Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8-inch square pan.
- In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder. Spread batter into prepared pan.
- Bake in preheated oven for 25 to 30 minutes. Do not overcook.
- To Make Frosting: Combine 3 tablespoons softened butter, 3 tablespoons cocoa, honey, 1 teaspoon vanilla extract, and 1 cup confectioners' sugar. Stir until smooth. Frost brownies while they are still warm.

- Beat eggs with a mixer in a large bowl. Then add sugar, salt, vanilla and beat for 1 minute.Add melted butter and blend. In another bowl, mix flour and cocoa with a whisk until well blended,Add flour mixture to egg mixture and mix until well combined.Spread onto a greased jelly roll pan (12 x 17) and bake at 350 degrees for 20-25 minutes. Cool for 15 minutes and spread with frosting.
- For the frosting: Blend powdered sugar, butter, and cocoa along with enough milk to make the frosting a spreadable consistency. Spread over the brownies after they had cooled for 15 minutes. Keep spreading as the frosting melts making it nice and even on the brownies. Allow brownies to continue to cool. Makes 30 good sized brownies.

This recipe is also known simply as Mom's Brownies. Always a hit anywhere they go, Mom usually made these for bake sales and potlucks. Once in a while, Mom even made them for us. Frost with Recipe #322559.

- In a 2 quart saucepan, melt margarine and chocolate together over low heat.
- Remove from heat; stir in sugar.
- Beat in eggs, one at a time.
- Stir vanilla into chocolate mixture.
- Combine flour, salt, and baking powder; stir into chocolate mixture.
- Pour into greased 10x15x1 inch baking pan; sprinkle nuts over top.
- Bake at 350F for 18 to 20 minutes. Do not overbake!
- When cool, frost with Recipe #322559.
- Cut into 48 bars.

BROWNIES - 4 WAYS
These are the brownies I made for a care package for my son, Charlie, and his roommates at college. I made four different kinds because each of the boys wanted their favorite brownie. It's an easy way to please a crowd!

- Preheat oven to 350°F. Butter and line a 9x13-inch baking pan with buttered parchment.
- Whisk together the flour, cocoa powder and salt. Set aside.
- In a medium saucepan over medium-low heat, melt the butter to just simmering. Turn off the heat and add the chopped chocolate. Swirl the pan so the chocolate is submerged in the butter and let sit for 3 minutes. Gently whisk until smooth.
- In a bowl of a stand mixer, fitted with the whisk attachment, whip together the eggs, sugar and vanilla on medium-high speed until light and fluffy, about 5 minutes.
- Turn the speed to low and slowly add the melted chocolate mixture.
- Add the flour mixture to the chocolate mixture and stir just until combined.
- Pour into prepared pan and add toppings, if desired.
- Bake for about 35-40 minutes or until a tester comes out with moist crumbs. It can take much longer depending on your oven and ingredient temperature. If you like your brownies dense and gooey, bake them until the sides puff, but the center is still fudgy when tested. Note: All ovens are different, so the bake time may vary depending on the oven. An oven thermometer will help determine actual temperature.

This recipe is in an old Farm Journal cookbook, Homemade Cookies, published in the 1971. The brownies are cake-like, the chocolate syrup making them nicely moist. I have made this recipe many times, and it is always a family favorite.

- 1. Heat oven to 350 degrees. Grease well a 15 1/2" x 10 1/2" x 1" jelly roll pan.
- 2. Cream together butter and sugar. Beat in eggs and vanilla. Stir in chocolate syrup.
- 3. Mix flour, baking powder, and salt. Add to chocolate mixture. Add nuts if using.
- 4. Pour batter into prepared pan. Bake about 22 minutes or until an inserted toothpick comes out clean.
- 5. Cool in pan.
- 6. When brownies are cool, prepare frosting:
- 7. Combine butter, sugar, and milk in a saucepan. Bring to a boil and boil 30 seconds. Remove from heat. Add chocolate chips and vanilla.
- 8. Stir until mixture thickens slightly. (I hasten this process by putting pan's bottom in ice water.)
- 9. Spread icing over brownies. If I haven't used nuts in the brownies, sometimes I sprinkle nuts over the icing as soon as I spread it.
SHEET PAN FUDGY BROWNIES
