BUTTER BASTED RIB EYE WITH CRISPY SMASHED POTATOES AND HORSERADISH

Steps:
- Heat a large cast-iron pan over high heat.
- Salt each rib eye on 1 side. Place salt-side down in the pan and sear until brown, about 4 minutes (you may have to do in batches or use multiple pans). Salt the top side of the rib eyes and turn over. Cook until brown on the flip side, about 3 more minutes. Add the butter to the pan and allow to foam. Add garlic and thyme and baste steaks with butter. Cook, flipping every 2 to 3 minutes and continuing to baste, until desired internal temperature is reached, about 10 minutes for medium-rare. Serve with Crispy Smashed Potatoes and Horseradish.
- Preheat oil in a deep fryer to 350 degrees F.
- Cover the fingerling potatoes with cold salted water. Bring to a boil and simmer until tender, about 10 minutes. Strain. Using the back of a spatula or wooden spoon, slightly smash each potato until skin splits and potatoes are about 1/2- to 3/4-inch thick but still intact.
- Deep-fry potatoes until golden brown and crispy, 1 to 2 minutes. Remove to a sheet pan fitted with a rack to drain slightly.
- Add sour cream, horseradish and mayonnaise to a small bowl and stir to combine.
- Transfer potatoes to a serving dish. Drizzle with horseradish cream mixture.
BUTTER BROWN POTATOES
My stepmom's recipe for delicious potatoes that are crunchy/chewy on the outside and soft and fluffy in the middle.

Steps:
- Peel potatoes and cut in half lengthwise (you only need enough that will fit in the bottom of your baking dish- so start with four and see if you need to peel more to fill the dish).
- Place butter/margarine in a 9x13 baking dish and place in a preheated 350 F degree oven, and let it melt. Remove from oven and add potatoes in coating thoroughly (you may have to use a basting brush for this). Arrange potatoes cut side down, and season with the salt and pepper.
- Return dish to oven and bake for 45 minutes to an hour (depending on thickness of potatoes), or until the potatoes are golden brown and cooked through. For best results baste the potatoes with the melted butter in the bottom of the dish halfway through the cooking time.
- Note: this is a really easy side dish if you are cooking other items in the oven and can easily be made when you have to bake something between 325 and 375- just adjust the cooking time.
BUTTER SMASHED POTATOES
Yummy buttery crispy smashed potatoes. Excellent side dish, based on the recipe by Australian food writer Jill Dupleix.

Steps:
- Preheat oven to 450* F.
- Bring a large pot of water to a boil, with 2 tbsp salt. Add potatoes, and boil until quite tender, but not falling apart.
- Line two baking sheets with parchment. Once potatoes are soft, place on baking sheets, leaving ample space between them.
- Use a flat bottomed glass to smash each potato to 1/4" thickness.
- Melt butter, and drizzle or brush over potatoes. Sprinkle with salt and pepper.
- Bake for 30 minutes, until crispy. Meanwhile, fry the bacon and shred the cheese. Dice the bacon.
- After the potatoes are out of the oven, sprinkle with the bacon and cheese.
BUTTER-BASTED POTATOES
Recipe from my local grocery store that looked so tasty on the recipe card but I didn't get to taste it, as it wasn't done yet. UPDATE since I first posted: I just made this recipe and have now cut the butter back to 1/2 of what was listed, so if you love a ton of butter use 4 tablespoons, but I used 6 potatoes (which they are not that large) with the 4 tablespoons and could have had it with alot less. I also cooked it longer than 15 minutes to get the bacon crisper (probably 20-25 minutes), but they were then cooked perfectly!!

- Preheat oven to 475°F Cut potatoes into quarters; place in microwave-safe bowl. Top with butter; cover and microwave on HIGH 5 minutes. Meanwhile, slice onion thinly.
- Stir potatoes to evenly coat with butter; microwave 5 more minutes or until potatoes are hot and just beginning to soften.
- Transfer potatoes to 2-quart baking dish and arrange in single layer. Sprinkle with seasoned salt and pepper. Arrange onion slices evenly over potatoes; top with bacon slices. Bake 15-25 minutes or until potatoes are tender and bacon is browned and semi-crisp. Serve. (Makes 6 servings.).

- Preheat oven to 425 degrees F (220 degrees C).
- Cut off ends of russet potatoes, stand potatoes on end, and peel potatoes from top to bottom with a sharp knife to make each potato into a uniform cylinder. Cut each cylinder in half crosswise to make 6 potato cylinders about 2 inches long.
- Place potatoes into a bowl of cold water for about 5 minutes to remove starch from outsides; pat dry with paper towels.
- Place a heavy oven-proof skillet (such as a cast iron skillet) over high heat. Pour in vegetable oil; heat oil until it shimmers slightly.
- Place potato cylinders with best-looking ends into the hot oil, lower heat to medium-high, and pan-fry potatoes until well-browned, 5 to 6 minutes. Season with salt and black pepper.
- Flip the potatoes onto the opposite ends. As they cook, use a paper towel held with tongs to carefully blot out the oil from the skillet. Add butter and thyme sprigs to skillet.
- Pick up a thyme sprig with tongs and use it to paint butter over the top of the potatoes. Cook until butter foams and foam turns from white to a pale tan color. Season with more salt and pepper. Pour chicken stock into skillet.
- Transfer skillet to preheated oven and cook until potatoes are tender and creamy inside, about 30 minutes. If potatoes aren't tender, add 1/4 cup more stock and let cook 10 more minutes.
- Place potatoes on a serving platter and spoon thyme-scented butter remaining in skillet over potatoes. Garnish with thyme sprigs. Let cool about 5 minutes before serving.

- Put the potatoes, garlic, bay leaf, and peppercorns in a large saucepan, add cold water to cover by about an inch and season generously with salt,. Bring to a boil, lower the heat, and simmer until potatoes are fork tender, about 5 to 8 minutes depending on their size.
- Drain and discard the garlic, bay leaves, and peppercorns. Halve the potatoes, if large, toss with the butter and season with salt, and pepper, to taste. Keep warm.

BROWN BUTTER NEW POTATOES

- Heat oven to 200C/180C fan/gas 6. Bring a large pan of salted water to the boil, add potatoes and bay leaves, bring back to the boil and simmer for 10-12 mins until just tender.
- Drain the potatoes and leave to steam in a colander. Return the pan to the heat, add butter and melt gently until it turns a nutty brown colour. Remove from the heat, stir through the potatoes (don't worry if a few break up) and bay leaves, and leave to absorb for a few mins.
- Meanwhile, heat a roasting tin in the oven, tip the potatoes in and season well. Roast for 30-35 mins until golden and crisp, turning and basting halfway through. Transfer to a dish and pour over any buttery juices from the tin.

- Peel the potatoes and slice the ends off, so they’re flat. You want a decent amount of surface area for the flat bits, so be sure to slice off a good amount, so the potatoes are the same width all the way along (not tapering at the ends).
