Buffalo Chicken Pasta Casserole is an easy chicken dinner packed with cream cheese, buffalo sauce, and cheese. Just like buffalo chicken dip, once you start eating it's hard to stop!

1 lb Penne Pasta
1 package (8 oz) Cream Cheese
1/2 cup Buffalo Sauce (Frank's Red Hot Wing Sauce)
1 cup Chicken Broth
1 tsp galric powder
1 tsp kosher salt
1 lb Chicken, cooked and shredded
1 cup Mozzarella Cheese, shredded
1 cup Cheddar Cheese, shredded
1/4 cup Ranch or Blue Cheese Dressing, optional

Steps:

  • Cook pasta according to package directions. While pasta is cooking, make sauce.
  • For the sauce, in a large skillet, add cream cheese, buffalo sauce and chicken broth. Simmer over medium heat, stirring constantly until cream cheese is melted and smooth.
  • Add in garlic powder and salt and whisk until smooth.
  • Add cooked chicken and stir until blended.
  • Fold in cooked pasta and shredded cheeses. Remove from heat and serve warm.
  • Top with a drizzle of ranch dressing or blue cheese dressing, if desired.

2 cups (8 ounces) uncooked, penne pasta (or substitute cooked cauliflower)
1 - 8 ounce package cream cheese, softened
3/4 cup ranch dressing
1/3 cup hot sauce
2 cups shredded, cooked chicken (or 1 - 12.5 ounce can chunk chicken breast)
1 1/2 cups shredded mozzarella cheese
1/2 cup shredded cheddar cheese
green onions, for garnish

Steps:

  • Preheat the oven to 375 degrees. Spray an 8-inch casserole dish with nonstick spray.
  • Cook the pasta noodles, according to the package directions. Drain and drizzle with a little bit of olive oil to keep them from sticking.
  • Stir together the cream cheese, ranch, and hot sauce until creamy.
  • Add the chicken, 1/2 cup mozzarella cheese, and cooked pasta noodles to the cream cheese mixture and stir to combine. Spoon into the prepared dish.
  • Combine the remaining two cheeses and sprinkle over the top of the pasta. Bake for 20 minutes, or until cheese on top is melted.
  • Remove and serve immediately with green onions, hot sauce, and ranch drizzles. Serves 6.

2 cups rigatoni pasta
2 cups shredded cooked chicken breast
1 teaspoon dry ranch salad dressing mix (such as Hidden Valley Ranch®)
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon garlic powder
1 (8 ounce) package Neufchatel cheese
1 (8 ounce) container sour cream
½ cup Buffalo wing sauce (such as Frank's RedHot®)
½ cup shredded sharp Cheddar cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook rigatoni in the boiling water, stirring occasionally until tender yet firm to the bite, about 12 minutes. Drain and set aside.
  • Season chicken with ranch dressing mix, salt, pepper, and garlic powder. Set aside.
  • Meanwhile, combine Neufchatel cheese, sour cream, and Buffalo wing sauce in a large saucepan over low heat. Cook, stirring constantly, until well combined, about 3 minutes. Add Cheddar cheese and stir well until melted. Add pasta and chicken and continue cooking until well incorporated and heated through.

2 cups shredded cooked chicken (from about 1/2 rotisserie chicken)
1 1/2 cups cottage cheese
1/2 cup Buffalo-style hot sauce
6 ounces grated pepper jack (about 3 cups)
6 ounces grated mild Cheddar (about 3 cups)
1/4 cup crumbled blue cheese
Rainbow baby carrots, celery sticks and assorted crackers and chips, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Combine the chicken, cottage cheese, hot sauce, pepper jack and Cheddar in a large bowl and mix well. Transfer to an 8-inch square baking dish, spreading it into an even layer. Sprinkle all over with the blue cheese and bake until hot and bubbly, about 35 minutes.

1 lb chicken breast, bite size pieces
1 (11 1/2 ounce) can cream of chicken soup
1/2 cup hot sauce (like for buffalo wings)
6 ounces mozzarella cheese, shredded (about 1 1/2 cups)
1/2 cup blue cheese, crumbled
1 1/2 cups sour cream
3 cups penne, uncooked

Steps:

  • Season chicken salt and pepper and put it in the crock.
  • Add the chicken soup and hot sauce and stir.
  • Cook on low 4-6 hours or high 2-3.
  • Stir in cheeses and sour cream and turn off the crock pot.
  • Boil pasta according to package instructions, drain well and add to the chicken/sauce mixture.
  • Stir well and serve!

This warm, yummy, Italian-lover dish came about when my cousin asked my mom, "Can we have something with cheese and pasta in it?" Yeah mom!

1 (1 lb) box penne
4 large boneless chicken breasts, thawed
1 tablespoon olive oil
2 teaspoons minced garlic
1 (26 ounce) jar marinara sauce
1/4 cup fresh basil, chopped
1/2 cup onion, chopped
1 1/2-2 cups shredded mozzarella cheese
1 cup shredded cheddar cheese

Steps:

  • Fill a large pot with water and cook penne according to directions on box.
  • Meanwhile, chop the thawed chicken into bite-size strips. Set aside.
  • When the penne is done, drain and set aside; heat the pot with the olive oil and let the oil get really hot.
  • Add just under 1 TBSP of fresh minced garlic and add basil and onion. Stir around a bit and add the chicken. Sprinkle with salt and then sprinkle a lot of garlic salt. Add a little ground black pepper.
  • Stir fry until chicken is no longer pink, around 5 minutes; do not overcook, as the chicken will get tough!
  • Spoon the chicken into the bottom of a casserole dish that has been sprayed with non-stick cooking spray; glass looks really pretty. Spread penne evenly over that.
  • Pour marinara sauce over all and sprinkle mozzarella cheese over that. Sprinkle the cheddar cheese over everything, it should just be a thin layer.
  • Bake at 300°F until cheese melts, about 9-15 minutes.

1 medium yellow onion, diced
2 garlic cloves, minced
2 celery ribs, diced
1 large carrot, peeled and diced
2 rotisserie chicken breasts, shredded
3/4 cup buffalo wing sauce
3/4 cup shredded cheddar cheese
3/4 cup shredded monterey jack cheese
1 (13 7/8 ounce) can pizza dough
1/4 cup crumbled blue cheese
1 cup carrot sticks
1 cup celery rib
1/2 cup ranch dressing or 1/2 cup blue cheese dressing, for dipping

Steps:

  • Preheat oven to 400 degrees.
  • In a large skillet over medium heat, melt the butter. Add in the onion, garlic, celery and carrots and cook until softened, about 6 to 8 minutes. Add the shredded chicken and buffalo wing sauce and stir to coat.
  • In a medium bowl, combine the cheddar and monterey jack cheeses. Unroll the pizza dough placing the long edge closest to you. Cut into six equal strips.
  • Working one at a time, lay dough into skull cavities and press gently into the bottom and half way up the sides. Fill with the chicken mixture, shredded cheeses and a spoonful of blue cheese crumbles. Fold dough over filling and pinch edges together to seal.
  • Bake for 18 minutes, remove from molds and place on a platter. Serve with carrot sticks, celery sticks and blue cheese dressing for dipping.
