- Trim Brussels sprouts. Cut sprouts lengthwise in half; cut crosswise into thin slices. In a 6-qt. Dutch oven or stockpot, cook bacon over medium heat until crisp, stirring occasionally. Add garlic; cook 30 seconds longer. Remove with a slotted spoon; drain on paper towels., Add Brussels sprouts to bacon drippings; cook and stir until sprouts begin to brown lightly, 4-6 minutes. Stir in broth, salt and pepper; cook, covered, until Brussels sprouts are tender, 4-6 minutes longer. Stir in bacon mixture.

- Preheat oven to 400°F (200°C)
- Cook bacon in a cast iron pan over medium heat. Once bacon fat coats the pan, add the Brussels sprouts, salt, pepper, apple cider vinegar, brown sugar, garlic. Stir until fully coated.
- Cook until the bottom of the Brussel sprouts begin to brown on the bottom.
- Transfer the cast iron pan to the oven and roast for 20 minutes, or until tender, flipping the brussel sprouts over every 5 minutes or so.
- Sprinkle Parmesan cheese evenly over the Brussels sprouts, then place the pan back in the oven and bake for other 3 to 5 minutes.
- Sprinkle with additional bacon and chives then serve.

- Cut an 'X' in the core end of each Brussels sprout. Set sprouts aside.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes; drain and cool on paper towels. Crumble.

BACON ROASTED BRUSSELS SPROUTS
Steps:
- Gather the ingredients. Preheat the oven to 375 F.
- While the oven heats, cut off and discard the stem ends of the Brussels sprouts . Remove the darker outer leaves (you can discard these, or save them to use in Seared Brussels Sprout Leaves ). Cut extra larger sprouts in half so that the veggies cook evenly. Put the prepared sprouts in a roasting pan.
- Peel the garlic cloves and cut them into 2 to 4 pieces each depending on the size. The number of cloves will depend on their size and how garlicky you'd like your Brussels sprouts. Scatter the garlic over the brussels sprouts.
- Cut the bacon into small pieces and scatter over the Brussels sprouts.
- Cover the roasting pan with foil and cook about 20 minutes, or until the bacon just starts to render its fat and the sprouts are a bit tender. Remove the foil, toss everything around a bit, and continue roasting until the Brussels sprouts are tender, the bacon is browned, and the garlic is tender and browned, about 20 to 30 minutes.
- Taste and sprinkle with salt if needed (some kinds of bacon are saltier than others). Serve the Brussels sprouts hot and enjoy!

BRUSSELS SPROUTS PASTA WITH BACON AND VINEGAR
This recipe is endlessly adaptable: You can use pancetta or even sliced salami in place of the bacon, and chopped cabbage or torn escarole work well if you don't have sprouts. No shallots? A small red onion will do. Keep in mind different types of bacon (or other cured pork) will render different amounts of fat. When you add the brussels sprouts, if the skillet starts to look a little dry, add a tablespoon of oil to keep things moving. To achieve a nice mix of crisp leaves and tender cores, tear off some of the loose outer leaves from your brussels sprouts; they will wilt and blister while the more tightly bundled cores will soften and steam. - Bring a large pot of salted water to a boil. Meanwhile, cook bacon in a large skillet over medium, turning occasionally, until golden and crisp, 5 to 8 minutes. Using tongs, transfer to a plate.

- Prepare the sprouts by removing and old outer leaves and slice the old bit off the bottom at the stem. Then halve, lengthways. (like the photo)
- In a saucepan , boil the sprouts until almost cooked, to your liking. Some prefer well cooked, some prefer a crunch. Test by inserting a knife and see if it is soft enough for you. Drain and set aside. (Note: if you are adding the cream cheese suggestion, reserve a couple of tablespoons of the sprouts water to add when you add the cream cheese to 'loosen up' the sauce at the end).
- In a pan large enough to fit all the sprouts, add the chopped bacon. No need for oil as the fat from the bacon will be enough. Fry until cooked, or crispy, to your liking.
- Add the sprouts to the bacon along with the butter and garlic, over a medium heat, tossing so everything is nicely combined.
- Season with salt and pepper then serve with some freshly grated Parmesan cheese if you wish!

CHIFFONADE OF BRUSSELS SPROUTS WITH BACON & HAZELNUTS
I wish I could take credit for this recipe, but I can't - it came from a chef named Diane Morgan, who wrote The Thanksgiving Table. My husband likes Brussels sprouts so I'm always looking for new ways to serve them. This is the best way I've ever tried. Even people who don't like Brussels sprouts like them this way. Try it.

- Trim the stem end of the sprouts and remove any yellow or spotted out leaves.
- Shred the sprouts with the coarse shredding attachment of your food processor.
- Set aside until about 10 minutes before service.
- Cook the bacon over medium-high heat until crisp.
- Remove with a slotted spoon to a paper towel to drain.
- Set aside.
- Reserve the bacon fat in the pan.
- Just before serving, reheat the bacon fat in the pan until hot and add the sprouts to the pan.
- Saute until crisp-tender and bright green, about 3-5 minutes.
- Add the bacon, hazelnuts, salt and pepper and toss to combine.
- Taste, adjust seasonings and serve.
