GRILLED LOADED NACHOS
These clever foil packets are quick to put together and cook up perfectly for a summer barbecue. And since they are personal-size, your crowd can eat them with our suggested toppings or their favorites.

- Prepare a grill for medium-low heat. Tear off 4 18-inch long pieces of heavy-duty foil and put them on a work surface, shiny-side up, with a long end of each piece closest to you. Spray evenly with cooking spray.
- Pile a quarter of the chips on the left side of 1 piece of foil, sprinkle with a quarter of the chorizo, Cheddar and Monterey jack. Dollop with a quarter of the refried beans. Fold over the empty-side of foil and seal the edges to make a packet. Repeat with the remaining foil, chips, chorizo, Cheddar, Monterey jack and beans.
- Place the packets on the grill and cook, covered, until the cheese is melted and the chips are hot, 12 to 15 minutes.
- Remove the packets to a large platter. Careful of steam, open the packets and top each with 1 tablespoon of cilantro, guacamole, jalapenos, salsa and sour cream.
BULL'S EYE BREAKFAST
This breakfast has many names, but I first heard it called a Bull's Eye, and my mom often made it for us before we left for the bus stop when we were in elementary school. "Breakfast is the most important meal of the day!" she would ALWAYS say, which is a phrase I got tired of hearing when I was a kid but one I practically live by now. This recipe can easily be doubled, tripled, quadrupled...as many as your griddle or pan allows.

Steps:
- Heat a griddle or pan to medium-high heat, and butter both sides of a slice of bread. I find it it easiest for cleanup (and to avoid buttering the rest of my kitchen) to do this step on a sheet of wax paper.
- With a biscuit cutter, the rim of a glass, or just a knife, cut a large circle out of the center of the bread.
- Place the bread and the bread circle in the heated pan (the butter should make a "sizzling" sound).
- Once you hear the "sizzling" sound, crack the egg directly into the pan, in the middle of the piece of bread from which you cut the circle.
- When the white of the egg is not see-through anymore, turn the egg/bread combo over. Turn the bread circle over also.
- Cook until bread is brown on both sides (like toast) and egg in the middle of egg/bread combo is over-easy (the white is cooked on both sides while the yolk is liquid).

- Tip tortilla chips on to a baking tray, pour over salsa and scatter over a few sliced spring onions.
- Grate over a good chunk of cheese (fontina is perfect, but cheddar will do). Add a pinch of crushed chilli flakes, then put under a hot grill for about 3 minutes to melt the cheese. Serve with soured cream or guacamole (optional).

- Heat greased grill to medium heat.
- Brush fish with 2 Tbsp. barbecue sauce. Place fish on grill grate; cover with lid. Grill 3 to 4 min. on each side or until fish flakes easily with fork. Cut fish into bite-size pieces.
- Spread tortilla chips onto large platter. Top with fish, beans and cheese. Drizzle with remaining barbecue sauce; top with spoonfuls of sour cream. Sprinkle with cilantro.
