CHEESY BACON AND EGG BRUNCH CASSEROLE
This one-dish brunch casserole is ideal for a crowd. Add a fruit salad and you can sit back and enjoy your company.

Steps:
- Preheat oven to 350 degrees F. Cook bacon in large skillet until crisp. Reserve 2 tablespoons of the drippings. Drain bacon on paper towels; crumble and set aside. Add onion to drippings in skillet; cook and stir 3 minutes or until softened.
- Spread 1/2 of the bread cubes in 13x9-inch baking dish. Layer with 1/2 each of the onion, bacon, Cheddar cheese and mozzarella cheese. Spread evenly with cottage cheese. Top with remaining bread cubes, onion, bacon, Cheddar cheese and mozzarella cheese.
- Beat eggs in medium bowl until foamy. Add milk, mustard, nutmeg and pepper; beat until well blended. Pour evenly over top. Press bread cubes lightly into egg mixture until completely covered. Let stand 10 minutes.
- Bake 40 to 50 minutes or until center is set and top is golden brown.

- Preheat oven to 325°. Place croutons in a greased 11x7-in. baking dish; sprinkle with cheese. Combine eggs, milk and seasonings; pour into baking dish. Top with partly cooked bacon. Bake until bacon is crisp and a knife inserted in center comes out clean, 45-55 minutes.

BRUNCH EGG AND CHEESE CASSEROLE
This is the best breakfast casserole I've had in a very long time. It's kind of like a chili relleno. I used double the amount of green chiles the recipe called for, and I wished I added even more. This is a perfect dish to serve for company. The egg puffs up just a little, and it's as gorgeous as it is delicious. It says it serves 20, but I don't think it's possible to just eat one serving. Steps:
- Preheat oven to 400 degrees.
- Combine melted butter and beaten eggs together.
- Add cheese and green chiles and mix well.
- Add flour, baking powder, and salt and combine thoroughly.
- Spread mixture evenly in a 9x11" greased baking dish and bake at 400 degrees for 15 minutes.
- Reduce heat to 350 degrees and continue baking for 35 to 40 minutes.

FAST-AND-FABULOUS EGG AND COTTAGE CHEESE CASSEROLE
This is the easiest and best egg casserole I have tried so far. My sweet mother-in-law shared this recipe with me. I make 3 or 4 at the time and keep them in the freezer to take to gatherings, feed guests, or surprise kids. Green chilies make it pop!

- Preheat oven to 400 degrees F (200 degrees C). Prepare a 10x13-inch baking dish with cooking spray.
- Mix eggs, cottage cheese, Monterey Jack cheese, green chiles, butter, flour, bacon, and baking powder together in a large bowl; pour into prepared baking dish.
- Bake in the preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C) and continue baking until a toothpick inserted into the center of the casserole comes out clean, about 30 minutes more.
