BUFFALO CHICKEN ROLL-UPS



Buffalo Chicken Roll-Ups image

Buffalo chicken roll-ups are a spicy and fun appetizer that are so quick to whip together and are far less messy than the classic buffalo wings.

8 ounces cream cheese (softened)
1/2 cup wing sauce (may also substitute hot sauce with a tablespoon of butter)
2 tablespoons sour cream
1 tablespoon ranch seasoning
2 cups shredded cooked chicken (from chicken breast or a rotisserie chicken)
1/4 cup blue cheese (crumbled)
1/2 cup cheddar cheese or cheddar cheese blend (shredded)
1 scallion (thinly sliced)
4 (8-inch) large flour tortillas
Salt and pepper (if desired)

Steps:

  • In a large bowl combine the softened cream cheese, wing sauce, sour cream, and ranch seasoning with a whisk or hand mixer until they are completely blended and smooth. Scrape down the sides of the bowl with a spatula.
  • Gently fold in the shredded cooked chicken, blue cheese crumbles, shredded cheddar, and sliced scallions into the cream cheese mixture until they are combined. Taste the mixture and add salt and pepper if needed.
  • Spread about a fourth of the mixture onto one of the tortillas, completely covering the surface.
  • Starting at one end, roll the tortilla into a tight log. Wrap the log in plastic wrap and place in the refrigerator for an hour or up to 1 day, so that the log will be easier to cut.
  • Place the tortilla roll seam down on a cutting board. Slice the rolled up tortilla into roughly eight rounds. Place each one cut side up on a platter.
  • Serve with more sliced scallions and wing sauce as a garnish if you wish! Use toothpicks to serve or layer individually on a platter.

2 cup shredded cooked chicken
8 ounces light cream cheese, softened
1/2 cup Buffalo wings sauce (or ranch dressing)
1/4 cup blue cheese, crumbled
1 cup cheddar cheese, shredded
2 tablespoon sour cream
4 (6 inch) large flour tortillas
2-3 green onions, thinly sliced (I prefer white part only)

Steps:

  • In a mixing bowl combine the blue cheese,cream cheese,sour cream and the cheedar cheese. Toss in chicken with 1/2 cup buffalo wings sauce (Or ranch dressing) Lay a tortilla out on a plate and spread an even layer of the chicken and cheese mixture all the way to the edges (about 2 to 3 tbsp). Roll up tortilla tightly and place on a plate and then repeat until all the ingredients have been used. Pop into the fridge to chill for 2 hour. Slice each rolled tortillas off the ends and set aside. Garnish with sliced green onion. * - make sure your tortillas are at room temperature before you roll them so they are nice and flexible. * -Smaller tortillas may be used, however you will need to adjust the amount of chicken and cheese mixture you add to each tortilla. * -If time is an issue, you can skip the refrigeration before slicing or refrigerate for less time. However, for best results, refrigeration is recommended.

  • Wrap tortillas up jelly-roll style. Pop into the fridge to chill for 30 mintues to an hour. If serving later, individually wrap rolls in plastic (before slicing) and chill in the fridge. Cut into 1/2-inch pinwheels when you're ready to serve. Garnish with sliced green onion.
