This butter chicken sauce recipe is creamy and packed full of flavor. Anytime you're craving Indian, whip up a batch of this creamy, tomato-based sauce and serve it with chicken and rice.

1/2 cup butter
1 medium onion, chopped
2 garlic cloves, chopped
1 tablespoon fresh ginger, chopped
1 medium tomato, diced
1 jalapeño pepper, seeded and diced
1 1/2 teaspoons garam masala
1 1/2 teaspoons ground cumin
1 1/2 teaspoons ground turmeric
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon cayenne pepper
1/3 cup chicken broth
1 tablespoon tomato paste
3/4 cup heavy cream

Steps:

  • In a large pot over medium heat, melt the butter. Add the onions and cook, stirring frequently, until translucent. Add the garlic and ginger, cook until the onions start to brown.
  • Add the tomato, jalapeno, garam masala, cumin, turmeric, salt, cinnamon, and cayenne. Cook until the jalapeño is soft, about 10 minutes.
  • Add the chicken broth and bring to a boil. Reduce the heat low and simmer uncovered for 15-20 minutes.
  • Remove from heat and let the sauce cool for 20 minutes then transfer to a blender and puree until smooth. If you have an emulsion blender you can use that to puree the sauce in the pot instead and you don't need to wait for it to cool.
  • Return the sauce to the saucepan. Stir in the cream and tomato paste. Simmer for another 5 minutes.
  • Store the sauce in an airtight container in the refrigerator for up to 5 days. Or allow the sauce to cool for about 2 hours then transfer it to a freezer-safe container and freeze for up to 3 months. Thaw overnight in the refrigerator.
  • Heat oil in a large nonstick skillet over medium-high heat. Add chicken and stir-fry for 5 minutes.
  • Stir in the butter chicken sauce and cook, stirring, for 5 minutes.
  • Serve with rice and garnish with cilantro.
  • Refrigerate - Allow the sauce to cool for 1 hour then transfer it to an airtight container. Refrigerate the sauce for up to 5 days.
  • Freeze - Allow the sauce to cool for about 2 hours then transfer it to a freezer-safe container and freeze for up to 3 months. Thaw overnight in the refrigerator.

A rotisserie chicken stands in quite well for the original tandoori chicken in this version of the simple north Indian dish. In just a few simple steps with a handful of spices, an ordinary chicken become an exotic, family-pleasing meal with a richly spiced sauce that melds right into the chicken. The dish is done when the meat is - as Indian cookbook author Julie Sahni describes it - "meltingly tender." Serve with spinach, quickly cooked in oil and garlic to complete the meal.

1 tablespoon garam masala seasoning
1 1/2 teaspoons ground ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon cayenne
3 tablespoons butter
1 large onion, chopped (about 1 cup)
2 teaspoons jarred minced garlic
1 tablespoon tomato paste
1 (15-ounce) can tomato sauce
1 (14 1/2-ounce) can diced tomatoes in juice
1 skinless rotisserie chicken, boned out and pulled into 1 1/2 by 1/2-inch chunks
1 (10-ounce) box frozen peas, placed in a colander and run under hot water to thaw
1/3 cup heavy whipping cream
Hot basmati rice, for serving
Pita bread, warmed according to package directions, for serving

Steps:

  • To make the spice blend: Stir the ingredients together in a small bowl and set aside.
  • To make the sauce: Melt the butter in a 12-inch nonstick skillet over medium heat. Add the onion and cook, stirring frequently, until the pieces just begin to turn gold, about 5 minutes. Add the garlic, tomato paste and spice blend, and cook for 1 minute, stirring constantly to prevent burning. The spices will be fragrant. Add the tomato sauce and diced tomatoes and stir will. Add the chicken pieces, spoon the sauce over the top and bring to a simmer. Turn the heat to low and cook, uncovered, until the chicken is warmed through and the sauce is flavorful, about 10 minutes. Stir frequently. Remove the chicken to a serving dish and cover to keep warm.
  • Shake any excess water from the peas. Add the peas and cream to the sauce in the pan, stir well and heat through. Do not boil. Spoon the sauce over the chicken. Serve with rice and warmed pita bread.

1 pound boneless, skinless chicken thighs, cut into roughly 1-inch cubes
1/4 cup full-fat plain yogurt
1 tablespoon olive oil
1 tablespoon ginger garlic paste
1 teaspoon dried coriander
1 teaspoon Kashmiri Lal Mirch
1 teaspoon cumin
Salt to taste
For the sauce:
8 to 10 whole almonds
8 to 10 whole cashews
2 tablespoons unsalted butter, divided
1 tablespoon ginger garlic paste
1 teaspoon sugar
1 (15-ounce) can canned diced tomatoes
2 tablespoons dried coriander
1 1/2 teaspoons ground Garam Masala
1/2 teaspoon ground Kashmiri Lal Mirch
1/2 teaspoon salt
1 cup water
1/4 cup heavy cream
1/2 tablespoon Kasuri Methi
To serve:
Cooked rice , roti, or naan bread

Steps:

  • Soak cashews and almonds: Soak cashews and almonds in water for at least an hour to (or up to overnight) before preparing the rest of the recipe.
  • Rest the butter chicken: Turn off the heat and uncover the pan. Stir in the remaining 1/2 tablespoon butter and the kasuri methi. Cover again, and let the dish rest for 8 to 10 minutes so the flavor of kasuri methi can marry into the butter chicken.
  • Serve: Serve the butter with a side of steamed basmati rice, roti, or naan. Leftovers will keep refrigerated, covered, for five days. You can freeze this dish in an airtight covered container or a zip-top bag for a month. Thaw and reheat in a saucepan over medium-low heat to retain the texture.

This is a lower-fat, lower-calorie version of the ever-popular North Indian Butter Chicken (Murgh Makhani) in tomato cream sauce. The butter is reduced and milk and plain yogurt are used instead of cream. It is still delicious and not difficult to prepare! The brown basmati rice boosts the fibre.

1 cup brown basmati rice, dry
2 tsp canola oil
1 cup onion(s), diced
¼ tsp turmeric, ground
2 tbsp butter
2 cloves garlic, minced
1 tbsp ginger, fresh, minced
1 tbsp garam masala
½ tsp cayenne pepper, ground
1 tsp black pepper
1 tsp cumin, ground
½ tsp salt
1 cup homogenized milk, 3.3% MF
¼ cup plain yogurt, 2-4% MF
1 cup tomato purée
1 lb boneless, skinless chicken breast(s), cut into 1 inch (2.5 cm) cubes
2 tbsp lemon juice, fresh
2 tsp brown sugar
½ cup cilantro sprigs, fresh (optional garnish)

Steps:

  • Cook brown rice in unsalted water according to package directions.
  • Heat oil over medium high heat in a heavy bottom pot. Add diced onion and sauté on medium low heat until softened and lightly golden - about 5 minutes.
  • Sprinkle with ground turmeric and sauté for another minute.
  • Add butter, minced garlic and ginger, garam masala, cayenne pepper, black pepper, ground cumin and salt and stir. Sauté for another five minutes stirring often - watch that the spices don't burn.
  • Stir in whole milk, plain yogurt and tomato purée. Adjust the heat to medium low.
  • Cut boneless chicken breast into one inch (2.5 cm) cubes. Add to pot, stir and simmer uncovered for 30 - 45 minutes or until sauce has thickened.
  • Stir in the freshly squeezed lemon juice and brown sugar.
  • Serve over hot brown rice. Garnish with sprigs of fresh cilantro.

This is a recipe I have perfected over the years and passed onto many others. The sauce is perfect when creamy and not too thick or too thin. The level of salt and spices can be suited to your taste. Garam and tandoori masala can be found in the ethnic aisle of your grocery store.

1 cup butter, divided
1 onion, minced
1 tablespoon minced garlic
1 (15 ounce) can tomato sauce
3 cups heavy cream
2 teaspoons salt

1 ½ pounds skinless, boneless chicken breast, cut into bite-sized chunks
2 tablespoons vegetable oil
2 tablespoons tandoori masala

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Melt a few tablespoons of butter in a skillet over medium heat. Stir in onion and garlic, and cook slowly until the onion caramelizes to a dark brown, about 15 minutes.
  • Meanwhile melt the remaining butter in a saucepan over medium-high heat along with the tomato sauce, heavy cream, salt, cayenne pepper, and garam masala. Bring to a simmer, then reduce heat to medium-low; cover, and simmer for 30 minutes, stirring occasionally. Then stir in caramelized onions.
  • While the sauce is simmering, toss cubed chicken breast with vegetable oil until coated, then season with tandoori masala and spread out onto a baking sheet.
  • Bake chicken in preheated oven until no longer pink in the center, about 12 minutes. Once done, add the chicken to the sauce and simmer for 5 minutes before serving.

1 onion, peeled and chopped (1/2 lb.)
2 tablespoons gingerroot, chopped fresh
1 fresh jalapeno pepper, rinsed, stemmed, seeded, and chopped (about 1 oz.)
1 tablespoon salad oil
2 teaspoons garam masala
1 (6 ounce) can tomato paste
2 cups chicken broth, fat-skimmed
1/2 cup whipping cream
1 1/2 lbs chicken breasts, boned, skinned, rinsed and cut into 3/4-inch chunks
1/2 teaspoon black pepper, coarse-ground
salt
1/4 cup butter (1/8 lb.)
6 cups basmati rice, hot cooked
lime wedge
cilantro, chopped

Steps:

  • In a 5- to 6-quart pan, combine onion, ginger, chili, and oil. Stir often over high heat until onion is lightly browned, 3 to 5 minutes. Stir in garam masala.
  • Scrape mixture into a blender; add tomato paste and chicken broth. Whirl until very smooth.
  • Pour mixture back into pan, add cream, and bring to a gentle boil over high heat (mixture is inclined to spatter). Reduce heat and simmer, stirring often, until reduced to 3 cups, about 5 minutes. Pour sauce into a bowl. Rinse and dry pan.
  • Mix chicken with pepper and sprinkle lightly with salt. Set pan over high heat; add 1 tablespoon butter and the chicken. Stir until chicken is no longer pink on the surface, 2 to 3 minutes. Add the sauce and simmer over medium heat, stirring often, until chicken is no longer pink in the center (cut to test), 3 to 4 minutes. Cut remaining 3 tablespoons butter into chunks and stir into sauce until melted.
  • Spoon chicken and sauce onto rice. Add salt to taste. Squeeze lime juice over portions. Sprinkle with chopped cilantro if desired.

A lovely combination of spices and the chicken is beautifully tender and moist. This was a recipe from a supermaket promotion, which I have slightly adapted to my own tastes. Very rich, so we do not have it too often! Served over rice and with a fresh salad to counteract the richness. A few have commented that they were not so fond of the cinnamon in this dish, and so another spice combination that is good is to leave out the cinnamon and ginger and replace with 1 teaspoon each of nutmeg and cumin.
