1 stick unsalted butter, plus more for the baking sheet
16 slices bacon
1 1/2 cups sugar
3/4 cup light corn syrup
1 1/2 cups mixed cocktail nuts
Kosher salt
1 1/2 teaspoons vanilla extract
1 1/2 teaspoons baking soda

Steps:

Line a large rimmed baking sheet with foil and generously butter it. Working in batches, cook the bacon in a large skillet over medium heat, turning occasionally, until crisp, 9 to 11 minutes. Drain on paper towels, then break each slice in half.
Combine the sugar, corn syrup and 1/2 cup water in a medium heavy-bottomed saucepan. Cook, stirring occasionally, over medium-high heat until a candy thermometer registers 260 degrees F, 10 to 12 minutes.
Remove from the heat and add the butter, nuts and 1 teaspoon salt. Stir once, then continue cooking over medium-high heat, undisturbed, until the syrup turns golden and the candy thermometer registers 285 degrees F, 5 to 10 more minutes. Carefully stir in the prepared bacon, the vanilla and baking soda. (The mixture will foam a bit.) Cook, stirring several times, until the foam subsides and the mixture darkens slightly, 1 to 2 more minutes.
Pour the mixture onto the prepared baking sheet, then carefully tilt to spread it into a thin layer. Use tongs to redistribute the bacon pieces if necessary. Let cool completely, then break into pieces.

Ingredients

7 ounces graham crackers (1/2 box )
1/2 cup butter (1 stick)
1/2 cup margarine (1 stick)
1/2 cup sugar
1 cup pecans (chopped)

Steps:

Line a cookie sheet with aluminum foil, 10 ½ x 15 ½.
Cover with graham crackers (whole honey graham crackers).
Chop 1 cup pecans and sprinkle evenly over crackers.
In a boiler, melt 1 stick butter and 1 stick of margarine (only this combination will do!).
Add ½ cup sugar, stirring constantly
Boil for exactly 2 minutes.
Pour or spoon over crackers and pecan (I find it better to use a big spoon).
Bake at 350 for approximately 12 minutes.
Cool and break into pieces.
1 box of graham crackers is enough to make 2 batches of brittle.
You can also try it with Oatmeal Crunch Graham Crackers or Chocolate Graham Crackers.

1 cup salted dry roasted peanuts
1 cup shelled pistachios
1 cup pecan halves
1 cup sugar
1 cup unsalted butter (2 sticks), cut into chunks
1/3 cup light corn syrup
2 teaspoons honey

Steps:

Put the nuts, sugar, butter, corn syrup, and honey in a saucepan over medium-high heat. Stir constantly with a wooden spoon until it becomes a nice walnut color and thickens, about 10 to 12 minutes. Quickly pour onto a silpat or foil lined baking sheet and spread the brittle to an even thickness of about 1/3-inch with the back of the spoon.
Cool for 3 or 4 minutes then score the brittle with a sharp knife into about 24 (2-inch) squares. Once the brittle has cooled completely, snap along scored marks.
