SWEET AND SPICY MEATBALLS



Sweet and Spicy Meatballs image

Number Of Ingredients 12

1 pound ground beef
1/2 pound ground pork
1/2 cup panko breadcrumbs
1 large egg, lightly beaten
3 cloves garlic, minced
1 large yellow onion, finely diced
1/2 teaspoon smoked paprika
1/2 teaspoon kosher salt
1/2 teaspoon freshly cracked black pepper
Two 10-ounce jars red pepper jelly or hot pepper jelly
1/2 cup orange juice
2 tablespoons soy sauce

Steps:

  • Preheat the oven to 375 degrees F.
  • Mix the meats, panko, egg, garlic, onion, paprika, salt and pepper in a large bowl with your hands until completely combined. Scoop mixture into heaping tablespoons, then roll into neat balls. Transfer to a 9-by-13-inch baking dish. Bake until cooked through, 25 to 30 minutes.
  • Add pepper jelly, orange juice and soy sauce to a small pan. Cook over medium-high heat until it simmers, then remove from the heat. Pour jelly sauce over the meatballs and toss to coat.

The meatballs have all the flavors of hot wings with less mess. They're also the perfect party food: make them ahead of time and keep warm in the hot sauce until ready to serve.

Nonstick cooking spray
2 ounces blue cheese, coarsely crumbled
1 cup whole buttermilk
1/2 cup mayonnaise
1/4 cup sour cream
2 tablespoons lemon juice
1 teaspoon garlic powder
Kosher salt and freshly ground pepper
2 stalks celery
1/2 small onion
1/2 green bell pepper
2 pounds ground chicken (not chicken breast)
1 cup dry breadcrumbs
2 large eggs
2 teaspoons Miss Brown's House Seasoning (see recipe below)
1/2 cup (1 stick) unsalted butter
1/4 cup hot sauce
2 teaspoons Worcestershire sauce
Celery sticks
Chopped fresh flat-leaf parsley, for garnish
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon sweet paprika
1 teaspoon freshly ground black pepper
1 teaspoon salt

Steps:

  • Preheat the oven to 400 degrees F. Coat two large, rimmed baking sheets with nonstick cooking spray.
  • For the Blue Cheese Sauce: Stir together the blue cheese, buttermilk, sour cream, mayonnaise, lemon juice and garlic powder in a small bowl. Season with salt and pepper to taste. Refrigerate until ready to serve.
  • For the meatballs: Pulse the celery, onion and bell pepper in a food processor until finely minced. Combine the minced vegetables with the ground chicken, breadcrumbs, egg and House Seasoning (see recipe below) in a large bowl. Shape the mixture into 48 1-inch meatballs and place 1 inch apart on the prepared baking sheets. Bake until the meatballs begin to brown, about 10 minutes. Turn the meatballs. Cook until the meatballs are browned and cooked through, about 10 more minutes.
  • While the meatballs bake, combine the butter, hot sauce and Worcestershire sauce in a medium saucepan over medium heat. Cook until the butter is melted. Add the cooked meatballs to the saucepan and turn to coat. Cover and keep warm until ready to serve. Serve the meatballs with the blue cheese sauce, celery sticks and sprinkle with parsley.
  • Stir together the garlic powder, onion powder, sweet paprika, pepper and salt in a small bowl. Store in an airtight container.

In an attempt to reduce the fat in Buffalo wings, and wrestling with a many wing and trying to remove the skin. Finally a surrender and a take on the traditional. I found this recipe in Woman's Day magazine. I have not tried this recipe, but I'm posting this for safe keeping.

1 lb ground chicken
1 cup fresh breadcrumb
1/3 cup sliced scallion
1 teaspoon smoked paprika
1 teaspoon minced garlic
1/2 teaspoon salt
hot pepper sauce, to taste
reduced fat blue cheese dressing
raw vegetable dippers

Steps:

  • Heat the oven to 475. Line a rimmed baking sheet with nonstick foil.
  • In a bowl, mix chicken, bread crumbs, scallions, paprika, garlic, and salt. Roll into 32 balls; place on pan.
  • Bake 10-12 minutes until browned and cooked through. Remove from oven and drizzle meatballs with hot pepper sauce to taste; toss to coat.
  • Serve on toothpicks to dip into blue cheese dressing. Be sure to include healthy raw vegetable dippers.

Nonstick cooking spray, for the parchment, optional
1 pound ground chicken
1/3 cup breadcrumbs
2 tablespoons finely diced celery
1 tablespoon hot sauce, such as Frank's Red Hot
1 large egg
1 scallion, finely chopped
1 clove garlic, minced
Kosher salt and freshly ground black pepper
Crumbled gorgonzola, for serving
5 to 6 stalks celery, cut into sticks, plus celery leaves, for serving
1/2 stick (4 tablespoons) salted butter
3/4 cup hot sauce, such as Frank's Red Hot

Steps:

  • For the meatballs: Preheat the oven to 400 degrees F. Line a baking sheet with a silicone mat or parchment paper covered with cooking spray.
  • Combine the chicken, breadcrumbs, celery, hot sauce, egg, scallion, garlic and some salt and pepper in a bowl. Gently mix until well combined, being careful not to overmix. Using a tablespoon measure, remove scoops of the mixture, roll into balls and put onto the prepared baking sheet. Bake until cooked through and browned, about 15 minutes.
  • For the sauce. Meanwhile, in a saute pan over medium-low heat, melt the butter with the hot sauce, stirring to combine. Once the meatballs are cooked, add to the sauce and toss to coat well.
  • Transfer the meatballs to a platter. Sprinkle over the gorgonzola and celery leaves. Serve with the celery stalks and leaves on the side, as well as some toothpicks to skewer the meatballs as they are devoured.

  • preheat oven to 450 mix all meatball ingredients in a large bowl.
  • roll into 1 inch balls and place on non stick baking sheet. place baking sheet in oven for 15 minutes.
  • place peppers, olives, oregano, basil, balsamic and garlic in food processor and puree.
  • Mix this mixture with tomato products in a medium saucepan. Heat on medium high for 5 minutes or until simmering.
  • Place chicken meatballs into sauce and let simmer uncovered for 30 minutes. Serve as side, appetizer or on a bun as a sandwich.

2 lbs 80% lean ground beef
1/2 cup breadcrumbs
1/2 cup fresh parsley (Chopped)
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon Mexican chili powder
1/2 teaspoon cumin
1 teaspoon onion powder
1 tablespoon milk
2 large eggs
1/2 cup Frank's red hot sauce
4 garlic cloves (Minced)
1 tablespoon canola oil
1 tablespoon sambal oelek chili paste
2 garlic cloves (Minced)
1 teaspoon orange zest
2 oranges, juice of
1 teaspoon cayenne pepper
1/3 cup dark brown sugar
1 cup chicken broth
2 tablespoons creme fraiche

Steps:

  • Place Ground Chuck in a large bowl. Mix the remaining ingredients in a separate bowl. Combine the bread crumb mixture to the Ground Chuck and mix well. Roll golf ball size meatballs and bake in a 350 degree oven for about 20 minutes, turning meatballs half way.
  • Sauté the sambal and garlic in the 1 tablespoon canola oil for about 1 minute. Add orange zest and juice. Stir to combine. Add cayenne pepper and brown sugar. Stir to combine. Add chicken broth and bring mixture to a simmer. Reduce mixture by half. Add the crème friache and stir to combine. Add meatballs to mixture.
