BROWNIE-BATTER COOKIE CUPS
Great cookie cups! Even after the cookies are baked, the filling stays gooey and tastes just like brownie batter. My friends and family love them!

Steps:
- Preheat the oven to 325 degrees F (165 degrees C).
- Mix flour and sugar together in a large bowl. Set aside.

- Bake in the preheated oven until pastry is golden and filling is slightly puffed, about 20 minutes. Let cool in pan 10 minutes before transferring to a wire rack to cool completely.

Steps:
- Make the shortbread layer: Preheat the oven to 350˚. Line a 9-by-13-inch baking pan with foil, leaving a 2-inch overhang on the two short sides; lightly coat with cooking spray. Arrange the shortbread cookies in a single layer in the prepared pan.
- Make the cookie-dough layer: Whisk the flour, baking soda and salt in a medium bowl. Beat the butter and brown sugar in a large bowl with a mixer on medium-high speed until pale and fluffy, 3 to 5 minutes. Beat in the egg and vanilla until smooth. Reduce the speed to low and beat in the flour mixture until just combined. Stir in the baking chips and M&M's.
- Make the brownie layer: Melt the butter and chocolate in a medium saucepan over medium heat, stirring occasionally. Let cool slightly. Stir in the granulated sugar and eggs until smooth and glossy. Stir in the flour, cocoa powder and salt until no lumps remain.
- Spoon about half the brownie batter over the shortbread cookies and spread gently to cover. Flatten handfuls of the cookie dough mixture into small patties and lay on top of the brownie batter in a single layer. Spread the remaining brownie batter on top to cover.
- Bake until a toothpick inserted into the center of the brownies comes out clean, 55 to 60 minutes. Transfer to a rack and let cool 1 hour in the pan. Carefully remove from the pan using the foil overhang; transfer the brownies to the rack to cool completely. Cut into pieces.
BROWNIE COOKIE BARS
This brownie cookie bar recipe kind of combines brownies and cookies, except that the brownies are square and thin enough to be considered a cookie! When fully cooked, sprinkle powdered sugar over top, cut into squares, and they're ready to eat! If you scale down the recipe, you may want to use a smaller pan because these are meant to be thin. Trust me, they go fast!

OREO AND PEANUT BUTTER BROWNIE CUPCAKES
I found this while searching the web and decided to try it today. My youngest son told me it was the best he ever had and my brother went so far as to say it was oreogasmic...so I'll let you decide. It is best to spay the cupcake liners so the brownies don't stick.

Steps:
- Preheat oven to 350f (180c) degrees and line a 12 muffin cup baker with paper liners.
- Prepare brownie mix according to package directions. For each cupcake cup spread 1/2 teaspoon of peanut butter over each Oreo cookie and stack them on top of each other. Place oreo stacks into the cupcake lined muffin cups. Spoon 2 tablespoons of brownie batter over each stacked oreos and let it run down the sides of the cookies. If you have left over brownie batter, bake separately in a separate baker or muffin tin. Bake cookies and brownies for 18 to 20 minutes, until brownies are cooked through. Let cool completely then serve.
- Makes 12 servings.

- Start with the brownie batter. Combine all of the dry ingredients (protein powder, cocoa powder, powdered peanut butter, and salt) in a bowl and whisk together.
- Add in the canned pumpkin, maple syrup, and brown sugar, and use a silicone spatula to mix. It’s going to be thick, so continue stirring until a batter begins to form.
- Fold in the chocolate chips, then refrigerate for 1 hour to fully thicken. If you don’t have an hour, you can let it set in the freezer for less time.
- Now, move on to creating your cookie dough. Combine all of the dry ingredients for the cookie cups: protein powder, almond flour, brown sugar, baking soda, and salt. Mix together well.
