DOMINO'S FRENCH BUTTERCREAM FROSTING

2 cups granulated sugar
1/2 cup water
1/4 teaspoon cream of tartar
1/8 teaspoon salt
4 egg whites
1 cup confectioners' sugar
1 1/2 teaspoons vanilla
4 tablespoons butter, soft

Steps:

  • Combine granulated sugar, water, cream of tartar and salt in a saucepan; cook and stir until sugar melts.
  • Cook WITHOUT stirring until syrup reaches 260° on candy thermometer; Wash down sugar crystals from side of pan with wet brush.
  • Beat egg whites until stiff; add syrup slowly; beat 3 min.; on low speed, beat in confectioners' sugar.
  • Cool; fold in vanilla and butter.
  • For chocolate frosting: beat in 4 squares of unsweetened baker's chocolate that has been melted and cooled.

I use Recipe #95416 when I'm decorating a cake but we like this version on brownies, cookies or undecorated cakes. I cut the recipe in half for brownies. Goes really well on Recipe #2496. Freezes well also. (If you have leftovers, put it between graham cracker for a delicious snack or dessert. My kids love it that way!)

1 cup real butter, no substitute
1 1/2 teaspoons clear vanilla extract
1 pinch salt (optional)
5 cups confectioners' sugar
2 -3 tablespoons milk

Steps:

  • Cream butter and then add vanilla and optional salt. (To cut the sweetness I usually sprinkle some salt in the vanilla, so it will dissolve.).
  • Add sugar a cup at a time beating on medium speed. Add milk 1 Tbls. at a time and beat on high until completely blended and desired consistency.

Steps:

  • In a small bowl, using an electric mixer on low speed, beat together sugar, butter and salt until creamy. Increase speed to high and beat until light and fully. Add vanilla, beating until frosting is smooth.
  • Spread icing on cooled cupcakes or cake with a knife or transfer to a pastry bag and pipe decoratively over cake or cupcakes.
  • Makes enough for over 16 cupcakes.

3 3/4 cups confectioners' sugar, Domino brand recommended
1/2 cup butter, softened (or you can use margarine)
3 -4 tablespoons milk
1 teaspoon vanilla

Steps:

  • Place chocolate in heavy saucepan on very low heat. Stir constantly until just melted. Set aside to cool.
  • Combine in large bowl, with mixer at low speed, confectioners sugar, butter, milk and vanilla.
  • Beat at medium speed 1-2 minutes until creamy. Add cooled chocolate and beat until combined. If desired, add more milk until frosting is spreading consistency.
