BROWNIES FOR A CROWD

Brownies for a Crowd image

Provided by Laura

Number Of Ingredients 12

8 eggs
2 tsp salt
2 cups of butter , melted (yes that is right 2 cups - remember these are for a crowd)
1 1/2 cups Hershey's cocoa (that is what her recipe says and that is what I used)
4 cups sugar
4 tsp vanilla
3 cups flour
Frosting:
4 cups powdered sugar
1/2 cup butter, softened
1/2 cup cocoa
milk

Steps:

  • Beat eggs with a mixer in a large bowl. Then add sugar, salt, vanilla and beat for 1 minute.Add melted butter and blend. In another bowl, mix flour and cocoa with a whisk until well blended,Add flour mixture to egg mixture and mix until well combined.Spread onto a greased jelly roll pan (12 x 17) and bake at 350 degrees for 20-25 minutes. Cool for 15 minutes and spread with frosting.
  • For the frosting: Blend powdered sugar, butter, and cocoa along with enough milk to make the frosting a spreadable consistency. Spread over the brownies after they had cooled for 15 minutes. Keep spreading as the frosting melts making it nice and even on the brownies. Allow brownies to continue to cool. Makes 30 good sized brownies.

BROWNIES - 4 WAYS

Brownies - 4 Ways image

These are the brownies I made for a care package for my son, Charlie, and his roommates at college. I made four different kinds because each of the boys wanted their favorite brownie. It's an easy way to please a crowd!

Provided by Zoë François

Categories     Desserts

Number Of Ingredients 13

2 1/3 cups (283g) cake flour
1/2 cup (45g) cocoa powder
1/2 tsp kosher salt
2 cups (452g) unsalted butter
3/4 lb (340g) bittersweet chocolate (chopped)
7 eggs (room temperature)
3 cups (600g) sugar
2 tsp vanilla extract (homemade vanilla extract)
2 tbsp peanut butter
crushed Oreos
2 tbsp Nutella
toasted hazelnuts
3 oz chocolate chunks

Steps:

  • Preheat oven to 350°F. Butter and line a 9x13-inch baking pan with buttered parchment.
  • Whisk together the flour, cocoa powder and salt. Set aside.
  • In a medium saucepan over medium-low heat, melt the butter to just simmering. Turn off the heat and add the chopped chocolate. Swirl the pan so the chocolate is submerged in the butter and let sit for 3 minutes. Gently whisk until smooth.
  • In a bowl of a stand mixer, fitted with the whisk attachment, whip together the eggs, sugar and vanilla on medium-high speed until light and fluffy, about 5 minutes.
  • Turn the speed to low and slowly add the melted chocolate mixture.
  • Add the flour mixture to the chocolate mixture and stir just until combined.
  • Pour into prepared pan and add toppings, if desired.
  • Bake for about 35-40 minutes or until a tester comes out with moist crumbs. It can take much longer depending on your oven and ingredient temperature. If you like your brownies dense and gooey, bake them until the sides puff, but the center is still fudgy when tested. Note: All ovens are different, so the bake time may vary depending on the oven. An oven thermometer will help determine actual temperature.

BROWNIES FOR A CROWD

Brownies for a Crowd image

This recipe is in an old Farm Journal cookbook, Homemade Cookies, published in the 1971. The brownies are cake-like, the chocolate syrup making them nicely moist. I have made this recipe many times, and it is always a family favorite.

Provided by Ruth Ann Vokac

Categories     Chocolate

Time 45m

Number Of Ingredients 15

1/2 c butter
1 c sugar
4 eggs
1 tsp vanilla
1 1/2 c hershey syrup (one can)
1 c flour
1/2 tsp baking powder
1/4 tsp salt
3/4 c chopped nuts (optional)
ICING INGREDIENTS
6 Tbsp butter
6 Tbsp milk
1 c sugar
1/2 c chocolate chips
1 tsp vanilla

Steps:

  • 1. Heat oven to 350 degrees. Grease well a 15 1/2" x 10 1/2" x 1" jelly roll pan.
  • 2. Cream together butter and sugar. Beat in eggs and vanilla. Stir in chocolate syrup.
  • 3. Mix flour, baking powder, and salt. Add to chocolate mixture. Add nuts if using.
  • 4. Pour batter into prepared pan. Bake about 22 minutes or until an inserted toothpick comes out clean.
  • 5. Cool in pan.
  • 6. When brownies are cool, prepare frosting:
  • 7. Combine butter, sugar, and milk in a saucepan. Bring to a boil and boil 30 seconds. Remove from heat. Add chocolate chips and vanilla.
  • 8. Stir until mixture thickens slightly. (I hasten this process by putting pan's bottom in ice water.)
  • 9. Spread icing over brownies. If I haven't used nuts in the brownies, sometimes I sprinkle nuts over the icing as soon as I spread it.

  • Preheat the oven to 325°F (163°C). Line a 12-by-18-inch baking pan or a couple 9-by-13-inch baking pans with aluminum foil or parchment paper cut to fit. Lightly butter the foil or parchment. [Editor's Note: We found that if you're short on baking pans, it also works to divvy the batter between a 9-by-13-inch baking pan and a 9-inch-square baking pan.]
  • In a small saucepan, bring the water, butter, and sugar to a simmer and stir until the butter melts and the sugar dissolves.
  • Dump the chopped chocolate, salt, vanilla, and baking soda in a bowl and pour the hot liquid over it. Let the mixture sit for a minute or so and then gently stir until the chocolate is melted and smooth. Let cool for about 5 minutes.
  • Add the eggs to the batter, 1 at time, mixing with a whisk just until incorporated after each addition. Add the flour and whisk just until incorporated. Add the chocolate chips or chopped chocolate and stir just until combined. Scrape the batter into the prepared pan.
