Buttermilk Chicken with Cornbread and Cucumber-Celery Salad image

Our baked version of the classic buttermilk fried chicken still has plenty of crunch. It's perfect alongside cornbread and cucumber-celery salad. Cook an extra chicken breast alongside the breaded pieces for later use in our recipe for Barley Salad with Chicken and Corn.

2 cups buttermilk
Coarse salt and ground pepper
1 whole chicken (3 1/2 pounds), cut into 10 pieces and skin removed, plus 1 bone-in, skin-on chicken breast (3/4 pound)
2 tablespoons plus 2 teaspoons extra-virgin olive oil
1 English cucumber, halved and thinly sliced
1 shallot, halved and thinly sliced
2 celery stalks, thinly sliced, plus 1/4 cup celery leaves
2 teaspoons red-wine vinegar
Scallion Cornbread Muffins

Steps:

  • In a bowl, mix buttermilk, 2 teaspoons salt, and 1/4 teaspoon pepper. Add 10 pieces from whole chicken; stir to coat. Marinate 30 minutes (or up to 8 hours).
  • Preheat oven to 450 degrees. In a food processor, pulse bread until fine crumbs form, 30 seconds. Transfer to a rimmed baking sheet; bake until golden brown, 7 minutes. Transfer breadcrumbs to a bowl and toss with 2 tablespoons oil.
  • Set a wire rack in baking sheet. Remove chicken from marinade, shaking off as much liquid as possible, and coat with breadcrumbs. Place on rack, along with nonbreaded chicken breast, and season all with salt and pepper. Bake until chicken is cooked through and golden brown, 45 to 50 minutes, rotating sheet halfway through (tent chicken with foil if overbrowning). Refrigerate extra breast for later use.
  • Meanwhile, in a bowl, combine cucumber, shallot, celery and leaves, vinegar, and 2 teaspoons oil; season with salt and pepper. Serve salad with buttermilk chicken and muffins.

  • In a medium pot of boiling salted water, cook barley according to package instructions. Drain and let cool.
  • Meanwhile, preheat oven to 450 degrees. Place scallions and corn on a rimmed baking sheet. Toss with 1 tablespoon oil and season with salt and pepper. Roast until vegetables are tender, about 25 minutes, stirring halfway through.

2 tablespoons cider or red wine vinegar
3 tablespoons extra-virgin olive oil, eyeball it
1 seedless cucumber, quartered lengthwise and sliced 1/2 inch thick (you can use a regular cuke, but seed it and if the skin is waxy, peel it)
5 to 6 ribs celery from the heart, sliced 1/2-inch thick
1/4 cup chopped hot or roasted red peppers or 1/2 small fresh bell pepper, whichever you have on hand
1 small jar marinated mushrooms or artichoke hearts or 1 cup pickled vegetable salad, "giardiniera", chopped
Salt and pepper

Steps:

  • Place relish in the bottom of a bowl. Whisk in vinegar then extra-virgin olive oil. Add cucumber, celery, peppers and marinated vegetable of choice to the bowl. Toss salad and adjust salt and pepper, to taste.

1 tablespoon olive oil
1/4 cup light mayonnaise
2 romaine lettuce, heads cut into pieces (1 1/2# total)

Steps:

  • Heat broiler, with rack set 4 inches from heat.
  • Line a rimmed baking sheet with aluminum foil.
  • In a medium bowl, combine buttermilk, lemon juice, garlic, and Parmesan.
  • Season with salt and pepper.
  • Place mixture in a resealable plastic bag; reserving 1/2 cup for salad, add the rest of the buttermilk mixture to bag.
  • Refrigerate chicken at least 15 minutes and up to 1 day.
  • Meanwhile, make croutons by placing bread on prepared baking sheet.
  • Brush both sides with oil, and season with salt and pepper.
  • Broil until toasted, 1 to 2 minutes per side; cut into 1 inch pieces (and reserve baking sheet).
  • Transfer chicken to baking sheet; discard marinade.
  • Broil until opaque throughout, 14 to 16 minutes.
  • Let rest 5 minutes; thinly slice crosswise.

2 packages (1 oz each) ranch dressing mix
1 cut-up whole chicken (3 to 3 1/2 lb)
Cooking spray
1 pouch (6.5 oz) Betty Crocker™ cornbread & muffin mix
1 teaspoon paprika
1 teaspoon pepper
1/2 teaspoon seasoned salt
1/8 teaspoon ground red pepper (cayenne)
Fresh parsley sprigs for garnish, if desired

Steps:

  • In large resealable food-storage plastic bag, mix buttermilk, dressing mix and chicken. Seal bag; turn bag several times to coat chicken. Refrigerate at least 1 hour or overnight.
  • Heat oven to 425°F. Spray 15x10x1-inch pan with cooking spray. In shallow dish, mix breading ingredients. Remove chicken pieces one at a time from buttermilk mixture. Dip chicken in breading, turning to coat completely; shake off excess. Place chicken, bone side down, in pan. Lightly spray top of chicken with cooking spray.
