These waffles are really flavorful and hearty. Freeze well,too.I prefer light buckwheat flour for this recipe (I purchase it locally but it comes from the Bouchard Family Farm)but you use regular buckwheat flour if you wish.

1 cup sourdough starter
2 cups water
2 tablespoons vegetable oil
2 tablespoons honey
2 cups flour
2 cups light buckwheat flour
2 teaspoons baking powder

Steps:

  • Mix wet ingredients.
  • Add sifted dry ingredients and mix well Cook according to your waffle makers instructions Do not overfill the waffle iron.
  • Be sure to cook until all the steam escapes from the waffles before peeking.
  • Serve with honey or maple syrup.

Number Of Ingredients 9

1/2 cup all purpose flour
1/2 cup buckwheat flour
1 tsp salt
1/3 cup starter (fed active starter)
2 table spoons coconut sugar (brown sugar)
1 egg
1 cup almond milk
1/4 cup butter melted ( oil is an option)
1/4 cup buckwheat flakes (or rolled oats/ quick oats)

Steps:

  • Make the starter several hours before ( I used a 100% hydrated starter)
  • To make the batter, mix everything except butter(oil) and buckwheat flakes in a large glass/ plastic bowl (use a non reactive container)
  • Mix thoroughly to create a smooth thick mixture and let this sit covered, for about an hour. If it's cold, make it an hour and a half
  • Then place the container in the fridge and let it slowly ferment overnight
  • Next day, bring the batter out and let thaw for an hour
  • Melt the butter and add it to the batter along with buckwheat flakes (oats) and gently fold to incorporate. Do not mix vigorously as it might knock out too much air
  • Let this sit for another hour minimum. It is okay to let this sit for 2-3 hours until you are ready to make the waffles
  • Preheat the waffle iron and make the waffles according to the instructions
  • Cook the waffles until golden brown and interior sounds hollow when tapped
  • Let rest on a wire rack. Do not stack them
  • Serve warm with your favorite topping

If you have a sourdough starter, you will need to feed it to keep it alive. Many recipes call for doing so after discarding a cup or so of the starter you have, so as to maintain its equilibrium and prevent it from growing too large. This recipe takes advantage of that excess starter, using it as the base of a pancake or waffle batter that ferments overnight and yields a remarkably flavorful breakfast the next day, with minimal effort.

1 cup/240 grams sourdough starter "unfed"
1 cup/224 grams buttermilk
1 cup/120 grams all-purpose flour
1 tablespoon/about 13 grams light brown sugar
1 large egg
1/4 cup melted unsalted butter or neutral oil
1/2 teaspoon vanilla extract
1/2 teaspoon/3 grams kosher salt
1 teaspoon/6 grams baking soda

Steps:

  • Put the sourdough starter in a large bowl and add the buttermilk, flour and sugar, then stir to combine. Cover the bowl and allow it to rest overnight at room temperature.
  • When you are ready to cook, whisk the egg, melted butter or oil and the vanilla extract together in a small bowl, then add the rested sponge. Add the salt and the baking soda to the batter and mix to combine.
  • Pour some of the batter onto a preheated greased waffle iron and cook until the waffle is brown and crisp, then repeat. Or use a small ladle to create pancakes on a preheated oiled pan or griddle, flipping them when they are well browned on the bottom. Serve immediately.

1 cup millet
1 cup buckwheat groats
1/4 cup coconut, shredded, unsweetened
1 egg (optional)
2 tablespoons butter (ghee or coconut oil)
2 tablespoons honey or 2 tablespoons blackstrap molasses
1 tablespoon orange zest
2 teaspoons cinnamon
1/2 teaspoon sea salt
1/4 cup sunflower seeds

Steps:

  • Place the millet and buckwheat in 1 ½ cups water in a medium bowl, loosely cover and let stand on the counter overnight (or at least 5 hours).
  • Drain, rinse and place the soaked grains in a blender (not a Vita-Mixer which makes the batter too fine and, therefore, more dense). With a spatula or clean fingers, level the grains. Add enough fresh water to just reach the top of the grains. Add coconut, egg, butter, honey, orange zest, cinnamon and salt. Process into a thick batter. Some millet will remain whole and this provides crunch. Pour the batter onto a hot waffle iron, sprinkle the top with sunflower seeds, close and bake according to the manufacturer's directions. Serve hot with your favorite toppings.
  • Note: Substitute whole oats for the buckwheat. Or substitute pecans or walnuts for the sunflower seeds. Do not add fruit to this waffle as fruit makes it too heavy and acidic and therefore hard to digest.

⅔ cup buckwheat flour
½ cup sourdough starter
1 cup 2% milk

2 cups sourdough starter
2 eggs, beaten
1 tablespoon vegetable oil
3 tablespoons white sugar
½ teaspoon vanilla extract
1 teaspoon salt
1 cup buckwheat flour
½ cup all-purpose flour
½ teaspoon baking soda
1 teaspoon ground ginger

Steps:

  • In a large bowl mix the starter, egg, vegetable oil, sugar and vanilla together. Stir in the salt, buckwheat flour, all-purpose flour, baking soda and ginger. Mix until just combined. Adjust consistency with more flour or some water, depending upon how thick your starter is. The batter should be pourable, but not runny.
  • Heat a griddle to 400 degrees F (200 degrees C). Lightly grease griddle and ladle 1/4 to 1/3 cup of batter onto hot greased griddle. Cook for about 3 to 4 minutes or until top is full of bubbles. Use a spatula to turnover and cook other side for and additional 2 minutes or so. Serve hot!

Our favorite recipe because it's so easy and makes delectable yet healthy whole grain waffles or pancakes that use up that extra starter so it doesn't go to waste. *This is a Grandma Approved Recipe*

1/2 cup sourdough starter
1/2 cup whole wheat flour
1/2 cup any whole grain flour (see notes)
1 cup water or 1 cup milk
1 egg
2 tablespoons oil or 2 tablespoons butter
1/2 teaspoon salt
1/2 teaspoon baking soda

Steps:

  • In a large bowl, stir together the starter, flours and water (or milk).
  • Cover bowl with plastic wrap and let it rest one to twelve hours. I usually mix it the night before.
  • In the morning while you're waiting for the waffle iron or pancake pan to heat up, mix the egg, oil, and salt into the flour mixture. Just before cooking, stir in the baking soda.
  • Using a quarter or half cup measuring cup ladle the batter onto the hot pan. For waffles cook according to the waffle iron directions, usually around 5 minutes, for pancakes flip when the edges start to bubble and the surface loses it's gloss.
  • Notes- You can use your choice of whole grains. I like rice flour, available at Whole Foods or health food stores. It adds a light crunchy texture to waffles. I've also used quinoa, barley, spelt, and coconut flours with great success. (If you use half cornmeal it makes a most excellent supper when topped with chili or beans n cheese!).
  • This recipe doubles or triples beautifully if you're feeding a crowd.
  • This recipe doesn't call for sugar, as I've found that using sugar in waffles makes them stick to the waffle iron. Without sugar they never stick (no need to grease the iron) and with the sweet flavor of whole grains you truly won't miss it. For pancakes you can add a tablespoon or two of sugar if you must.
  • A teaspoon of vanilla in the batter makes them smell terrific as they bake but we don't notice much difference in the taste, so I save that for company :).
  • I love my Hamilton Beach Flip 'n Fluff ($19 on amazon) and it makes 9 4" waffles with this recipe.
