TURKEY HASH
Flavorful turkey hash makes a wonderful breakfast the day after Thanksgiving and helps you use up those leftovers.

Steps:
- Cook the bacon in a large cast-iron skillet over medium heat, turning often, until crispy, about 10 minutes. Turn the heat off. Using tongs, transfer the bacon to a plate lined with paper towels. When cool enough to handle, crumble the bacon and set it aside.
- Reserve 2 tablespoons of the bacon's rendered fat in the skillet. Use about a teaspoon more to grease a nonstick skillet where you'll later fry the eggs.
- Heat the cast-iron skillet back on medium heat. Add the onions, bell peppers, and kosher salt. Cook, stirring often, until the onions are golden, 5-7 minutes. Stir in the garlic, paprika, cumin, and cayenne. Cook, stirring, for 30 seconds.
- Stir in the turkey meat. Cook, stirring, for about two minutes. Turn the heat off but leave the skillet on the burner. Cover the skillet with a lid or with foil to keep the hash warm while you fry the eggs.
- Divide the hash between four plates. Sprinkle the bacon crumbles on top, then top each plate with an egg. Season the eggs if you wish (I like to use salt, pepper, red pepper flakes, and dried parsley). Serve immediately.

Thanksgiving is coming soon. Here is a easy and great tasting way to use up some leftovers. Serve this with eggs and fresh fruit for a leasurly next morning meal. double or triple for added guests

Steps:
- Sauté bacon in large skillet for 5 minutes. Add chopped onion and celery and continue cooking until onions are clear and bacon is cooked through, about 10 minutes.
- Add potatoes, turkey, salt and pepper. Add oil if necessary. Sauté 10 minutes until the potatoes are crisped. Serve.
- alternate version with less fat. after step 1 add the remainder of ingredients and pour all into a 9x13 baking pan and cook on 350 for 20 minutes and then place under broil for a few minutes watching as it starts to brown then flip and brown other side, serve
TURKEY RE-HASH
Steps:
- Add the sausage to a heavy skillet over medium high heat and cook until the sausage begins to render some of its fat, about 2 to 3 minutes.
- Add the onions, jalapeno and peppers to the sausage and cook until soft and translucent. Add the potatoes to the skillet and increase the heat to high. Cook until the potatoes have browned lightly.
- Add the black beans, pudding, and turkey and stir occasionally. Cook until the hash is thoroughly heated. Season with cayenne, salt, and pepper.

- In medium saute pan, add 2 ounces olive oil, onions, peppers and saute until translucent. Add turkey and brown on all sides. Season with salt and pepper.
- In a separate pan, add 2 ounces of oil, and fry potatoes in oil until crispy. On a serving plate layer the turkey mixture on top of the crispy potatoes.
- Top with diced roma tomatoes and fresh squeezed lime juice.
TURKEY HASH - THANKSGIVING LEFTOVERS
This is a great way to reinvent boring turkey leftovers. Making a hash from leftover mashed potatoes and turkey is genius. Cooking down the onions really has a punch of flavor. I love the crunch on the outside of the hash. Serving a fried egg on top sends this over the top. A great breakfast, but it's hearty enough for dinner too.

Steps:
- Check out your leftovers pile in the fridge. Grab the turkey scraps. Grab the mashed potatoes. Grab an onion.
- Heat up a large skillet on medium-high heat. Add some olive oil to the pan (enough the lightly coat the bottom). Toss in some chopped onion. Enough for the amount of turkey and potatoes you plan to use.
- Once the onions are tender, add the turkey and stir it around.
- Throw in some mashed potatoes until you think it's enough.
- Cover the pan with a lid or some foil and leave it alone for 5 minutes.
- Scrape up the hash from the bottom of the pan and turn it over, or stir it around. Leave it alone for 5 more minutes, covered. You can turn off the heat. Check seasonings.
- Check the seasoning. Dish it up with a fried egg. It's soooo good!
TURKEY HASH
A good use for turkey leftovers--I've made this after Thanksgiving for decades. Amounts are approximate estimates. Nowadays I often cut the butter to 1 Tbs or just use nonstick cooking spray in place of butter.
