BROWNIE IN A MUG (6 VARIATIONS)

If you are thinking about making a tin of brownies, or baking a cake, or even going to the store and buying donuts, stop. Don't proceed. Instead make this amazing chocolate brownie in less than 2 minutes. Indulging in a treat like this is perfect for those of you (me included) on a diet, who are craving dessert but don't want to go overboard by baking a dozen cookies or so. A single serving is very satisfying, and I've included 6 different variations so you can adjust the toppings/mix-ins to your taste. I tried the mounds one tonight and it was AMAZING! I also used hersheys special dark cocoa powder instead of regular cocoa, and it came out extra rich and chocolatey. This is a dense, moist and rich mug brownie, perfect with a glass of milk or a scoop of ice cream, enjoy!!!

Number Of Ingredients 7

1/4 cup sugar
1/4 cup flour
2 tablespoons cocoa
1 pinch salt
2 tablespoons vegetable oil or 2 tablespoons melted butter
5 tablespoons water
1/4 teaspoon vanilla extract (optional)

Steps:

  • Add all of dry ingredients to mug.
  • Mix well with a fork or small whisk until blended.
  • Add oil or melted butter, water, and vanilla.
  • Mix well (add mix-ins if using).
  • Put in the microwave and cook on high heat for 1 minute 40 seconds - 2 minutes (less time for a more moist brownie, more time for a more cake-like brownie).
  • Add toppings or a scoop of ice cream and enjoy!
  • Variations:.
  • Mounds: add 1-2 tablespoons chocolate chips and a sprinkling of sweetened flaked coconut on top of cooked brownie.
  • Peanut Butter Swirl: add 1-2 tbsp creamy peanut butter into mix before microwaving, or add 1 tablespoons on top of brownie after its cooked (I've noticed the peanut butter swirl tastes best with peanut butter on top of the brownie after it's cooked).
  • Berry Jam: top cooked brownie with 1-2 tablespoons melted berry jam (strawberry, raspberry or blackberry is best. Just heat in microwave until melted then pour over brownie).
  • S'mores: top cooked brownie with mini marshmallows and graham cracker crumbs.
  • Candy Bar: mix in 1-2 tablespoons of your favorite chopped chocolate candy bar into the mix before heating, or add m&ms.
  • Caramel Sea Salt: drop 2 salted caramels into the middle of the mix before heating, and once done top with a light sprinkle of sea salt.

1/2 cup all-purpose flour
2 tablespoons unsweetened cocoa powder
1/2 teaspoon baking powder
1/2 cup butter or 1/2 cup margarine
1 cup semi-sweet chocolate chips
1/2 cup packed light brown sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup semi-sweet chocolate chips

Steps:

  • Heat oven to 350 degrees. Line an 8 inch square baking pan with foil, letting foil extend above pan on 2 sides. Coat with nonstick spray.
  • Whisk flour, cocoa and baking powder in a medium bowl until thoroughly blended.
  • Melt butter and the 1 cup chocolate chips in a medium saucepan over low heat, stirring as needed. Remove form heat; whisk in sugar, then eggs and vanilla until blended. Scrape into flour mixture; stir until smooth. Stir in the 1/2 cup chips. Spread in prepared pan.
  • Bake 25 to 30 minutes or until a wooden pick inserted in center comes out with moist crumbs attached. Cool in pan on a wire rack.
  • Lift foil by ends onto cutting board. Cut into 16 squares.
  • Brownie Sundaes: Prepare Basic Brownies through step 5. Cut into 9 squares. Chocolate Sauce: Bring 1/3 cup water to a boil in a small saucepan or microwave-safe bowl. Remove from heat; add 1 cup semisweet chocolate chips and 1 teaspoon vanilla extract; stir until chocolate melts and sauce is smooth. Top each brownie with a scoop of ice cream, then warm chocolate sauce.
  • Brownie Pizza: Coat a 12 inch pizza pan with nonstick spray. Prepare Basic Brownies batter; spread in prepared pan. Sprinkle the 1/2 cup chocolate chips around edge. Bake 15 to 20 minutes until a wooden pick inserted in center comes out clean. Sprinkle 1 cup white chocolate chips in middle, let stand 5 minutes until soft, then spread to edge of semisweet chips. Immediately sprinkle with crispy M & M's and gummy fruits (about 1/4 cup each). Let cool. Cut into 12 wedges.
  • Brownie Drop Cookies: Coat foil-lined baking sheets with nonstick spray. Prepare Basic Brownies batter using only 1/2 stick butter or margarine. Stir in 1 cup each white chocolate chips and chopped walnuts. Let stand 5 to 10 minutes, then drop 1/4 cupfuls 2 inches apart on prepared baking sheets. Bake immediately for 12 minues or until cookies are puffed and shiny. Cool on foil 1 to 2 minutes, then remove to a wire rack to cool completely.
  • Brownie Coffeecake: Streusel Topping: Put 1/2 cup each flour, light brown sugar and chopped pecans and 1/2 stick softened butter in a bowl. Work with a fork until coarse crumbs form; set aside. Coat a 9 inch springform pan with nonstick spray. Prepare Basic Brownies batter increasing flour to 1 1/4 cups, adding 1/2 teaspoon baking soda to the flour mixture and stirring in 3/4 cup reduced-fat sour cream after the eggs and vanilla. Spread in prepared pan; sprinkle with streusel. Bake 50 to 55 minutes or until a wooden pick inserted in center of cake comes out clean.
  • Brownie Cupcakes with Cream Cheese Frosting: Line 12 regular muffin cups with paper or foil liners. Prepare Basic Brownies batter, adding a 3.8 oz box instant chocolate pudding to the ingredients in Step 2 and 2 extra large eggs in Step 3. Spoon into lined cups. Bake 30 to 33 minutes or until a wooden pick inserted in cemters comes out with moist crumbs attached. Cool in pan on wire rack; remove from pan. Frosting: Mix 2 ounces softened cream cheese and 1/2 stick softened butter or margarine in a medium bowl. Add 1 1/4 cups confectioners' sugar and 1/2 teaspoon vanilla extract; stir with a rubber spatula until smooth and well blended. Spread on cooled cupcakes.

  • Add chunks of your favorite chocolate candy bar to the mix. Chop up 1 large candy bar into 1 centimeter sized pieces and add them to your brownie mix.
  • Add vanilla extract to the brownie mix. Add 1 tsp to 1 TBS vanilla when you are mixing all the ingredients together. This will bring out the chocolate flavor, and add a delicious vanilla taste to the brownies!
  • Add chocolate chips to the brownie mix before baking. Try mixing the “chocolate” chips in with the brownie batter. You could add 1 cup of dark, semi sweet, milk, white chocolate, cinnamon, mint or even peanut butter chips.
  • Top your brownies with white, chocolate or peanut butter chips after they bake. As soon as the brownies come out of the oven sprinkle chips on liberally, allow them to melt a little and then spread them over the top to create a frosting with them.
  • Add marshmallows to the brownie mix. Stir in 1/2 of a bag of small marshmallows into the prepared brownie batter. You could also wait to add the marshmallow till the brownies are almost done baking.
  • Add chopped nuts to your brownie mix. Chop up some nuts with a knife or a food processor and add them to your mix before baking. Try adding peanut, walnuts, pecans, cashews or almonds.
  • Top the brownies with frosting. After your brownies are done baking, and have cooled a little, add your favorite frosting to the top. Homemade or from a can, either way is a winner.
  • Add crushed peppermints. Crush peppermint candy canes in a bag with a rolling pin or with a food processor. Add about 1 cup of the crushed candy pieces to the brownie mixture.
  • Add cookie pieces. Break or chop your favorite cookie into small pieces and add 1 cup of them into the mixture before baking. Oreos, Nutter Butters or Chocolate Chip Cookies are delicious.
