3 slices bacon, chopped
1 tablespoon extra-virgin olive oil, 1 turn of the pan
1 shallot, chopped
1 1/2 pounds Brussels sprouts, trimmed, small sprouts left whole, larger sprouts halved
Salt and pepper, to your taste
1 cup chicken broth

Steps:

  • Brown bacon in a medium skillet over medium high heat. Remove bacon to a paper towel lined plate. Add extra-virgin olive oil to the pan, 1 turn. Add shallots to the pan and saute 1 to 2 minutes. Add Brussels sprouts and coat in oil. Season with salt and pepper. Cook Brussels sprouts 2 to 3 minutes to begin to soften, then add broth. Bring broth to a bubble, cover and reduce heat to medium low. Cook 10 minutes, until tender. Transfer sprouts to a serving dish with a slotted spoon and top with cooked bacon bits.

3 slices bacon, cut into 1/4-inch pieces
4 pints Brussels sprouts, ends trimmed and halved
salt
pepper
1 apple, cored and cut into 1/4-inch pieces
2 teaspoons red wine vinegar

Steps:

  • Preheat oven to 450 degrees.
  • Arrange bacon in single layer on large rimmed baking sheet. Cook until browned.
  • Add brussels sprouts in a single layer, season with salt and pepper and toss with bacon.
  • Roast until they begin to turn brown.
  • Toss in apple pieces and roast until brussels sprouts are browned and softened and apple has softened.
  • Remove from oven, toss with red wine vinegar and serve immediately.

4 strips thick-cut bacon
2 tablespoons butter
1 pound Brussels sprouts, halved
1/2 large onion, chopped
Salt and freshly ground black pepper

Steps:

  • Cook bacon in a large skillet over medium-high heat until crispy. Remove to a paper towel-lined plate, then roughly chop. In same pan with bacon fat, melt butter over high heat. Add onions and Brussels Sprouts and cook, stirring occasionally, until sprouts are golden brown, 8 to 10 minutes. Season with salt and pepper, to taste, and toss bacon back into pan. Serve immediately.

1 lb Brussels sprout, cut in half
extra virgin olive oil
salt
3 garlic cloves, chopped
1 tablespoon pine nuts, roasted
3 slices bacon, cut into lardons- use thick slices

Steps:

  • Preheat oven to 400 degrees.
  • Toss sprouts with olive oil, salt and garlic.
  • Roast in baking pan until tender, about 20 minutes.
  • Meanwhile, toast pine nuts in skillet. Set aside.
  • In same pan, cook bacon until crispy. Remove from pan and set aside.
  • Toss the roasted pine nuts and bacon with sprouts, roast for a few more minutes or until heated through.

10 ounces Brussels sprouts
1/2 ounce butter
1 tablespoon olive oil
3 1/2 ounces smoked bacon, diced
1 tablespoon sliced almonds
7 tablespoons heavy cream
1 lemon, juice and zest of
salt and pepper, to taste

Steps:

  • Trim the sprouts and drop into boiling water. Simmer until nearly cooked and then drain.
  • Heat the butter and oil in a large pan. Add the bacon and almonds, and sauté until brown.
  • Add the sprouts and cook for a further 2-3 minutes, stirring.
  • Allow to cool for a few minutes and then add the cream and lemon zest.
  • Return to the heat and cook for 4 minutes until the cream has reduced.
  • Season with salt and pepper and add a dash of lemon juice. Serve immediately.

1 teaspoon olive oil
2 thick slices bacon (applewood works great)
4 cups Brussels sprouts, trimmed and halved (about 1 pound)
kosher salt & freshly ground black pepper
1/4 cup golden raisin
1 medium shallot, finely chopped
1 tablespoon unsalted butter
1/2 cup low sodium chicken broth
1 -2 tablespoon apple cider vinegar

Steps:

  • Heat oil in a large heavy skillet over medium heat. Add bacon and cook, turning occasionally, until crisp, about 5 minutes. Using tongs, transfer bacon to paper towels to drain. Let cool. Coarsely crumble.
  • While bacon cools, add brussels sprouts to drippings in skillet; season with salt and pepper. Cook, stirring often, until well browned in spots and beginning to soften, 5-7 minutes.
  • Reduce heat to low and add raisins, shallot and butter; cook, stirring often, until shallot is soft, about 3 minutes. Add broth to skillet; increase heat and bring to a boil, scraping up browned bits from bottom of pan. Reduce heat to medium-low and simmer until broth has evaporated, 1-2 minutes. Stir in vinegar and crumbled bacon. Season to taste with salt and pepper.

6 slices (Wegmans applewood) smoked uncured bacon, cut in 1-inch pieces
2 lbs Brussels sprouts, trimmed, quartered
3 tbsp. basting oil (Wegmans has basil in it)
Salt & pepper
1/2 C peeled chestnuts, halved (4 oz)

Steps:

  • Preheat oven to 350 degrees. 1. Heat large ovenproof skillet on medium-high add bacon, cook, turning occasionally, until crisp remove from pan, set aside drain drippings from pan. 2. Toss Brussels sprouts with basting oil; season to taste with salt and pepper. Add to pan; roast in oven about 30 minutes. 3. Remove from oven; stir in chestnuts and cooked bacon. Return to oven about 10 minute to heat.

1 lb Brussels sprout, trimmed and halved
4 slices smoked bacon, chopped
1 shallot, sliced
2 tablespoons white wine
2 tablespoons olive oil
1 tablespoon butter
1 pinch of kosher salt and cracked pepper, to taste

Steps:

  • 1.Preheat oven to 425 degrees.
  • 2.In oven safe skillet or casserole dish crisp bacon over medium high heat. About 8-10 minutes. Remove bacon and set aside on plate lined with paper towels. Dispose of fat in the skillet.
  • 3.Return skillet to stovetop. Deglaze pan with white wine, scraping brown bits from bottom of pan.
  • 4.Add shallots and sauté for about 5 minutes.
  • 5.Add Brussels sprouts and olive oil and mix together to combine and evenly coat.
  • 6.Place skillet in oven and roast for about 15-20 minutes until cooked through and golden brown.
  • 7.Remove from oven and add butter and bacon, toss to combine.
  • 8.Salt and pepper to taste.
