ITALIAN SAUSAGE AND PEPPER STRATA



Italian Sausage and Pepper Strata image

Bake up breakfast, lunch or dinner with this cheesy, eggy sausage-and-pepper casserole.

Unsalted butter, at room temperature, for the baking dish
1 tablespoon olive oil
12 ounces sweet Italian sausage, casings removed
2 red bell peppers, chopped
Kosher salt and freshly ground black pepper
3 cups half-and-half
1/4 cup grated Parmesan
2 tablespoon chopped fresh flat-leaf parsley
10 large eggs
One 12-ounce loaf rustic Italian bread, preferably stale, cut into 1-inch cubes (about 6 cups)
2 cups shredded mozzarella

Steps:

  • Butter a 9-by-13-inch baking dish.
  • Heat the olive oil in a large skillet over medium-high heat. Add the sausage and cook, breaking up any clumps with a wooden spoon, until brown, about 5 minutes; transfer to a bowl with a slotted spoon. Add the bell peppers to the skillet with 1/4 teaspoon salt and cook, stirring occasionally, until tender, about 4 minutes. Set aside.
  • Whisk together the half-and-half, Parmesan, parsley, eggs, 1 1/2 teaspoons salt and a few grinds of pepper in a medium bowl.
  • Layer half of the bread cubes in the prepared baking dish. Sprinkle with 1 1/2 cups of the mozzarella, followed by the sausage and peppers. Cover with the remaining bread cubes and pour the custard evenly over the top. Cover with plastic wrap and let soak at room temperature 30 minutes to 1 hour. (To make ahead, after adding the custard, cover with plastic wrap and refrigerate overnight and then let the strata sit at room temperature while the oven preheats.)
  • Preheat the oven to 325 degrees F. Remove the plastic and sprinkle with the remaining 1/2 cup mozzarella. Bake until slightly puffed and no longer jiggly in the center, 40 to 50 minutes. Let stand 5 minutes before serving.

2 cups sliced fresh mushrooms
8 eggs, beaten
10 cups cubed, day-old bread
3 cups whole milk
2 cups shredded Cheddar cheese
1 ½ cups cubed Black Forest ham
1 (10 ounce) package frozen chopped spinach, thawed and drained
2 tablespoons all-purpose flour
2 tablespoons mustard powder
1 teaspoon salt
2 teaspoons butter, melted
2 teaspoons dried basil

Steps:

  • Generously grease a 9x13-inch casserole dish.
  • Heat a skillet over medium heat; cook and stir sausage until crumbly and completely browned, about 10 minutes. Transfer cooked sausage to the prepared casserole dish.
  • Cook and stir mushrooms in the same skillet over medium heat until liquid has been released and mushrooms are lightly browned, 5 to 10 minutes; drain.
  • Mix mushrooms, eggs, bread, milk, Cheddar cheese, ham, spinach, flour, mustard powder, salt, butter, and basil together in a large bowl; pour over sausage. Cover casserole dish and refrigerate, 2 hours to overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake in the preheated oven until a knife inserted into the center of the strata comes out clean, 60 to 70 minutes.

16 bread, slices crust removed, lightly toasted
1 1/2 lbs lean ground beef
1 cup finely chopped onion
1/3 cup finely chopped celery
1/2 teaspoon salt
1/4 teaspoon pepper
3 cups grated cheddar cheese
4 large eggs
2 tablespoons prepared mustard
2 cups milk

Steps:

  • Arrange 8 bread slices in single layer in greased 9x13 in pan.
  • Scramble-fry ground beef, onion, and celery in frying pan until beef is no longer pink. Drain. Sprinkle with salt and pepper. Mix. Layer over bread slices.
  • Sprinkle 2 cups of cheese over beef mixture. Cover with remaining 8 bread slices.
  • Beat eggs, mustard and milk together in medium bowl until frothy. Slowly pour onto bread slices. Cover. Chill overnight.
  • Remove cover.
  • Sprinkle with remaining cup of cheese. Bake uncovered, in 350 degree over for about 45 minutes until set.

I found this recipe in Paula Deen's magazine. It calls for Canadian bacon, but I didn't have any available and a run to the market is over 30 minute drive, so used regular bacon, crumbled. It still turned out to be delicious. I think it would be the perfect dish for just any meal, don't just use this for breakfast or brunch, it made a fantastic dinner. This needs to be made ahead as it needs to sit from 8 hours to overnight, so make it before leaving for work, and come home to an easy cook meal.

1 small onion, chopped
6 English muffins, cut in half
1 (8 ounce) container chive & onion cream cheese

Steps:

  • Lightly grease a 13x9x2-inch baking dish.

Layer English muffins, Canadian bacon, tomatoes, red peppers, 2 cups cheese, and onion into prepared baking dish. In a medium bowl, whisk together eggs, milk, chives, salt and pepper. I've copied (and varied) a few breakfast strata recipes and french toast casseroles over the years with berries, meat, and cheese but never tried with one of my childhood favorites...Peanut Butter and Banana until recently. Boy is it good...but not for the calorie counters! It is so decadent that I feel as if any added syrup or powdered sugar just takes it right over the top.

8 large eggs
4 large egg yolks
1 cup cream
1 1/2 cups milk
1/2 cup mascarpone cheese, softened
1 teaspoon ground cinnamon
1/2 teaspoon vanilla
1/4 teaspoon salt
12 slices bread, dried french loaf preferably cut into 1/2 inch slices
1 (16 ounce) jar peanut butter, preferably crunchy
2 bananas, sliced
1/2 cup walnuts, chopped and toasted
2 tablespoons butter, cut into tiny squares

Steps:

  • Make "Peanut Butter and Banana" Sandwiches with the bread, peanut Butter, and bananas. Place in a 9x9 inch baking dish. Don't be afraid to cut in half or crunch together to make them fit in all areas of the pan. Sprinkle mixture with the toasted walnuts and butter chunks.
  • Place softened Mascarpone cheese in a large bowl. In a separate bowl, mix together eggs, egg yolks, milk, cream, cinnamon, vanilla, and salt. Add egg mixture to to the cheese mixture in small scoops. Whisk well after each scoop. This will help incorporate the cheese with the eggs to build a smooth custard. Repeat this process until all ingredients are incorporated and a thick pretty custard is the result.
  • Pour the custard over the Peanut Butter and Banana Sandwiches. Press a bit to ensure that all pieces of bread are covered. Refrigerate for a few hours or up to overnight to ensure the flavors melt together.
  • You can also freeze this mixture for a future purposes sealed well in foil and plastic.
  • Bake mixture (thawed) at 350 degrees for about 40 minutes (or until custard is set and top is browned). I like to keep it covered in foil for the first 30 minutes and remove the foil at the end to allow the top to brown.
  • Serve with -- well -- whatever you want! I'm not a big fan of super sweet breakfasts, so I will eat this plain. My friends and family will sprinkle powdered sugar or add butter & maple syrup.

BREAKFAST STRATA WITH COUNTRY SAUSAGE

1 tablespoon canola oil, plus more for the dish
1/2 pound bulk pork or turkey country sausage
1 onion, preferably Vidalia, chopped
1 red bell pepper, cored, seeded and chopped
1 yellow bell pepper, cored, seeded and chopped
2 cloves garlic, very finely chopped
2 baguettes, cubed
1/2 cup grated Parmigiano-Reggiano cheese (about 1 1/2 ounces)
6 large eggs
2 1/2 cups whole milk
1 tablespoon chopped fresh sage
1 tablespoon chopped fresh flat-leaf parsley
Coarse salt and freshly ground black pepper

Steps:

  • Brush a large gratin dish with some of the oil.
  • To cook the sausage, in a large skillet, heat the remaining 1 tablespoon of oil over medium heat. Add the sausage and cook until it begins to brown, 3 to 5 minutes. Add the onion and red and yellow bell peppers and saute until the onion is golden, about 5 minutes. Add the garlic and cook until fragrant, 45 to 60 seconds.
  • To assemble the strata, place half of the bread cubes in the prepared gratin dish and top with half of the sausage mixture. Sprinkle 1/4 cup of the grated cheese over the sausage mixture and top with the remaining bread cubes and sausage.
  • Whisk together the eggs, milk, sage, and parsley in a medium bowl. Season with salt and pepper. Pour the custard over the strata. Cover with plastic wrap and refrigerate for at least 3 hours and up to 12 hours.
  • Preheat the oven to 350°F. Let the chilled strata stand at room temperature for 20 minutes.
  • Bake the strata for 30 minutes. Remove from the oven and sprinkle with the remaining 1/4 cup cheese; continue baking until the strata is puffed and golden brown, an additional 20 to 25 minutes. (If the top of the strata starts to get too brown, cover it with aluminum foil.) Remove to a rack to cool slightly. Serve hot or warm.

Strata is the bread pudding of savory egg dishes. This super-easy treat generally includes cubes or slices of bread that have been soaked in custard then baked in a casserole dish. This is a great make- ahead dish. It tastes best if you prepare it the day before and let it soak overnight before baking. Like many egg dishes, a strata can incorporate all sorts of different ingredients, so there's a lot of flexibility here.

5 cups French bread cubes (with crust)
10 large eggs
1 quart whole milk
1 teaspoon dry mustard
1 teaspoon salt

Steps:

  • Decide what filling option you would like to use.
  • Option 1- Bacon, cheddar, mushroom and tomato: Sprinkle 2 cups grated cheddar cheese over the bread cubes. Distribute 1 cup crumbled cooked bacon (6-8 strips), 1 cup sautéed sliced white or shitake mushrooms, and 1 cup chopped tomatoes over the egg mixture.
  • Option 2- Chicken, broccoli, corn, chilies, and jack: Sprinkle 2 cups Monterey Jack cheese over the bread cubes. Distribute 1 cup frozen corn kernels, 1 cup cooked broccoli florets, (2) 4.5 ounce cans (drained) chopped green chilies, and ½ cup shredded cooked chicken over the egg mixture.
  • Option 3- Ham, Swiss and Asparagus: Sprinkle 2 cups grated Swiss cheese over the bread cubes. Distribute 1 cup blanched asparagus pieces, 1 cup cubed ham and ½ cup caramelized onions over the egg mixture.
  • Option 4- Fontana, Spinach, Salami and Roasted Garlic: Sprinkle 2 cups Fontana cheese over the bread cubes. Distribute 1 cup frozen chopped spinach, 1 cup Italian salami (cut into match sticks) and ½ cup roughly chopped roasted garlic cloves (see below) over the egg mixture.
  • Option 5- Vegetable-Blue Cheese: Sprinkle 1 cup crumbled blue cheese over the bread cubes. Distribute 1 cup cooked cubed celery root, 1 cup sautéed sliced zucchini and ½ cup sautéed sliced onions over the egg mixture.
  • Butter a 9 x 13 inch baking dish. Put the bread cubes in the dish and sprinkle them with the cheese. In a large bowl, whisk together eggs, milk, mustard and salt. Pour the egg mixture over the bread cubes. Sprinkle the filling ingredients over the egg mixture and fold them gently. Cover and chill for at LEAST 4 HOURS AND UP TO 24 HOURS.
  • Heat the oven to 350 degrees.
  • Uncover the baking dish and bake for 60 minutes, until the mixture has puffed up slightly and is golden brown on top, and the strata doesn't shimmy with uncooked custard when you shake the pan. Tent the dish with foil if the top is browning too quickly. Let cool for 5 minutes before serving. Serve by the spoonful, using a large serving spoon.

4 cups Herbed Croutons (page 243) or your favorite store-bought croutons
8 ounces semihard cheese (page 23), shredded (2 cups)
4 ounces semisoft cheese (page 23), shredded (1 cup)
1/2 ounce (1 slice) thinly sliced prosciutto, diced
3 green onions (white and green parts), or 1 bunch chives, thinly sliced
1/2 cup thinly sliced drained sun-dried tomatoes in oil
3 ounces Parmesan or other hard grating cheese (page 23), grated (3/4 cup)

Steps:

  • Preheat the oven to 325˚F.
  • In a large bowl, whisk together the eggs, milk, salt, and pepper. Fold in the croutons and semihard and semisoft cheeses and set aside.
  • In a small skillet, sauté the prosciutto until golden and crisp. Using a slotted spoon, remove the prosciutto from the skillet and let it cool on a plate lined with paper towels. Pour the drippings that remain in the skillet into a 9 × 13-inch baking dish, using a spatula to spread the oil until the dish is lightly coated.
  • Add the cooled prosciutto and the green onions and sun-dried tomatoes to the crouton mixture. Gently fold the ingredients until they are evenly distributed. Spoon the mixture into the baking dish and pat it down. (The croutons should form a bumpy surface.) Top with the Parmesan.
  • Bake for 35 minutes, rotating the pan after 20 minutes. Bake until the top of the dish is very brown and the middle is springy. Let the strata cool for 10 minutes before serving.
  • The strata tastes best the day it is prepared; otherwise, the croutons become soggy.

OVERNIGHT MEXICAN BREAKFAST STRATA

2 medium onions, thinly sliced

1 teaspoon dried oregano
½ teaspoon ground paprika
½ cup crumbled queso fresco

Steps:

  • Cook and stir chorizo in a large skillet over medium heat until browned and crumbly, 5 to 7 minutes. Transfer to a bowl using a slotted spoon, reserving 1 tablespoon of drippings in the pan. Add onions to the skillet and cook, stirring frequently, until tender, about 10 minutes. Stir in poblano peppers and bell pepper; cook until just tender, about 5 minutes. Remove from heat and return chorizo to the skillet.
  • Lightly grease a 3-quart rectangle or oval casserole dish. Spread 1/2 of the bread into the prepared dish and top with 1/2 of the chorizo mixture. Repeat with remaining bread and chorizo.
  • Whisk eggs, milk, oregano, and paprika together in a large bowl. Pour egg mixture evenly over bread and sausage. Cover and chill, 8 hours to overnight.
  • Preheat the oven to 325 degrees F (165 degrees C).
  • Bake in the preheated oven, covered, for 30 minutes. Uncover and bake until an instant-read thermometer pressed into the center reads 170 degrees F (degrees C), 30 to 45 minutes more. Sprinkle with queso fresco during the last 5 minutes of baking. Let stand for 10 minutes and sprinkle with cilantro.

3 cups milk
1 1/2 tablespoons Dijon mustard
Coarse salt and ground pepper
1/4 teaspoon hot sauce, such as Tabasco

Steps:

  • Butter a 2-quart shallow baking dish (oval or square); set aside. In dish, alternately arrange, cut side down, muffin halves and Canadian bacon. Sprinkle with cheddar and Parmesan cheeses. Set aside.
  • In a large bowl, whisk together eggs, milk, mustard, 1/2 teaspoon salt, a pinch of pepper, and hot sauce until combined. Pour over muffins and bacon; cover tightly with plastic wrap. Refrigerate at least 2 hours and up to overnight.
  • Preheat oven to 350 degrees. Place baking dish on a rimmed baking sheet; remove plastic wrap. Bake until puffed and set in the center (see note below), about 1 hour and 30 minutes. (Tent loosely with foil if strata starts to brown too quickly.) Let stand 10 minutes before cutting and serving.
