SLOW-COOKER DRIP BEEF SANDWICHES

The slow cooker does most of the work in this recipe-it makes the best shredded beef!

1 2 1/2-pound piece beef chuck roast
1 tsp. minced fresh rosemary
3/4 tsp. kosher salt
Black pepper, to taste
1 12-ounce jar pepperoncini
1 c. beef broth
6 tbsp. salted butter, softened
1 large onion, sliced
6 soft hoagie rolls, split
12 slices provolone cheese
Potato chips, for serving

Steps:

  • Toss the beef roast in a 6- to 8-quart slow cooker with the rosemary, ½ teaspoon salt and a generous grinding of pepper. Add the pepperoncini with their brine, along with the beef broth. Cover and cook on low until the meat is very tender and easy to pull apart, 7 to 8 hours.
  • When the slow cooker has about 15 minutes left, heat 2 tablespoons butter in a large skillet over medium-high heat. Add the onion, the remaining ¼ teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until tender and lightly browned, about 10 minutes.
  • Remove the roast to a bowl and shred using 2 forks, then return it to the slow cooker. Keep warm.
  • Preheat the broiler. Put the rolls on a baking sheet and spread with the remaining 4 tablespoons butter. Broil until toasted, about 2 minutes.
  • Heap a generous portion of meat on each roll, then spoon some of the cooking liquid over the meat. Top with a few pepperoncini from the slow cooker and plenty of caramelized onions. Put 2 slices of cheese on each sandwich and return to the broiler just to melt the cheese, about 1 more minute. Serve with potato chips and the extra cooking liquid on the side for dipping.

5 lbs beef roast ( any cut works great!)
1 pack onion soup mix
16 ounce whole pepperoncini peppers
water (enough to cover the meat)

Steps:

  • Place beef in your crock pot.
  • Pour onion soup mix over the roast.
  • Pour entire jar of pepperoncini peppers and the juice over the roast.
  • Fill the pepperoncini jar with water and pour over the roast until the meat is completely covered.
  • Mix with a spoon until season packet is evenly dispersed.
  • Cook on high for 4-6 hours or on low 8 hours - overnight.
  • 30 minutes before you plan to serve this roast, pull it out of the crock pot and shred the meat with 2 forks.
  • Return the meat to the crock pot and let it sit in the juices until you are ready to serve.

Oh, and here's a tip -- make sure you DON'T drain the meat before placing it on the rolls -- the liquid has an AWESOME taste, so make sure you get plenty of it on your sandwich for the best flavor. In Chicago they say "the wetter, the better" when it comes to Italian Beef Sandwiches!!

1 teaspoon salt
1 teaspoon black pepper, ground
1 teaspoon oregano
1 teaspoon basil
1 teaspoon onion salt
2 -3 cups water or 2 -3 cups broth
1 teaspoon parsley
1 teaspoon garlic powder
1 bay leaf
1 (2/3 ounce) package dried Italian salad dressing mix
5 lbs rump roast or 5 lbs chuck roast
3 beef bouillon cubes (optional)
1 green pepper, sliced (optional)

Steps:

  • In a medium saucepan over medium heat. Combine the salt, pepper, oregano, basil, onion salt, water, parsley, garlic powder, water, bay leaf and salad dressing mix. Stir well and bring just to a boil.
  • Place roast in a slow cooker and pour mixture over the roast. cover and cook on low setting for 10-12 hrs on low or high for 4-5 hours.
  • The best thing to do is to have it cook in the slow cooker until it is cooked through, remove the bay leaf, then shredd it and return it to the juice for about an hour.
  • Optional - Last 45 minutes add boullion cubes and green pepper. If you use broth instead of water don't add the bouillon cubes.
  • Serve on Italian bread.

3 -5 lbs beef roast (any inexpensive cut will work)
1 (4 ounce) package Lipton Onion Soup Mix
1 (14 ounce) jar yellow pepperoncini peppers
1 (10 ounce) can Swanson chicken broth
1 (10 ounce) can swanson beef broth

Steps:

  • Place beef roast in crock pot.
  • Pour Onion soup mix, beef, and chicken broths over roast.
  • Cut tops and stems off each pepperoncini pepper, and return them to their original jar in the juice.
  • Pour entire jar of pepperoncini peppers w/juice over beef roast and mix with large spoon to blend soups.
  • Cover crock pot and cook on low for 11 hours.
  • (note - 11 hours, not 8 hours like most recipes)This is important to the success of this roast.
  • The last 1/2 hour of cooking time, take roast out of crock pot and "shred" the meat apart with a knife, and return meat to the juices in crock pot for 30 minutes.
  • Serve on your favorite bun or hoagie roll, with extra juice on the side.
  • Serving Suggestion: Sprinkle shredded mozzarella cheese over beef sandwich and microwave for 35 seconds before serving, then spoon additional au jus over the bread!

2 teaspoons minced fresh rosemary

One 16-ounce jar pepperoncini
2 cups beef broth
2 tablespoons salted butter
2 tablespoons olive oil
2 large onions, sliced
1/4 teaspoon kosher salt

Steps:

  • For the beef: Toss the roast in a 6- to 8-quart slow cooker with the rosemary, salt and a generous grinding of pepper. Add the pepperoncini with their liquid and the beef broth. Cover and cook on low until the meat is very tender and easy to pull apart, 7 to 8 hours.

  • Take the can of beer and take one big drink from the can.
  • Now pour the rest of the beer into bottom of crock pot.

  • Place about 6-10 pepperoncini peppers in bottom of the crockpot.

Three ingredients + almost zero prep + your trusty slow cooker = *RGF*. (Really Good Food.) While there's a tiny kick from the peppers, it's not the eye-watering kind of heat I tend to fear. I got this from allrecipes.com where the author suggests serving the meat and peppers on toasted hoagie rolls with provolone or mozzarella and your choice of condiments. If using cheese, (which would help temper any heat from the peppers), top the roll with the meat, then cheese and zap it in the microwave for a few seconds or, better yet, under the broiler, particularly if you're toasting your rolls there. You could also slap a serving on tortillas with appropriate condiments. (Damn, I'm getting hungry.) Some reviewers add broth and onions to the crock pot, but it really doesn't need it. Let your taste buds be your guide! *** UPDATE *** The other night I mixed some shredded Monterey Jack and this lovely seriously aged Dutch Unie Kaas Robusto, broiled it on the top half of a sesame seed bun until melted, then slapped that puppy on the meat-topped lower half of the bun. I also experimented with a little Cattlemen's (Smokehouse) bbq sauce. And in addition to the slices of garlic inserted into the meat, I put 1/2 of a head of garlic in one of those little drawstring bags and plopped that puppy in the crockpot to cook with the rest of the ingredients. Yum!
