3 tablespoons unsalted butter, divided
1 small yellow onion, diced
2 cloves garlic, minced
3 tablespoons all-purpose flour
1 cup milk, warm
1 cup vegetable stock, warm
2 oz shredded gruyère cheese
4 fl oz freshly grated parmesan cheese, divided
kosher salt, to taste
olive oil, for greasing
1 lb brussel sprout, trimmed, quartered

Steps:

  • Preheat the oven to 400˚F (200˚C).
  • In a medium saucepan, melt 1½ tablespoons of butter over medium-low heat. Add the onion and garlic and cook until softened and translucent, about 5 minutes.
  • Add the remaining 1½ tablespoons of butter and the flour and whisk to combine. Increase the heat to medium and continue cooking for 2 minutes, until the flour is golden brown.
  • Slowly whisk in the milk and vegetable stock. Bring the mixture to a boil and continue to whisk until thickened, about 3 minutes.
  • Remove the sauce from heat and whisk in the Gruyère and 2 ounces (60g) of Parmesan cheese until completely melted. Season with salt to taste.
  • Grease a medium baking dish with olive oil, then add the Brussels sprouts. Pour the sauce over the sprouts and sprinkle with the remaining Parmesan cheese.
  • Bake for 20 minutes, until the sauce is bubbly and browned.
  • Serve warm.

1 tablespoon olive oil
1/2 teaspoon salt, divided

1 tablespoon butter
1 tablespoon minced fresh parsley
2 garlic cloves, coarsely chopped
1 cup heavy whipping cream
1/8 teaspoon crushed red pepper flakes
1/8 teaspoon ground nutmeg
1/2 cup shredded white sharp cheddar or Swiss cheese

Steps:

  • Preheat oven to 450°. Place Brussels sprouts in a large bowl. Add oil, 1/4 teaspoon salt and 1/8 teaspoon pepper; toss to coat. Transfer to two ungreased 15x10x1-in. baking pans. Roast 8-10 minutes or until lightly browned and crisp-tender. Reduce oven setting to 400°., Meanwhile, place bread, butter, parsley and garlic in a food processor; pulse until fine crumbs form., Place roasted sprouts in a greased 8-in. square baking dish. 1 pound Brussels sprouts, cleaned and trimmed
2 slices bacon, cut into 1/2 inch pieces
salt and ground black pepper to taste
½ cup heavy cream
¼ cup bread crumbs
¼ cup grated Parmesan cheese
2 tablespoons butter, cut into tiny pieces

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Lightly grease a baking dish.
  • Bring a large pot of lightly salted water to a boil. Add the Brussels sprouts and cook uncovered until tender, about 8 minutes. Drain in a colander, then immediately immerse in ice water for several minutes until cold to stop the cooking process. Once the Brussels sprouts are cold, drain well, and cut in halves or quarters, depending on size. Set aside.
  • Meanwhile, place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until limp and lightly browned, about 5 minutes. Reduce heat and stir in the Brussels sprouts. Season with salt and pepper then toss for about 1 minutes to evenly distribute the seasonings. Arrange bacon and Brussels sprouts on the prepared baking dish. Pour cream evenly over the Brussels sprouts, then sprinkle breadcrumbs and Parmesan cheese on top. Distribute pieces of butter over the bread crumbs.
  • Bake in the preheated oven until golden brown and heated through, 20 to 25 minutes.

2 pounds brussels sprouts
4 slices bacon, diced
3 cloves garlic, minced
1/4 cup diced shallots
2 tablespoons all-purpose flour
3/4 cup whole milk
1/4 cup heavy cream
1/2 teaspoon dried thyme
1/4 teaspoon ground nutmeg
Kosher salt and freshly ground black pepper, to taste
1 1/4 cups shredded Gruyere cheese, divided

Steps:

  • Preheat oven to 400 degrees F. In a large pot of boiling salted water, blanch brussels sprouts until crisp-tender, about 3-5 minutes. Drain well and cool in a bowl of ice water. Drain well and set aside. Heat a large oven-proof skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Drain excess fat; reserving 1 tablespoon in the skillet. Transfer bacon to a paper towel-lined plate. Add garlic and shallots to the skillet, and cook, stirring frequently, until fragrant, about 2 minutes. Whisk in flour until lightly browned, about 1 minute. Gradually whisk in milk, heavy cream, thyme and nutmeg. Cook, whisking constantly, until incorporated and slightly thickened, about 1-2 minutes. If the mixture is too thick, add more milk as needed; season with salt and pepper, to taste. Stir in brussels sprouts, bacon and 1 cup cheese until the cheese has melted, about 1-2 minutes. 12 oz brussels sprouts
2 cups corn
½ cup shredded gruyère cheese
½ cup bacon bits
½ cup shredded cheddar cheese

Steps:

  • Preheat the oven to 350°F (180°C).
  • Make the béchamel sauce: Melt the butter in a large saucepan over medium heat. Add the garlic and sauté for 3 minutes, or until fragrant.
  • Add the flour and whisk into the butter. Cook for 3 minutes, or until lightly browned.

1/8 teaspoon paprika

1 cup shredded smoked gouda cheese (or regular Gouda, but I recommend smoked)
1 tablespoon butter, melted
1/4 cup soft breadcrumbs

Steps:

  • Preheat oven to 375°F Lightly grease/spray a casserole dish.
  • In a large saucepan, cook Brussels sprouts in salted water until crisp-tender (fresh will take longer than frozen). Drain and place into prepared casserole dish.
  • While sprouts are cooking, melt 2 tbsp butter in a small saucepan. Add shallots; cook over medium heat for about 5 minutes.
  • Reduce heat to medium-low; add flour to saucepan and stir constantly to blend.
  • Add cream to saucepan; stir.

1/4 cup fine dry breadcrumb
1 tablespoon grated parmesan cheese
2 lbs fresh Brussels sprouts (or 3 10-ounce pkgs. frozen sprouts)

1 1/2 cups milk
4 ounces swiss cheese, shredded
1 tablespoon white wine worcestershire sauce
1/2 teaspoon salt

  • Mix breadcrumbs with Parmesan in a small dish and set aside.

2 tablespoons milk
1 cup sour cream
2 tablespoons grated parmesan cheese

  • Bring water to a boil in a large saucepan

5 ounces Gruyere, grated (about 1 cup grated)

Steps:

  • Preheat oven to 400 degrees F.
  • Bring a large pot of salted water to a boil over medium heat. Add the Brussels sprouts and cook for 5 to 7 minutes, until bright green and beginning to soften. Remove the sprouts with a slotted spoon and drop into a bowl of ice water to stop the cooking process.
  • Make the sauce by melting the butter and flour together in a saucepan over medium heat. Cook, stirring, until smooth and bubbling, about 1 minute; slowly whisk in milk and continue to cook, whisking frequently, until thick and creamy, 2 to 3 minutes. Season the sauce well with salt and heavily with pepper.
  • Halve the Brussels sprouts through the core and put them in an even layer in a 2 quart baking dish. Pour the sauce over the sprouts and sprinkle the cheese evenly over the top. Bake in the center of the oven for 10 to 15 minutes until the top is golden and bubbling.
