosher salt and toss to combine, again spreading out vegetables into a single layer.
  • Bake in the preheated oven until vegetables are tender and start to char, about 25 minutes; no need to stir. Remove baking sheet from the oven and transfer roasted vegetables and liquid to a large pot.
  • Pour enough vegetable broth into the pot to cover the vegetables and turn heat to medium-high. Bring to a boil. Reduce heat and simmer for 5 minutes. Take out rosemary sprigs and remove pot from stove.
  • Use an immersion blender to puree soup until desired smoothness. Add heavy cream and puree until creamy.
  • Return soup to the stove and simmer over medium heat for 2 to 3 minutes. Season with pepper and serve.

1 large butternut squash, peeled and cut into 1-inch cubes (about 8 cups)
3 tablespoons olive oil, divided
1 teaspoon salt, divided
1/4 teaspoon pepper
1 medium onion, chopped
1 tablespoon minced fresh gingerroot
2 garlic cloves, minced
1 teaspoon ground turmeric
1/2 teaspoon ground cumin
1 carton (32 ounces) reduced-sodium vegetable broth
1 can (15 ounces) pumpkin
1 can (13.66 ounces) coconut milk
2 naan flatbreads, cut into 1-inch squares
Optional: minced fresh cilantro, crushed red pepper flakes and plain soy yogurt

Steps:

  • Preheat oven to 400°. Place squash in a shallow roasting pan; drizzle with 1 tablespoon oil. Sprinkle with 1/2 teaspoon salt and pepper. Roast until tender, 25-30 minutes, turning once. Reduce oven setting to 350°. In a Dutch oven, heat 1 tablespoon oil over medium-high heat. Add onion; cook and stir until tender, 5-7 minutes. Add ginger, garlic, turmeric, cumin and remaining 1/2 teaspoon salt; cook 1 minute longer. Stir in broth, pumpkin and roasted squash. Bring to a boil; reduce heat. Simmer, uncovered, 15-20 minutes to allow flavors to blend. Add coconut milk; cook 5 minutes longer. Cool slightly. In a blender, cover and process soup in batches until smooth. , Return pureed mixture to pan; cook and stir until heated through. Meanwhile, place naan on a baking sheet. Drizzle with remaining 1 tablespoon oil; toss to coat. Bake until crispy, 12-15 minutes, stirring once. Serve soup with naan croutons and toppings of your choice. Freeze option: Freeze cooled soup in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add broth if necessary.

1 medium butternut squash (about 3 pounds), peeled, seeded and cut into 1-inch cubes
2 tablespoons olive oil, divided
1/4 teaspoon pepper
1 large onion, chopped
3 celery ribs, chopped
2 tablespoons minced fresh sage or 2 teaspoons rubbed sage
3 cans (14-1/2 ounces each) reduced-sodium chicken broth
CROUTONS:
2 tablespoons grated Parmesan cheese
2 tablespoons olive oil
1 tablespoon minced fresh sage or 1 teaspoon rubbed sage
2 garlic cloves, minced
2 cups cubed French bread (1/2-inch cubes)
Cooking spray
Additional grated Parmesan cheese, optional

Steps:

  • Place squash in a 15x10x1-in. baking pan lightly coated with cooking spray. Drizzle with 1 tablespoon oil; sprinkle with pepper. Toss to coat. Bake, uncovered, at 425° for 30-35 minutes or until tender, stirring every 15 minutes. Set aside., In a Dutch oven, saute the onion, celery and sage in remaining oil until tender. Stir in the broth and squash. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes to allow flavors to blend. Cool slightly., In a blender, puree soup in batches until smooth. Return to the pan; heat through., For croutons, in a small bowl, combine the cheese, oil, sage and garlic. Add bread cubes and spritz with cooking spray; toss to coat. Place on a baking sheet coated with cooking spray., Bake at 425° for 5-8 minutes or until golden brown, stirring occasionally. Sprinkle each serving of soup with croutons and additional cheese if desired.
