BROWN SUGAR SHORTBREAD
Chewy, crisp, tender, and EASY brown sugar shortbread!

- Whisk the flour and salt together in a medium bowl.
- In a large bowl using a handheld mixer or a stand mixer fitted with a paddle attachment, beat the butter, light brown sugar, and dark brown sugar together on medium-high speed until completely smooth and creamy. Add the vanilla and beat until combined.
- On low speed, slowly add the dry ingredients. Turn the mixer up to high speed and beat until the dough comes together.
- Turn the dough out onto a floured work surface and, with floured hands, divide into two. Shape each half into an 8-inch log, about 2.5 inches in diameter. Tightly wrap the logs in plastic wrap and chill in the refrigerator for at least 4 hours and up to 5 days. Chilling is mandatory for this cookie dough. I always chill mine overnight.
- Preheat oven to 350°F (177°C). Line two large baking sheets with parchment paper or silicone baking mats. (Always recommended for cookies.) Set aside.
- Remove logs from the refrigerator and roll into coarse sugar, if desired. It's added only for a little crunch! Slice each log into 12 equally thick cookies and place cookies on baking sheets about 2 inches apart. Bake the cookies for 12-14 minutes or until brown around the edges. Allow to cool for 5 minutes on the cookie sheet, then transfer to cooling rack to cool completely.
- Cookies will stay fresh covered at room temperature or in the refrigerator for 1 week.
CHEWY BROWN SUGAR BARS
These brown sugar bars are quite the sweet treat. They're a cross between a blondie and a praline. They have a chewy bite with a delightful pecan crunch. Serve warm with some vanilla ice cream and maybe a drizzle of caramel too. Yum!

- 1. Preheat oven to 300 degrees. Grease or spray 9x13 pan.
- 2. Melt butter in saucepan. Remove from heat.
- 3. Stir in brown sugar, eggs, and flour. Mix well. The batter is thick.
- 4. Add vanilla extract and pecans.
- 5. Spread into a 9x13 greased pan.
- 6. Bake in preheated oven for 20 to 30 minutes (depending on your oven).
- 7. They are done when they are brown, pulling away from sides of the pan and a toothpick comes out clean when inserted into the center.
BROWN SUGAR SQUARES
Decadent brown sugar and pecans on a shortbread crust -- like mini pecan pies in a melt-in-your-mouth bite! This recipe was my mother's and the squares are a hit wherever I take them. The dessert dish always goes home empty. I usually use pecans, but other nuts can work also.

- Bake for 20 minutes at 350 degrees.
- In a separate bowl, combine eggs, brown sugar, vanilla and chopped nuts. Pour over baked crust base and bake another 20 minutes.
- Cut into squares when cool.

This recipe was on top of a shoebox full of recipes my grandmother had clipped from magazines. I remember these fondly -- always coupled with a glass of cold milk. Full of old-fashioned flavor!

- Preheat oven to 350 degrees.
- Grease and flour an 8" baking pan.
- Sir together butter and brown sugar.
- Add egg and stir until blended.
- Combine flour, baking powder and salt.
- Add to brown sugar mixture, mixing well.
- Add vanilla extract and chopped pecans and stir.
- Pour into the greased and floured pan.
- Bake at 350 degrees for 30-35 minutes.
- Cool in pan.
- When cool, cut into bars and dust with powdered sugar.

- Preheat oven to 350°F. Butter 13x9x2-inch metal baking pan. Blend flour and powdered sugar in processor. Add butter and cut in, using on/off turns, until moist clumps form. Press dough onto bottom of prepared pan. Bake until golden, about 20 minutes. Maintain oven temperature.
- Stir pecans, brown sugar, honey and cream in heavy small saucepan over medium heat until sugar dissolves. Boil until mixture bubbles, about 2 minutes.
- Pour pecan mixture over crust. Bake until filling bubbles and is light caramel color, about 20 minutes. Cool completely. (Can be prepared 1 day ahead. Cover tightly and store at room temperature.) Cut into squares and serve.

- In a small saucepan, combine the dates, brown sugar and orange juice. Bring to a boil. Reduce heat; simmer, uncovered, for 3-4 minutes or until thickened and dates are tender, stirring constantly. Remove from the heat; stir in vanilla., In a large bowl, combine the flour, oats, brown sugar, cinnamon, baking soda and salt. Cut in butter until crumbly.
