BUTTERMILK COOKIES

Buttermilk Cookies image

These are a soft, delicious, sugar cookie but with a hint of buttermilk. A friend of mine gave this recipe to me years ago and my family loves them so much that I have a hard time keeping them in the cookie jar! You can sprinkle the tops of these with a little granulated sugar just before baking or ice after completely cooled.

GRANDMA AMICO'S BUTTERMILK SUGAR COOKIE CUTOUTS

Grandma Amico's Buttermilk Sugar Cookie Cutouts image

Grandma Amico made the best buttermilk sugar cookies. These cookies are soft and fluffy and a family tradition for us. Not just for the holidays, but whenever we get the urge for cookies, we make these. I will also leave dough in the fridge for up to a week and make cookies whenever I like. Dough freezes well for later cookie baking.

BUTTERMILK COOKIE CAKES

Buttermilk Cookie Cakes image

My grandmother and mom used to make these every Christmas when I was little and my grandmother has since passed away and my mom lost the recipe. I looked for years and couldn't find anything that made cookies like those I remembered and then my aunt found her recipe! These are best after they've set overnight and become softer, moist and spongy, like cake. Separating the egg is a bit of a pain, but I think that may be what helps to give these such a different texture than your average sugar cookie. I sprinkle these with red and green sugar at Christmastime. Enjoy!

  • In a large microwave-safe bowl, melt the butter (I like to do this in 15 second increments at 50% power, but you can also do it in a small saucepan on the stovetop and transfer it to a bowl afterward). While the butter is still warm, add the cocoa powder to the butter and whisk until very smooth. Whisk in sugar, vanilla extract and buttermilk.
  • Gradually add the flour mixture and stir until no streaks of flour remain (I like to stir in about 1/3 of the mixture at a time to fully, evenly incorporate it). Gently stir in the chocolate chips.
