Provided by LORIWHIP

Number Of Ingredients 5

1 cup butter
1 1/3 cup sugar
1 tablespoon corn syrup
1/2 cup crushed cashews
10 ounces melted milk chocolate

Steps:

  • Boil the butter, sugar, and corn syrup until it reaches 300°F on a candy thermometer. Carefully stir in most of the crush cashews. Save a small amount to sprinkle on top of the chocolate. Pour into a sheet pan lined with aluminum foil and greased with butter. Place another piece of aluminum foil greased with butter on top. Use a rolling pin to gently roll the candy to be even thickness in the pan. Do this while the mixture is still hot. Let the mixture cool. Melt the chocolate and frost the brittle with the melted chocolate and sprinkle the chocolate with the crushed cashews. Break into pieces when the brittle is cool and firm.

EASY BUTTER TOFFEE

Easy Butter Toffee image

This microwave recipe was given to me by my mom about 20 years ago. It is sooo easy to make and tastes delicious!

Provided by MissJennifer

Categories     Candy

Time 15m

Yield 20 pieces approx. - depends on size, 10-20 serving(s)

Number Of Ingredients 6

1/2 cup butter (keep extra available)
1 cup sugar
1/2 teaspoon salt
1/4 cup water
4 ounces milk chocolate
sliced almonds (optional)

Steps:

  • Rub the top of a microwavable mixing bowl with (extra) butter. Place butter into bowl. Pour sugar directly on butter. Add salt and water.
  • Cook approximately 7-8 minutes (sometimes I have seen some microwaves take up to 12 minutes). Start watching at this point so as not to overcook. Candy is done when it's the color of a Heath bar or brown sugar.
  • Pour mixture over sliced almonds on a buttered cookie sheet. Don't scrape the bowl! Cool!
  • Top with melted chocolate (and more almonds if you wish) and let cool some more.
  • Break into pieces and serve. (I use a regular table knife -- just be sure not to cut into your cookie sheet!) Enjoy!

MATZO TOFFEE BRITTLE

Matzo Toffee Brittle image

I haven't tried this yet, but wanted to get it posted before I misplace the recipe. This way I will always know where I can find it. It sure does sound yummy! Update: I've made maybe 12 batches of this stuff -- and it's great. Everyone keeps asking for more. It's so easy to make and makes a great food gift wrapped up in a nice tin or box. Don't be afraid to try other nuts for the toppings. I ran out of almonds at one point and substituted pecans and walnuts. Delicious! I've also used the milk chocolate morsels with great success.

QUICK PEANUT BRITTLE

Quick peanut brittle image

Break this salted peanut brittle into shards to decorate puds or give as a gift to a foodie friend. It will keep for several weeks in an airtight container

Provided by Liberty Mendez

Time 7m

Yield Makes 300g

Number Of Ingredients 3

200g caster sugar
100g roasted peanuts
1 tsp sea salt flakes

Steps:

  • Line a baking tray with baking parchment. Melt the sugar in a medium frying pan over a medium heat for 4-5 mins until caramelised - it should be a dark amber colour. Don't stir, as this causes the sugar to crystallise - instead, tilt the pan slowly so the sugar melts evenly.
  • Add the peanuts, stir with a wooden spoon, then quickly and carefully tip onto the prepared tray. Immediately sprinkle over the sea salt flakes and leave to cool until set. Will keep for several weeks in an airtight container.
