BUTTERMILK CORN BREAD IS A DELICIOUS SIDE DISH
This buttermilk corn bread is the perfect choice to serve with any soup or stew based dish. It is easy to make and has a hint of sweetness to it.

- Preheat oven to 375 degrees F (175 degrees C). Grease an 8 inch square pan.
- Melt butter in large skillet. Remove from heat and stir in sugar. Quickly add eggs and beat until well blended. Combine buttermilk with baking soda and stir into mixture in pan.
- Stir in cornmeal, flour, and salt until well blended and few lumps remain. Pour batter into the prepared pan.
- Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted in the center comes out clean.

BUTTERMILK CORNBREAD
So easy! No mixer needed here! Amazingly moist and slightly sweet. A classic side dish loved by EVERYONE. Serve with butter. SO GOOD.

- Preheat oven to 425 degrees F. Place an oven-proof 10-inch cast iron skillet in the oven. In a large bowl, combine cornmeal, flour, sugar, baking powder and salt. In a large glass measuring cup or another bowl, whisk together buttermilk, egg and 3 tablespoons butter. Pour mixture over dry ingredients and stir using a rubber spatula just until moist. Remove skillet from the oven and add remaining 3 tablespoons until heated through, about 1-2 minutes. Working carefully, immediately scoop the batter into the hot skillet. Place into oven and bake for 25-30 minutes, or until a tester inserted in the center comes out clean. Let cool 5 minutes. Serve warm.
CHEDDAR BUTTERMILK CORNBREAD
This is a delicious cornbread! I don't like mine too sweet, so feel free to add more sugar. You can also add chives, jalapenos, scallions, thyme or anything else you desire! Making these as muffins works good too. This is adapted from a recipe in Bon Appetit magazine, Dec. 2002. I am on a mission to get rid of all of my food mags and put the recipes I like on Zaar. Steps:
- Preheat oven to 400°F Butter 8x8 baking dish.
- Sautee corn until lightly brown, set aside.
- Whisk first 7 ingredients in medium bowl to blend. Mix in cheese.
- Whisk buttermilk, eggs, and melted butter in another medium bowl to blend, then add corn.
- Add buttermilk mixture to dry ingredients and stir just until incorporated; do not overmix. Transfer batter to prepared pan.
- Bake until bread is golden on top and tester inserted into center comes out clean, about 20 minutes. Serve warm or at room temperature.
- (Can be made 1 day ahead. Cool completely in pan on rack. Cover with foil and store at room temperature.).

- Melt the butter in the microwave. Remove and stir in the sugar. Quickly add eggs and beat until well blended. Combine the buttermilk with baking soda and baking powder and stir into the mixture. Add the cornmeal, flour, and sea salt and mix until well blended and few lumps remain.
- Remove the hot pans from the oven and brush with the remaining 2 tablespoons melted butter. Divide the batter among the molds, then place back into the oven and bake 10 to 12 minutes, until lightly golden and springy to the touch.
- If you don't have these muffin pans, you can use an 8 inch pan, but preheat your oven to 375º and bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted in the center comes out clean.
