Buttermilk Chicken image

Served with slaw or potato salad, this chicken dinner will feel like an indoor picnic. Any leftover chicken will make a great school lunch.

Categories     Food & Cooking     Ingredients     Meat & Poultry     Chicken

Time 50m

Number Of Ingredients 8

Vegetable oil, for baking sheet
8 slices white bread
1 cup buttermilk
1 teaspoon hot-pepper sauce
Salt and pepper
3/4 cup grated Parmesan cheese (2 1/2 ounces)
1 teaspoon dried thyme
4 pounds chicken parts (preferably legs, thighs, and wings), rinsed and patted dry

Steps:

  • Preheat oven to 400 degrees. Generously rub a baking sheet with oil. In a food processor, pulse bread until it turns into coarse crumbs.

  • Place the chicken in the buttermilk mixture, turning to coat evenly. Working with one piece at a time, remove chicken from liquid, letting excess drip back into bowl; dredge in the breadcrumb mixture, turning to coat evenly. Place coated chicken pieces on prepared baking sheet.
  • Bake until chicken is golden brown, about 35 minutes.

BAKED BUTTERMILK CHICKEN

Baked Buttermilk Chicken image

Buttermilk keeps baked chicken tender; a coating of cornflakes makes each piece as crispy as fried chicken, but with less fat.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Chicken     Chicken Breast Recipes

Number Of Ingredients 11

Olive-oil cooking spray
4 chicken drumsticks (about 1 pound), skins removed
2 whole boneless, skinless chicken breasts (about 1 3/4 pounds), halved
2 1/2 cups low-fat buttermilk
4 cups cornflakes, finely crushed
3/4 teaspoon Old Bay seasoning
1/2 teaspoon dried thyme
1/2 teaspoon dried basil
1/4 teaspoon cayenne pepper
Lemon wedges (optional)
Flat-leaf parsley sprig (optional)

Steps:

  • Preheat oven to 400 degrees. Generously coat a rimmed baking sheet with cooking spray; set aside. Rinse chicken, and pat dry. Transfer to a medium bowl. Pour buttermilk over chicken. Cover, and let marinate 1 hour in refrigerator.
  • Toss cornflakes, Old Bay, thyme, basil, and cayenne in a large bowl. Remove 1 piece of chicken at a time from buttermilk, letting excess drip back into bowl, and dredge in cornflake mixture.
  • Transfer pieces to oiled baking sheet; lightly coat each one with cooking spray. Bake, turning pieces halfway through, until crisp and cooked through, about 40 minutes. Transfer to a platter; garnish with lemon wedges and parsley, if desired.

Categories     main-dish

Time 12h50m

Yield Makes 16 pieces

Number Of Ingredients 20

1 gallon water
1 cup kosher salt
1/4 cup plus 2 tablespoons honey
12 bay leaves
1 head of garlic, halved
2 tablespoons black peppercorns
About 1/2 ounce (1 large bunch) thyme sprigs
About 2 ounces (1 large bunch) flat-leafed parsley sprigs
5 lemons, halved
Two-2 1/2 pound chickens, each chicken cut up in 8 pieces
10 cups peanut oil
3 cups all-purpose flour
2 tablespoons garlic powder
2 tablespoons onion powder
2 teaspoons paprika
2 teaspoons cayenne
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1 quart buttermilk
Kosher salt

Steps:

  • For the brine: Combine all the ingredients in a large pot, cover, and bring to a boil. Boil for 1 minute, stirring to dissolve the salt. Remove from the heat and cool completely before using.
  • Rinse the chickens and place the chickens in the cold brine and refrigerate overnight or for up to 12 hours. Remove the chicken from the brine and pat the chicken dry, removing any herbs or spices sticking to the skin.
  • Bring the peanut oil to 340 degrees F. in a 6 quart saute pan.
  • Mix the coating ingredients together in a bowl and place the buttermilk in a second container. Just before frying, dip each piece of chicken into the coating, patting off the excess, then into the buttermilk and back into the coating. Place the chicken on a parchment lined sheet tray.
  • When the oil has reached the proper temperature, carefully lower the pieces of dark meat into the oil. The temperature of the oil will decrease. Adjust the heat as necessary to bring the oil to proper temperature. Fry the dark meat for about 13 minutes, to a deep golden brown, cooked throughout and very crisp. Remove the chicken to a tray lined with paper towels and sprinkle with salt.
  • Carefully add the white meat to the oil and fry for 6 to 7 minutes until cooked.
  • Remove to the tray, sprinkle with salt and turn off the heat under the oil. Let the chicken rest for a few minutes to cool slightly. It is very hot when it comes out of the oil.

BUTTERMILK ROAST CHICKEN

Buttermilk Roast Chicken image

Roast a chicken and you know you have a comfortable meal. Alter that a little by butterflying the chicken, a surprisingly simple task that can be carried out with a pair of kitchen scissors, and you have a quick dinner that carries with it the casual air of barbecue, without the bother. Here, buttermilk, which is usually associated with fried chicken, helps to tenderize the chicken and conveys the aromatics: you really get the full value of the rosemary, pepper and garlic. If you want to substitute maple syrup for the honey, you can. Best of all, you can leave the marinating bird in the fridge for up to two days; thus, it gets more tender and you know you have a dinner that needs no more than to be popped into the oven.

Categories     project, main course

Time 9h30m

Yield 4 servings

Number Of Ingredients 8

1 4-pound chicken
2 cups buttermilk
1/4 cup plus 2 tablespoons vegetable oil
2 cloves garlic, lightly crushed
1 tablespoon crushed black peppercorns
1 tablespoon Maldon or other sea salt
2 tablespoons fresh rosemary leaves, roughly chopped
1 tablespoon honey

Steps:

  • Butterfly chicken by placing breast side down and using heavy-duty kitchen shears to cut along both sides of backbone. Discard backbone, turn chicken over and open it like a book. Press gently to flatten it.
  • Place chicken in a large freezer bag. Add buttermilk, 1/4 cup oil, garlic, peppercorns, salt, rosemary and honey. Seal bag securely and refrigerate overnight or up to two days.
  • Heat oven to 400 degrees. Remove chicken from marinade and place on a rack so excess can drip off. Line a roasting pan with foil and place chicken in pan. Drizzle with remaining 2 tablespoons oil. Roast for 45 minutes, then reduce heat to 325 degrees. Continue roasting until well browned and until juices run clear when chicken is pierced where leg joins thigh, about another 20 minutes.
  • Place chicken on a carving board and allow to rest for 10 minutes before cutting into serving pieces. Place a portion on each of four plates, and drizzle each serving with pan juices.

OUR FAMOUSLY POPULAR ASIAN BUTTERMILK CHICKEN

Our Famously Popular Asian Buttermilk Chicken image

Not all fried chicken was created equal, and there is a reason this is one of Asian Food Network's most popular recipes. At 30 minutes, it is really quick to prepare, and the flavours are unbelievable for a recipe this simple. Asian fragrances ooze all over and drip off golden brown perfectly fried chicken. One you taste it piping hot, you won't look at fried chicken the same again.

Provided by Asian Food Network

Categories     Chicken Food Recipes | Asian Food Recipes With Chicken

Yield Serves 2 people

Number Of Ingredients 15

250 g cut chicken (cut into thick cubes)
1 cup evaporated milk
1/4 cup condensed milk
2 sprigs curry leaves
2 chili padi (bird's eye chili)
1/4 cup + 1 tbsp corn flour
1/4 cup rice flour
1 tbsp unsalted butter
1 tbsp vinegar
1 egg
2 cloves garlic (finely chopped)
water
vegetable oil
salt
white pepper

Steps:

  • Marinate chicken. In a bowl, mix chicken cubes, ½ tbsp salt, and 1 tbsp white pepper, 1 tbsp vinegar until evenly coated. Set aside to marinate for an hour. After marinating, crack an egg into the chicken mixture and mix well.
  • Mix flour together. In separate bowl, combine ¼ cup corn flour with ¼ cup rice flour. Dip the marinated chicken pieces into the flour mixture until coated and dust off any excess flour. | To save time and add flavor, you can marinate the chicken one day in advance
  • Fry the chicken. Place a deep pan over high heat and heat up enough oil to fry the chicken. Fry the chicken pieces for 3 to 4 minutes until cooked through and is golden brown on all sides.
  • Fry butter, garlic and chili padi. In a separate pan on medium-high heat, fry 1 tbsp unsalted butter, chopped garlic and chopped chili padi for 1 minute until fragrant. | You can adjust the spiciness level of this dish by adding or removing the amount of chili padi, or just chop chili padi into smaller pieces
  • Make buttermilk sauce and cook chicken. Add curry leaves and fry until fragrant before adding 1 cup of evaporated milk and ¼ cup condensed milk. Season to taste with salt and white pepper. Mix 1 tbsp cornstarch with 1 tbsp water in a cup before pouring it into the pan. Stir well until the buttermilk sauce thickens. When the buttermilk sauce thickens, remove the pan from the heat and add the crispy fried chicken. Mix thoroughly so that the chicken is well coated with the savoury sauce.

GLAZED FRIED CHICKEN WITH OLD BAY AND CAYENNE

Glazed Fried Chicken With Old Bay and Cayenne image

Three steps to success: A flavorful brine infuses the chicken with seasoning and keeps it juicy, an overnight chill allows the crust to set, and a spicy glaze seals the deal.

Provided by Ari Kolender

Categories     Chicken     Kid-Friendly     Summer     Deep-Fry     Bon Appétit     South Carolina     Small Plates

Yield 8 Servings

Number Of Ingredients 16

Chicken:
9.5 ounces kosher salt (1 cup Morton or 1 2/3 cups Diamond Crystal)
1/3 cup (packed) light brown sugar
3/4 cup hot sauce (preferably Crystal)
2 (3 1/2-4-pound) chickens, cut into 8 pieces (legs and thighs separated, breasts halved), backbone and wing tips removed
4 cups all-purpose flour
6 tablespoons Old Bay seasoning
3 cups buttermilk
Glaze and assembly:
3/4 cup lard
1 tablespoon Old Bay seasoning
2 teaspoons paprika
1 1/2 teaspoons cayenne pepper
Vegetable oil (for frying; about 4 quarts)
Special equipment:
A deep-fry thermometer

Steps:

  • Chicken:
  • Heat salt, brown sugar, and 4 cups water in a large pot over medium, whisking, until salt and sugar dissolve, about 5 minutes. Remove from heat and stir in hot sauce and 8 cups ice water. Add chicken to brine, cover, and chill 4 hours.
  • Combine 2 cups flour and 3 tablespoons Old Bay seasoning in a shallow baking dish and toss with your fingers to evenly distribute seasoning. Place buttermilk in a medium bowl. Remove chicken from brine and pat dry with paper towels.
  • Working one at a time, dip 8 pieces of chicken in buttermilk, allowing excess to drip off, then coat in flour mixture, packing all around chicken and pressing firmly into cracks and crevices; shake off excess. Place chicken on a wire rack set inside a rimmed baking sheet. Discard flour mixture, which will be wet at this point, and repeat process with remaining flour, Old Bay, buttermilk, and chicken; place on another wire rack set inside a rimmed baking sheet. Chill, uncovered, 12-24 hours.
  • Glaze and assembly:
  • Let chicken stand at room temperature 30 minutes.
  • Heat lard, Old Bay, paprika, and cayenne in a small saucepan over low, stirring, until lard is melted, about 3 minutes. Set glaze aside.
  • Pour oil into a large pot fitted with deep-fry thermometer to come halfway up the sides. Heat over medium-high until thermometer registers 325°. Working in 4 batches, fry chicken, turning often with tongs and adjusting heat to maintain temperature, until skin is deep golden brown and an instant-read thermometer inserted into the thickest part of chicken registers 165° for dark meat and 160° for white meat, 10-12 minutes per batch. Transfer chicken back to wire racks and let rest 5 minutes. Brush lightly with glaze (reheat glaze, if needed) and let cool. Store on racks at room temperature up to 3 hours ahead.

BUTTERMILK BAY CHICKEN

Buttermilk Bay Chicken image

Although the recipe calls for boneless chicken, I have never made it that way - I always use bone-in chicken thighs, for both the price and the flavor. If you use chicken on the bone, cooking time will be about 45 minutes. Preparation time listed is overnight marinating. Recipe shared on Saveur.com.

SOUTHERN-STYLE BUTTERMILK FRIED CHICKEN

Southern-Style Buttermilk Fried Chicken image

This is a down home recipe that I have used for years, and thought I would share it! The buttermilk marinade is terrific and is such a comfort food. However this is not a recipe that can be done quickly, but the wait is WELL worth it!

Provided by pinkchef

Categories     Meat and Poultry Recipes     Chicken     Fried Chicken Recipes

Time 3h

Yield 8

Number Of Ingredients 11

2 cups buttermilk
1 tablespoon Dijon mustard
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon cayenne pepper
1 whole chicken, cut into pieces
2 cups all-purpose flour
1 tablespoon baking powder
1 tablespoon garlic powder
1 tablespoon onion powder
5 cups vegetable oil for frying

Steps:

  • Whisk together buttermilk, mustard, salt and pepper, and cayenne in a bowl, and pour into a resealable plastic bag. Add the chicken pieces, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 2 to 8 hours.
  • When you are ready to cook the chicken, combine the flour, baking powder, garlic powder, and onion powder in the other plastic bag. Shake to mix thoroughly. Transfer one marinated chicken piece at a time into the dry ingredient bag, and shake well to ensure complete coverage. After all chicken pieces are coated, repeat the process by dipping them in the buttermilk marinade and shaking in the dry coating again.
  • Heat oil in a large frying pan over medium-high heat, making sure not to burn the oil. When oil is hot, fry chicken in batches until golden brown and juices run clear, turning chicken to brown evenly.

CRISPY FRIED BUTTERMILK CHICKEN THIGHS

Crispy Fried Buttermilk Chicken Thighs image

Fried chicken goes with pretty much anything. It's crispy, juicy and there are few things in this world that beat that first bite into a freshly fried chicken....

Provided by The Foody Bean

Time 50m

Yield 6

Number Of Ingredients 14

0.6 kg/1.3 lbs chicken thighs or legs, skin removed (about 6 pieces)
454g/ 1lb vegetable shortening/4 cups Cooking oil for frying
1 cup buttermilk
1 tablespoon salt
1 tablespoon black pepper
1 tablespoon garlic powder
1 tablespoon dried parsley or thyme
2 large eggs
2 cups all-purpose flour
2 tablespoons cornstarch
1 tablespoon salt
1 tablespoon cayenne pepper
1 tablespoon dried parsley
2 teaspoons onion powder

Steps:

  • Whisk buttermilk marinade ingredients together in a large mixing bowl.
  • Mix in the chicken thighs with this buttermilk marinade and wrap the top of the bowl with cling wrap. Refrigerate for at least 2 hours or, even better, overnight.
  • In a 10-inch cast iron skillet, unwrap the shortening and melt it completely using medium-high heat (or add cooking oil at least 3 inches deep and heat until the temperature is 350°F/175°C).
  • Fry chicken thighs for 8-9 minutes on each side until brown on both sides. Don't overcrowd the pan as that reduces the temperature of the oil so I like frying 3-4 pieces at a time.
  • Make sure the internal temperature of the chicken reads at least 170°F/76°C to avoid biting into a blood-filled chicken. Yes I've been there.
  • Once your chicken is ready, let it cool on a wire rack. Serve warm!

Yield Serves 4

Number Of Ingredients 9

3 garlic cloves, peeled
284-300ml/approx. ½ pint buttermilk
10g/⅓oz fresh flatleaf parsley (optional)
1 tbsp chopped fresh rosemary or 2 tsp dried rosemary
1 tbsp soft light brown sugar or runny honey
1 tsp flaked sea salt or ½ tsp fine salt
1 tsp coarsely ground black pepper
4 chicken thighs
4 chicken drumsticks

Steps:

  • Flatten the garlic cloves with the end of a rolling pin, the side of a knife, or in a pestle and mortar. (If you chop or fully crush the garlic it could burn when the chicken is baked.) Put in a large bowl and add the buttermilk.
  • Roughly chop the leaves from half the parsley, if using, and return the rest to the fridge.
  • Stir the chopped parsley, rosemary, sugar, salt and pepper into the buttermilk. Add the chicken and turn to coat in the marinade. Cover the bowl and leave in the fridge for at least 8 hours, or overnight.
  • Preheat the oven to 200C/180C Fan/Gas 6. Line a large baking tray with foil and place a rack on top. Take the chicken out of the marinade, gently shaking off excess buttermilk and garlic. Place on the rack, with the thighs skin-side up. Discard the marinade.
  • Roast the chicken for 35-40 minutes, or until lightly browned in places and cooked through. The chicken is cooked when the juices run clear when pierced with a skewer in the thickest part. Chop the remaining parsley leaves and sprinkle over the chicken just before serving. Eat hot or cold with salad and baked potatoes, boiled new potatoes or chips.

  • Prepare the Brine: Combine all of the brine ingredients in a large stockpot, cover, and bring to a boil. Boil for 1 minute, stirring to dissolve the salt. Remove from the heat and cool completely, then chill thoroughly in the refrigerator before using. The brine can be refrigerated for up to 3 days. Pour the brine into a large container, add the chicken pieces and refrigerate for 8 to 12 hours (don't refrigerate for much longer, or the chicken will be too salty).
  • Prepare the Chicken: Remove the chicken from the brine and rinse under cold water, washing off any particles from the brine stuck to the chicken. Pat dry with paper towels and let sit at room temperature for 1½ hours, or until it reaches room temperature.
  • Prepare the Coating and Dredging Station: Fill a large pot with at least 2 inches of frying oil, place it over medium heat and heat to 320 degrees F. Place a wire cooling rack on top of a baking sheet and place it to the side of the pot of oil to drain the cooked chicken.
  • Meanwhile, whisk together the flour, garlic powder, onion powder, paprika, cayenne, salt and pepper. Divide the mixture between two shallow bowls. Pour 1 quart of the buttermilk into a third shallow bowl. Add the 6 tablespoons of buttermilk to one of bowls with the flour mixture and use a fork or your fingers to toss the mixture together - all of the moisture from the buttermilk should be absorbed and the mixture should look a little shaggy. Set up the station in this order: chicken pieces, dry flour mixture, buttermilk and shaggy flour mixture, then a parchment-lined baking sheet.

Add in the chicken and toss to fully coat. Make sure you nestle in the chicken so that it's fully submerged into the buttermilk. Cover with plastic wrap and refrigerate for at least 1 hour (or up to overnight).
  • In a large bowl, combine the flour and seasonings. Mix to fully combine. Working with a couple of chicken pieces at a time, transfer them from the buttermilk to the seasoned flour. Transfer the chicken to a clean wire rack set over a baking sheet. Do not place it directly on a place or paper towels or anything, because it will cause the chicken to steam and get soggy.

  • In a medium saucepan, combine 1/4 cup of salt with the smashed garlic, the sugar, rosemary, bay leaf and 2 cups of water. Bring to a simmer, stirring to dissolve the salt and sugar. Transfer the mixture to a very large bowl and stir in 2 cups of cold water.
  • In a spice grinder, grind the mushrooms to a powder. (You should have about 3 tablespoons.) Whisk the porcini powder and buttermilk into the salt mixture. Place the chicken in the buttermilk brine, cover with plastic wrap and refrigerate for at least 6 hours or up to 12 hours.
  • Preheat the oven to 425°. Remove the chicken from the brine and pat dry; discard the brine. Tuck the wing tips behind the breasts, tie the legs with kitchen twine and set the chicken, breast side up, in a rack over a roasting pan. Season all over with salt.
  • Roast the chicken for 15 minutes. Brush the butter all over the chicken, then return it to the oven and roast for about 45 minutes longer, until an instant-read thermometer inserted in the thickest part of the thigh registers 165°. Transfer to a cutting board and let rest for 15 minutes.
