Bulgarian Mixed Salad image

This is a salad for people who love onions and olives. You might want to use Vidalia or Maui onions for a slightly sweeter flavor. The preparation time includes time the onions and cucumber stand. The recipe comes from "The Best of Slavic Cooking" by Alojzije Kapetanovic and Ruzica Kapetanovic.

2 cucumbers
1 tomatoes, sliced
1 onion, thinly sliced
1 green pepper, sliced
1/4 cup black olives, chopped
2 tablespoons red wine vinegar
1/4 teaspoon paprika
5 tablespoons olive oil
2 garlic cloves, minced
salt and pepper

Steps:

  • Peel the cucumbers and cut them in half lengthwise, then cut into slices.
  • Salt the cucumbers and the onions separately and let stand for 30-45 minutes.
  • For the dressing, mix the vinegar, paprika, olive oil and garlic.
  • Drain the cucumbers, and combine them with the onion, green pepper and olives.
  • Pour 2/3 of the dressing over the salad and toss.
  • Place the sliced tomato on top and drizzle remaining dressing over the tomatoes.

This super quick Bulgarian Shopska Salad is one of the easiest, coolest, and tastiest three ingredient salads in the world! All you need is fresh tomato, cucumber and Bulgarian feta or sirene cheese. It's the perfect side salad or light, refreshing lunch.

1 tomato (large, diced)
1 cucumber (continental, diced)
100 g sirene cheese (or substitute with feta)
capsicum / bell pepper (diced)
marinated olives
fresh parsley
vinegar (balsamic or red wine)
olive oil
Salt and pepper

Steps:

  • Pop your diced tomatoes and cucumber in a serving bowl and give everything a stir until evenly distributed.
  • Optional: Add in your optional ingredients such as red pepper, olives, olive oil, vinegar, fresh parsley and salt & pepper if you're using them and stir through again.
  • Let it snow! Grate that cheese right over the bowl until well and truly covered.
  • Serve immediately (or store for around 30 mins in the fridge).

4 -5 large potatoes, boiled
salt and pepper
2 -3 spring onions
1/2 a lemon, juice of
olive oil
fresh parsley or dill

Steps:

  • In a salad bowl - add the finely chopped spring onions, salt, pepper to taste, the lemon juice and olive oil, and mix gently.
  • Cut the potatos into cubes and add the the salad bowl.
  • Gently mix, sprinkle with parsley or dill if you serve the salad with fish.
