Number Of Ingredients 17

2 tablespoons olive oil
2 garlic cloves, minced
1 medium onion, diced
1/2 cup leek, sliced (use the green bits if you want to make your leek go further)
3 -4 carrots, sliced
3 celery ribs, sliced
1 1/2 cups black beans, presoaked
1 cup brown lentils
1 teaspoon cumin
1 teaspoon oregano
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper
fresh ground black pepper, to taste
1 (15 ounce) can diced tomatoes
4 cups vegetable broth
1/2 teaspoon salt
1 bunch kale, stems removed and sliced into strips

Steps:

  • Cook garlic, leek and onion in a large pot with olive oil over medium heat until tender. Add the celery and carrots to the pot and continue to sauté for about 5 more minutes.
  • Drain the black beans and add them to the pot along with the dry lentils, cumin, oregano, smoked paprika, cayenne pepper, and some freshly cracked pepper (10-15 cranks of a pepper mill). Finally, add the diced tomatoes (with juices) and vegetable broth, and stir to combine.
  • Increase the heat to medium high and allow the pot to come up to a boil. Once it reaches a boil, turn the heat down to low, place a lid on top, and let it simmer for 30 minutes. After 25 minutes, test the lentils to make sure they are tender. If not, continue to simmer until they are tender. Add the Kale and stir through. Once lentils are tender proceed to step 4.
  • Taste the soup and add salt as needed (I added ½ tsp). Serve hot.

Number Of Ingredients 12

2 tablespoons olive oil
1 medium onion
2 garlic cloves
2 inches fresh ginger
1 tablespoon curry powder (hot or mild)
1 teaspoon cumin
3/4 teaspoon salt
1 large tomatoes
1 lb frozen chopped spinach
1 (19 ounce) can chickpeas
1 (12 ounce) can evaporated milk
1/2 cup water

Steps:

  • Dice the onion and mince the garlic. Add both to a large skillet with the olive oil. Use a vegetable peeler or the side of a spoon to scrape the skin from the ginger. Once peeled, grate the ginger on a cheese grater straight into the skillet. Sauté the onion, garlic, and ginger over medium-low heat for about 5 minutes, or until the onion is soft and transparent. While these are cooking, dice the tomato.
  • Add the curry powder and cumin to the skillet and continue to stir and cook for one minute more. Add the diced tomato and salt. Continue to cook for about five minutes more, or until the tomato has broken down and is no longer holding its diced shape.
  • Drain the chickpeas in a colander and give them a quick rinse. Add the rinsed chickpeas, frozen spinach, and a half cup of water to the skillet. Stir everything together and then bring it up to a simmer over medium heat. Let the mixture simmer for five minutes so that the flavors can meld and everything heats through.
  • After five minutes most of the water should have simmered away. Turn the heat down a bit (medium-low) and add the evaporated milk. Depending on how thick you want the sauce, you can either just heat through or let it simmer until thickened. If you prefer a smoother Chana Saag, you can use an immersion blender to purée some of the mixture, or transfer half of it to a blender and carefully purée it.* I left mine chunky. Once it's heated through, adjust the salt and curry powder to your liking.

8 ounces fresh mushrooms
1/2 teaspoon minced garlic
nonstick cooking spray, as needed
1 (10 ounce) box kale or 1 (10 ounce) box silver beet, shredded
1/2 leek, sliced
1/2 capsicum, sliced
4 large eggs
1 cup milk
2 ounces feta cheese
1/4 cup grated parmesan cheese
1/2 cup shredded mozzarella cheese
salt & pepper

Steps:

  • Preheat your oven to 350 degrees. If your frozen spinach is not already thawed, thaw it in the microwave. Empty the box into a colander and let it drain while you begin to prepare the rest.
  • Quickly rinse the mushrooms and slice them thinly. Place the sliced mushrooms in a skillet coated with non-stick spray, add the minced garlic, and sprinkle a little salt and pepper. Turn the heat on to medium-high and saute the mushrooms until they release all of their moisture and no more water remains on the bottom of the skillet (5-7 minutes). Add the leek and stir until coloured.
  • Spray a pie dish with non-stick spray. Squeeze the rest of the water out of the spinach and spread it (or the kale or the silverbeet) out on the bottom of the pie dish. Next add the cooked mushrooms & leek, capsicum and crumbled feta.
  • In a medium bowl whisk together the eggs until fairly smooth. Add the milk, parmesan, and another small sprinkle of pepper. Whisk to combine. (This step can be completed while the mushrooms are cooking) Pour this mixture into the pie dish over the greens, mushrooms, capsicum, leek, and feta.
  • Sprinkle the shredded mozzarella cheese over top. Place the pie dish on a baking sheet for easy transfer into the oven. Place the quiche into the preheated oven and bake until it is golden brown on top and the center is solid. Every oven is different but this should take between 45 minutes and an hour. Slice and serve!

4 cups vegetable broth
2 tablespoons olive oil
12 ounces fettuccine
8 ounces frozen chopped spinach
1 (28 ounce) can diced tomatoes
1 medium onion
4 garlic cloves
1/2 tablespoon dried basil
1/2 tablespoon dried oregano
1/4 teaspoon red pepper flakes
freshly cracked pepper
2 ounces feta cheese

Steps:

  • Add four cups of vegetable broth to a large pot. Break the fettuccine in half to make stirring easier later, and then add it to the pot. Also add the canned tomatoes (undrained), olive oil, frozen spinach, onion (thinly sliced), garlic (thinly sliced), basil, oregano, red pepper, and some freshly cracked black pepper.
  • Make sure the ingredients are submerged under the liquid, place a lid on top of the pot, and then turn the heat on to high. Allow the pot to come up to a full, rolling boil over high heat then remove the lid and turn the heat down to medium.
  • Allow the pot to continue to boil over medium heat, without a lid, for 10-15 minutes, or until the pasta is cooked and most of the liquid has been absorbed. Stir the pot every few minutes as it cooks to prevent the pasta from sticking to the bottom, but avoid over stirring which can cause the pasta to become sticky and mushy. The pot must be boiling the entire time.
  • After the pasta is cooked, crumble the feta cheese over top and serve.

4 ounces lo mein noodles
2 tablespoons butter
1/4 teaspoon crushed red pepper flakes
1 large egg
1 tablespoon brown sugar
1 tablespoon soy sauce
1 tablespoon hot sauce (sriracha rooster sauce) (optional)
1 handful fresh cilantro
1 sliced green onion

Steps:

  • Begin to boil water for the noodles. Once the water reaches a full boil, add the noodles and cook according to the package directions (boil for 5-7 minutes).
  • While waiting for the water to boil, prepare the sauce. In a small bowl stir together the brown sugar, soy sauce, and sriracha.
  • In a large skillet melt 2 tablespoons of butter over medium-low heat. Add the red pepper to the butter as it melts. Whisk an egg in a bowl and then add to the melted butter. Stir gently and cook through. Once the egg is done cooking, turn off the heat.
  • When the noodles are tender, drain the water and then add them to the skillet with the cooked egg. Also add the prepared sauce. Turn the heat on to low to evaporate excess moisture, and stir until everything is coated well with the sauce. Sprinkle the sliced green and cilantro leaves (whole) on top and serve!
