EASY MIDDLE EASTERN RICE PUDDING RECIPE



Easy Middle Eastern Rice Pudding Recipe image

This easy Middle Eastern rice pudding recipe is a new favorite in my household! It's a basic stove-top rice pudding infused with vanilla, cinnamon, and cloves. Make the garnish or toppings your own, or use honey and crushed nuts like I do. See my step-by-step tutorial!

2 cups 2% milk
1 cup half and half (or heavy cream, if you prefer)
2 tsp vanilla extract
2 cinnamon sticks
6 whole cloves
1 cup medium grain rice
3 tbsp sugar
1/2 cup water, more as needed
1/3 cup evaporated milk
2 tbsp unsalted butter, room temperature
Ground cinnamon for serving
Honey for serving
Crushed pistachios and walnuts for serving

Steps:

  • Place the milk, half and half, vanilla extract, cinnamon sticks and cloves in a medium saucepan. Heat on high and watch carefully. Just before the milk mixture boils, remove from the heat.
  • Cool completely and refrigerate for a couple of hours or overnight so that the flavors develop and intensify (if you don't have time, you can proceed from here).
  • Remove the milk mixture from the fridge and set in room temperature for a few minutes. Add the rice, sugar and water. Bring the mixture to a boil on high heat, then simmer for 30-40 minutes, stirring regularly.
  • As the rice cooks, keep stirring regularly. The rice mixture will dry, add a little water (2 tbsp or so at a time) to help it cook. Continue to stir and add water as needed until the rice cooks completely. The rice mixture should be moist, and the rice should be fully cooked but maintain a little bite.
  • Remove from the heat. Stir in the butter and evaporated milk. Carefully remove the cinnamon sticks and cloves, then transfer to small serving bowls or even 3-oz mason jars.
  • At this point you can cover and refrigerate until ready to serve.
  • When ready, add a little evaporated milk to each bowl to loosen the rice pudding, if you find that it harden in the fridge. Heat briefly in the microwave, then top the rice pudding bowls with a pinch of ground cinnamon, honey, and the crushed nuts. Serve warm or at room temperature. Enjoy!

1 cup Brown lentils (best to use the dry type not canned)
1/2 cup Coarse cracked wheat (bulgur)
4 medium Finely diced onions (brown or white variety)
1/4 - 1/2 cup Olive oil
3 cups Water
1/3 tbsp Salt (or to taste)

Steps:

  • Check lentils for stones that need to be discarded
  • Wash and soak for a couple of hours (I do this to speed up the cooking process)
  • After soaking lentils, discard and wash lentils to rid any excess sediment
  • Place lentils in a large pot with water, bring to boil
  • Cover the pot of lentils and simmer over low heat about 10 minutes or until lentils are par cooked.
  • Drain par cooked lentils in a colander and save liquid. You will use this later
  • Heat oil in a saucepan over medium heat
  • Cook the onions for about 30-40 minutes, stirring every few minutes until they are dark golden brown. (You'll need to be patient for this step - the onions must be like this as the dish relies on the taste of the caramelised onion)
  • Once onions are a dark golden colour, pour the liquid from the lentils into the onions and let it simmer for a couple of minutes to combine.
  • Add the cooked lentils, salt (to taste) and cracked wheat (bulgur), stir through thoroughly.
  • Cover the saucepan and cook over very low heat for 25-30 minutes.

Turkish style bulgur pilaf is a classic hearty and healthy side dish dish that is very easy to make. It's a great alternative to rice and can be served with many dishes.

2 cups bulgur (coarse)
2 tbsp olive oil
1 large onion (diced)
3 cloves garlic (minced)
1 green pepper (diced)
3 roma tomatoes (chopped)
1 1/2 tbsp tomato paste
1/2 tsp salt
1/2 tsp black pepper
3 1/2 cup water

Steps:

  • Place the bulgur in a bowl and rinse a few times. Set it aside.
  • Heat the olive oil in a pot over medium heat. Sauté the onion until translucent and then add the minced garlic. Cook for a minute.
  • Add in the diced green pepper and cook for a few minutes until it softens.
  • Add in the chopped tomatoes and stir well. Cook until they start releasing their juice.
  • Add the tomato paste and stir well so it combines with the other ingredients.
  • Add the salt and pepper and add in the rinsed bulgur. Stir well.
  • Turn the heat to medium high and add in the water. Once it comes to a simmer, lower the heat to medium, cover with a lid and cook for about 20-25 minutes until the water is almost completely evaporated.
  • Wrap the lid in a clean kitchen towel and place it on the pot. Turn the heat to medium low and cook for another 10 minutes.
  • Turn the heat off the let the bulgur sit for 5 minutes untouched, then fluff it with a fork and serve.

½ cup dry garbanzo beans
½ cup dry white beans
2 cups fine bulgur
½ cup raisins
15 cups water
3 cups white sugar
¼ cup dried apricots
¼ cup orange peel, chopped
5 whole cloves
2 tablespoons sesame seeds, toasted
2 tablespoons chopped walnuts
2 tablespoons chopped pistachio nuts
2 tablespoons dried currants
1 tablespoon ground cinnamon

Steps:

  • Place the garbanzo beans, white beans, bulgur, and raisins in separate bowls and add water to cover. Let stand overnight.
  • The next day, combine the garbanzo beans and white beans in a saucepan with water to cover. Bring the water to a boil; reduce heat to low and simmer, covered, until the beans are tender, 1 to 1 1/2 hours.
  • Drain the wheat and transfer it to a large saucepan. Add the 15 cups water (3 quarts plus 3 cups) and bring to a boil. Reduce the heat to low and simmer until tender, about 15 minutes, skimming and discarding any foam that appears.
  • When the wheat has thickened, stir in the sugar and bring the mixture to a boil. Drain the cooked beans and add them to the wheat mixture. Stir in the raisins, apricots, orange peel, and cloves. Reduce the heat and simmer until the mixture thickens and the fruit is tender, about 15 minutes.
  • Pour the pudding into individual serving bowls. Garnish with toasted sesame seeds, chopped walnuts, chopped pistachios, currants, and cinnamon. Allow the pudding to cool and then serve.

2 tablespoons butter or 2 tablespoons margarine
1 cup bulgur
1 cup long-grain rice
1 quart chicken broth
6 tablespoons clarified butter
4 teaspoons black mustard seeds
1 1/2 teaspoons turmeric
1 teaspoon salt
1/4 cup fresh lemon juice

Steps:

  • Melt 2 tablespoons butter in heavy saucepan over medium heat. Add bulgur and rice and stir for 5 minutes or until rice browns slightly.
  • Mix in broth and bring to a boil. Reduce heat to low, cover and cook for 20 minutes or until liquid is absorbed.
  • Heat clarified butter in heavy skillet over medium heat. Add mustard seed and cook until mustard seeds begin to pop.
  • Add turmeric and salt, then the bulgur/rice mixture. Stir until hot. Stir in lemon juice.
  • Serve immediately.

1 cup fine bulgur (medium bulgur for a more coarsely textured pudding)
1 cup 2% low-fat milk
1/4-1/3 cup honey, to taste
1 teaspoon ground cinnamon

1 cup walnuts, toasted and chopped
1 cup pitted dates, chopped
1/3 cup dried currants or 1/3 cup raisins

Steps:

  • Combine the bulgur and 2 cups of water in a medium saucepan. Bring to a boil over high heat, reduce the heat to medium, and cook uncovered, stirring frequently, until the water is absorbed, 3 to 5 minutes.
  • Stir in the milk, 1/4 cup of honey, cinnamon, ginger, and salt. Bring the mixture to a boil. Reduce heat to medium and continue cooking, uncovered, at a gentle boil, stirring occasionally, until the mixture develops the consistency of porridge, about 5 minutes.
  • Stir in the walnuts, dates, and currants.
  • Sweeten with additional honey, if desired.
  • Serve warm in bowls.
  • Top with a scoop of ice cream, if you wish.

  • Pour the hot pudding into a buttered 8-9 inch square pan.
  • Cool it to room temperature.
  • Cover with plastic wrap and refrigerate for at least 3 hours.

  • Use hazelnuts instead of walnuts and figs instead of dates.
