This beef stroganoff recipe is one of the easiest and tastiest things you can make for the family on a busy weeknight!

1 ½ pounds sirloin steak (cut ½" thick)
3 tablespoons flour (divided)
½ teaspoon seasoned salt
½ teaspoon pepper
2 tablespoons olive oil
2 tablespoons butter
1 small onion (diced)
8 ounces mushrooms (sliced)
1 clove garlic (minced)
14 ½ ounces beef broth
2 teaspoons Worcestershire sauce
½ tablespoon dijon mustard
½ teaspoon thyme
½ cup sour cream

Steps:

  • Toss beef with 1 tablespoon flour, salt & pepper. Shake off excess flour.
  • Heat olive oil over medium high heat in a saucepan. Brown beef in small batches until lightly browned, about 1 minute on each side. Remove from pan and set aside.
  • Reduce heat to medium and add butter & onion. Cook until softened, about 4-5 minutes.
  • Add mushrooms & garlic and cook until softened, about 4 minutes more. Stir in 2 tablespoons of flour and cook 1 minute.
  • Add broth, Worcestershire sauce, dijon mustard, and thyme. Bring to a boil, reduce heat and simmer 5 minutes. (You can thicken the sauce further if desired, see note).
  • Add beef (with any juices). Cook 2 minutes more or just until heated through. Stir in sour cream.
  • Season with salt & pepper and serve over egg noodles and garnish with parsley.

30-Minute Beef Stroganoff image

This classic beef stroganoff recipe is made with the most delicious garlicky creamy mushroom sauce and can be ready to go in just 30 minutes! Feel free to serve over any kind of noodles, rice, or polenta.

Number Of Ingredients 13

1 pound uncooked wide egg noodles
1/4 cup butter, divided
1 1/2 pounds thinly-sliced steak (I recommend flank steak)
fine sea salt and freshly-cracked black pepper
1 small white onion, thinly sliced
1 pound sliced mushrooms (I used a mix of button and baby bella mushrooms)
4 cloves garlic, minced or pressed
1/2 cup dry white wine*
1 1/2 cups beef stock
1 tablespoon Worcestershire sauce
3 tablespoons all-purpose flour
1/2 cup plain Greek yogurt or light sour cream
chopped fresh parsley (optional)

Steps:

  • Cook egg noodles in a large stockpot of generously-salted water until they are al dente, according to package instructions, then drain. (For optimal timing, I recommend adding the egg noodles to the boiling water at the same time that you begin Step 4, listed below.)
  • Meanwhile, as your pasta water is coming to a boil, melt 2 tablespoons of the butter in a large sauté pan over medium-high heat. Add the steak in a single layer, seasoned with a few generous pinches of salt and pepper, and let it cook undisturbed for about 3 minutes to get a good sear. Flip the steak, and cook on the other side until browned, another 2-3 minutes. Then remove steak from pan with a slotted spoon, transfer to a clean plate, and set aside. (If your pan is not big enough to fit all of the steak in a single layer, cook half of the steak in 1 tablespoon of butter. Then repeat with a second batch.)
  • Add the remaining 2 tablespoons butter to the sauté pan. Once it has melted, add the onions and sauté for about 3 minutes. Add mushrooms and sauté for an additional 5-7 minutes, stirring occasionally, or until the mushrooms are cooked and the onions are soft. Add the garlic and sauté for 1 minute, stirring occasionally. Then add the white wine and deglaze the pan by using your cooking spoon to scrape the brown bits off the bottom of the pan. Let the mixture cook down for an additional 3 minutes.
  • While the wine cooks down, whisk together the beef stock, Worcestershire sauce and flour until smooth in a separate bowl. Pour the beef stock mixture into the sauté pan, stir to combine, then let the mixture simmer for 5 minutes, stirring occasionally. Stir in the Greek yogurt (or sour cream) and cooked steak until combined. Taste and season with additional salt and pepper if needed.
  • Serve warm over egg noodles, garnished with a sprinkle of parsley and an extra twist of black pepper, if desired.

We used a marbled, tender piece of ribeye as the star of this comfort food classic. Two kinds of mushrooms are cooked until crispy to add an extra element of flavor. The whole dish is brought together with a rich, tangy sauce made with sour cream and Dijon and served over egg noodles.

1 pound ribeye steak, trimmed of excess fat and cut into 2-by-1/2-inch strips
Kosher salt and freshly ground black pepper
2 tablespoons vegetable oil
5 tablespoons unsalted butter
1 medium yellow onion, sliced
8 ounces white button mushrooms, quartered
7 ounces shiitakes, caps sliced (stems removed and discarded)
1 tablespoon chopped fresh thyme
1 clove garlic, minced
1/2 cup dry white wine
2 tablespoons all-purpose flour
3/4 cup sour cream
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
1 1/2 cups beef broth or beef stock
10 ounces medium or wide egg noodles
1/2 cup fresh flat-leaf parsley leaves, chopped
1 tablespoon chopped chives, plus more for serving

Steps:

  • Bring a large pot of salted water to a boil.
  • Season the beef with 1 teaspoon salt and a generous amount of freshly ground black pepper. Heat the vegetable oil in a large skillet over medium-high heat. Add the beef and cook, untouched, until starting to turn brown in some spots, about 1 minute. Use tongs to flip the pieces and continue cooking until deep golden brown but still undercooked in the center, about 1 minute (the beef will finish cooking in the sauce). Transfer the beef to a bowl and return the skillet to the stovetop on medium-high.
  • Add 1 tablespoon butter to the skillet. Add the onion and 1/2 teaspoon salt and cook, stirring occasionally to scrape up the browned bits in the pan, until the onions are softened, 4 to 5 minutes. Add 2 tablespoons butter, the button mushrooms, shiitakes and thyme and cook, stirring occasionally scraping up any browned bits, until the mushrooms have released some liquid and are starting to crisp up, 5 to 6 minutes. Stir in the garlic and cook until fragrant, about 1 minute. Pour in the wine and bring to a boil. Reduce the heat to medium and simmer until evaporated, about 5 minutes.
  • Sprinkle the flour over the vegetables and stir until incorporated. Fold in the sour cream, Dijon, Worcestershire sauce and 1/4 teaspoon freshly ground black pepper. Pour in the beef broth and stir until smooth. Bring to a simmer and cook, stirring occasionally, until the sauce has thickened, about 5 minutes.
  • Meanwhile, while the sauce reduces, cook the egg noodles according to the package directions for al dente. Drain and toss with the remaining 2 tablespoons butter, the chopped parsley and chives.
  • Fold the beef and any accumulated juices from the bowl into the sauce and cook, stirring occasionally, until the beef is cooked through but still slightly pink on the inside, about 1 minute.
  • Divide the noodles between 4 bowls and top with the sauce and beef. Sprinkle with more chives, if desired.

Stretching On a Budget we have to make all the meals stretch as far as we can out of a chunk of meat. So this comes from my Leftover Pot Roast. Tip: This can also be made from Ground round or Hamburger, Sirloin, or Tenderloin, all in the same way.

10 MIN STROGANOFF ( IF POT ROAST IS USED AND CUT INTO 1" THIN STRIPS)
cooked noodles rice or potatoes (cooked per pkg instructions)
1 lb left over roast beef, cut in thin 1
6 Tbs butter
1 med onion diced
1/2 lb fresh sliced mushroons or (1) sm jar/can drained.
1/2 tsp garlic
1/2 tsp dry tarragon (optional) gives a nice flavor
1 cup sour cream
season with salt and pepper to taste.
1-2 tsp kitchen bouquet sauce as desired for color and flavor

Steps:

  • 1. Have your Noodles, Rice or Mashed Taters Cooked drained, Buttered and "set aside" and ready for this dish. Over med Heat, Melt 3 Tbs of butter in Skillet. Add Beef, Cook Quick just to Brn meat well or (only Heat Well, if using leftovers.) (NOT SO HIGH YOU BURN THE BUTTER) Sprinkle salt pepper over Meat, when heated and browned, REMOVE FROM HEAT! Set aside in bowl.
  • 2. in same sauce pan; add Onions, cook only a minute or two, allowing them to soak in the meat drippings. Remove from pan into same bowl as meat, set aside.
  • 3. in the same pan; add the other 3 Tbs butter to Pan, add Mushrooms, cook about 4 min. stirr occasionally. Sprinkle with garlic. Reduce Heat to Low, Add Sourcream to Mushrooms Stirr well. Add kitchen Bouguet, Stir, (DO NOT SIMMER OR BOIL) Add meat to Sourcream and Mushrooms, Stir well. Season to taste. Remove from Heat, & Serve Hot. Serving Suggestion: Serve over Hot Buttered Noodles, Fettucini, mashed Potatoes, or Rice, With your favorite green Vegies. NOTE: Mushrooms can be Omited if on a tight budget.

1 tbsp olive oil
1 onion, sliced
1 clove of garlic
1 tbsp butter
250g mushrooms, sliced
1 tbsp plain flour
500g fillet steak, sliced
150g crème fraîche
1 tsp English mustard
100ml beef stock
½ small pack of parsley, chopped

Steps:

  • Heat 1 tbsp olive oil in a non-stick frying pan then add 1 sliced onion and cook on a medium heat until completely softened, around 15 mins, adding a little splash of water if it starts to stick.
  • Crush in 1 garlic clove and cook for 2-3 mins more, then add 1 tbsp butter.
  • Once the butter is foaming a little, add 250g sliced mushrooms and cook for around 5 mins until completely softened.
  • Season everything well, then tip onto a plate.
  • Tip 1 tbsp plain flour into a bowl with a big pinch of salt and pepper, then toss 500g sliced fillet steak in the seasoned flour.
  • Add the steak pieces to the pan, splashing in a little oil if the pan looks dry, and fry for 3-4 mins, until well coloured.
  • Tip the onions and mushrooms back into the pan. Whisk 150g crème fraîche, 1 tsp English mustard and 100ml beef stock together, then stir into the pan.
  • Cook over a medium heat for around 5 mins.
  • Scatter with some chopped parsley, and serve with pappardelle or rice.

This recipe came from a cookbook by the Officers Wives Club at Elgin Air Force Base in Nov. 1960. I have been using it for nearly 50 years and its still a winner. Easy to prepare and can be made ahead of time and heated up at dinner time.

1 1/2 lbs chuck or 1 1/2 lbs round steaks
1 large onion, chopped
1/4 cup butter or 1/4 cup margarine
2 (10 1/2 ounce) cans cream of mushroom soup
water, 1/2 soup can
1 tablespoon cider vinegar
1 teaspoon ketchup
1 (4 ounce) can mushroom pieces (this was not in the original recipe but I think its a nice addition )

Steps:

  • Cut meat into very thin strips ( easier to do when meat is partly frozen ); set aside.
  • Melt 1/3 of the butter in a skillet. Saute onion and remove.
  • Add remaining butter to skillet and brown the meat.
  • Add onion and remaining ingredients to meat.
  • Mix well, cover and simmer 45 minutes to 1 hour.
  • Do not salt.
  • Serve over rice, noodles or toasted French bread.

200ml beef stock
250ml soured cream
2 thick sirloin steaks , about 300g each with as much fat as possible trimmed off the steak
100g butter
2 banana shallots , halved and finely sliced
200g chestnut mushrooms , quartered
1 garlic clove , crushed
2 tsp smoked paprika , plus extra to serve
pinch of porcini powder , plus extra to serve (optional)
2 tbsp red wine vinegar
½ small bunch of parsley , chopped
1 tsp English mustard

Steps:

  • Whisk the stock and all but 2 tbsp of the soured cream together. Set aside.
  • Generously season the steaks. Heat half the butter in a frying pan until sizzling, then cook the steaks for 8 mins, turning them every minute or so, until golden brown on each side. Remove and set aside.
  • Heat the rest of the butter in the steak pan, tip in the shallots and cook for about 5 mins or until starting to caramelise. Add the mushrooms and cook for a further 5 mins or until golden. Stir in the garlic and paprika along with a pinch of porcini powder and continue to cook for 1 min.
  • Add the vinegar and leave to simmer for 1 min. Turn the heat down to its lowest setting and pour in the creamy stock, stirring everything together until hot but not simmering, then taste for seasoning and add most of the parsley and the mustard.
  • Pour in any juices from the steak, before carving it into thick slices and adding to the pan. To serve, top with the remaining soured cream, then scatter with the remaining parsley, a pinch of paprika and porcini powder, if using.
