FRESH PASTA WITH PARMESAN BUTTER SAUCE



Fresh Pasta with Parmesan Butter Sauce image

2 1/3 cups (300 grams) all-purpose flour, plus more for dusting
2/3 cup (100 grams) durum flour
4 eggs, room temperature, whisked
Water (if necessary)
Sea salt
1 cup vegetable stock
4 tablespoons butter
Freshly cracked black pepper
1 cup grated Parmigiano-Reggiano, plus more for garnish
Fresh parsley, mint or basil leaves, for garnish

Steps:

  • For the pasta: You can prepare the dough either using a stand mixer or by hand.
  • Using a stand mixer: In the bowl of a stand mixer fitted with the hook attachment, add the flours and mix to combine. Add the eggs and mix on medium speed until the dough come together and forms a ball. If the dough is dry, add a little water, 1 teaspoon at a time. Reduce the speed to low and mix until the dough is smooth, about 6 minutes. Wrap the dough with plastic wrap or a damp towel. Let it sit at room temperature for about 30 minutes.
  • By hand: On a wooden table or in a bowl, create a volcano shape with the flours. Then make a large hole in the middle. Break the eggs inside of the volcano. Whip the eggs with a fork to create a uniform color (until you can't see the difference between egg yolk and egg white). Then, little by little with the tips of your fork, start to incorporate the flour, starting from the center and moving out (never break or pass beyond the volcano). If the dough is dry, add a little water, 1 teaspoon at a time. When the mixture is uniform, use your hands and knead the dough until smooth. Wrap the dough with plastic wrap or a damp towel. Let it sit for about 30 minutes.
  • Flour the table and roll out the dough until very thin (until you can just see your hands through the dough). For pappardelle, roll the dough up into a log, lightly flouring the dough as you roll it. Slice into about 1-inch-thick slices. Unroll the slices and lay out the strips flat onto a floured sheet tray until ready to cook.
  • For the sauce: When ready to cook the pasta, bring a pot of water to a boil and add salt. Cook the pasta for 3 minutes.
  • Meanwhile, in a pan, bring the vegetable stock to a simmer. Add the butter and cooked pasta. Season it with freshly milled black pepper and salt. At the very end, add the Parmigiano-Reggiano little by little, stirring it in as you go. Garnish with fresh herbs and more cheese.

2 tablespoons unsalted butter

2 tablespoons medium-dry Sherry
2 tablespoons coarsely chopped cilantro

Steps:

  • Pat shrimp dry and season with salt

3 teaspoons dried oregano
2 cloves, fresh pressed garlic

1 pinch cayenne pepper
1/2 teaspoon olive oil
3 pinches salt

Steps:

  • First, to the pasta water, add 3 pinches of salt, 1 clove pressed garlic, 2 tsp of dried oregano, veggies.
  • Bring to a full boil, then reduce heat to simmer for 15 minutes.
  • Then bring it back to a full boil, and add the pasta.
  • It works.
  • Meantime, in a saucepan, add butter, parmesan cheese, 1 tsp dried oregano, 1 clove pressed garlic, 1/2 tsp black pepper, pinch of cayenne pepper, 1/2 tsp olive oil.
  • Melt on simmer, and stir well.
  • Drain the pasta, place in a service bowl, add the sauce, a generous sprinkling of parmesan cheese, and toss.
  • Serve.
  • Enjoy.

Steps:

  • In a non-stick pan, heat oil on medium heat.

  • Add butter, ginger and garlic and cook on medium heat until fragrant. (Make sure not to burn the garlic and ginger).
  • Add lemon juice, lemon zest, additional salt and pepper (if necessary), water and mix everything together.
  • Add spaghetti and mix again.
  • Cook without lid on medium heat until the water is almost evaporated. Make sure to stir often or else the pasta might stick to the pan.
  • When pasta is almost cooked, add cream cheese and mix together.
  • Remove pan from the heat and sprinkle parmesan cheese on top.

4 tablespoons unsalted butter (divided)
2 cloves garlic (very finely chopped)
1 tablespoon fresh ginger (very finely chopped)

1/2 cup light cream or half-and-half
1 teaspoon sugar
2 tablespoons freshly squeezed lime juice
Salt and freshly ground black pepper
4 scallions (sliced)
2 tablespoons fresh cilantro (finely chopped)

Steps:

  • Pat the scallops dry and set aside.
  • Melt 3 tablespoons of the butter over medium heat in a large skillet and add the garlic and ginger. Sauté until fragrant, 1 minute, then sprinkle with the flour. Combine well and continue cooking, stirring constantly, until the mixture is smooth and light gold in color, about 2 minutes longer.
  • Add the cream and sugar and cook, stirring constantly, until the mixture is smooth and the sugar has dissolved. Slowly stir in the lime juice and season to taste with salt and pepper.
  • Continue cooking until the sauce thickens to a rich, creamy consistency, 3 to 4 minutes more, then stir in the scallions and half of the chopped cilantro. Transfer the sauce to a bowl and cover to keep warm.
  • Wipe out the pan, return it to the stove and add the remaining tablespoon of butter along with the vegetable oil.
  • Turn the heat to medium-high and once hot, add the scallops in a single layer.
  • Note: The scallops need about 3/4-inch of space between them in order to sear properly. If the pan seems overcrowded, cook them in 2 batches.
  • Sear the scallops until they develop a golden crust on the outside, 1-1/2 minutes per side (see notes).
  • To serve, spoon a portion of sauce onto individual serving plates, top with scallops and garnish with the remaining chopped cilantro.
